The circus is back in town. This week saw the world’s wine trade touch down in Bordeaux to taste the latest vintage en primeur. The primeurs week is a remarkable thing, with the world’s grandest châteaux hosting thousands of members of the trade – at tastings, dinners and lunches – as they unveil a new vintage. After a two-year hiatus, it was a privilege to be back in person, abandoning the Zoom calls and samples that have provided an efficient – if far less enchanting – alternative. And producers seemed just as delighted to be flinging their doors open, dusting off their finery and polishing the endless glassware to finally lay on the show that has been stuck in rehearsal since March 2020. The hospitality shown was extraordinary – and we can’t thank the many producers who welcomed us enough. We didn’t know what to think of 2021 prior to our arrival. We were determined to be open-minded – after the year had received coverage only for its challenges. As is now becoming the normal, spring frosts led to sleepless nights for the region’s vignerons, and a wet spring resulted in significant mildew pressure – a particular trial for producers working organically and biodynamically (as many now do, even if they aren’t officially certified). Overall the season was cool and – after the sunny 2018, 2019 and 2020 vintages – ripening fruit was not a given. Chaptalisation was a necessity for many – and is something we’ll be delving into more. This was a totally different year that asked much of producers in both the vineyard and winery, with nerves of steel, exceptional dedication and attention to detail.  There is much to discuss when it comes to the year – and we’ll be publishing our full report in due course, digging into the specifics. But given the conditions producers faced, it was all the more important to be in Bordeaux this year, tasting the wines and talking to winegrowers about the nuances. For while headlines of mildew and frost might cause fright, there are some fantastic wines. On the Left Bank, Cabernet Sauvignon thrived, with Merlot suffering from coulure – and as a result Cabernet takes the starring role in blends (in some instances representing the highest percentage of the blend ever). Generalisations are difficult when there were so many decisions that influenced the final wine, however Pessac-Léognan as an appellation seems to have fared particularly well, while there are many individual estates worth seeking out. On the Right Bank, Merlot escaped issues with coulure, and there seems to be more consistency in Saint-Emilion and especially Pomerol than in the Médoc.  Quality (and indeed quantity – with yields down by as much as 50% at some estates and cellars full elsewhere) is not homogenous, but the best wines show great elegance, with crunchy fruit, floral aromatics, vibrant acidity, a framework of chalky tannins and lower alcohols (often 12.5 to 13.5%). They speak of place, offering a transparency that comes with cooler conditions. Some might deem it an “British” vintage – with an old-school charm that is deemed to suit palates used to “proper Claret”; some consider it “classical”, with its sappy freshness and modest alcohols. We aren’t so ready to pinhole it; the best wines are more sophisticated than those of yesteryear – and take full advantage of the technology and know-how that winemakers are armed with today. This is a year that demanded to be assessed château by château – hanging on the choices, means and mettle at each address. If you look past the headlines, however, you’ll find wines that surpass expectation, surprising and delighting with a finesse that blockbuster years rarely deliver. I was hesitant about meeting Ivan Massonnat. The man who created Domaine Belargus seemed to fill easy stereotypes. A background in private equity. Lived in Paris. A passion for wine – and a dream to make it himself. Big scores and some pretty punchy prices for a brand-new estate from the Loire. Reading between the lines, I feared there was a lot of cash and possibly too much polish. Thankfully, I was wrong.  Created in 2018 and based in Anjou, Domaine Belargus has rapidly become one of fine wine’s hottest new names. The first wines were released in 2021, in the midst of the global pandemic, but had already earned serious acclaim. Yohan Castaing wrote in Decanter, “Remember this name, as its production should meet with resounding critical success in the coming years.” The wines received glowing reviews in Wine Spectator and the Wine Advocate – where Stephan Reinhardt declared it “one of the most spectacular new entries in the history of [the publication]”, granting a coveted 100-point score for its 2018 Quarts de Chaume Ultra. But that was just the beginning. Ivan Massonnat is a man with big plans – both for his own wines, and the region as a whole.  Wine was a part of life for Massonnat from a young age – with his grandfather farming a small vineyard in their village in the Savoie. But, despite helping at harvest time each year, he didn’t end up drinking wine until he was 20, when he was “instantly hooked”, he says. He fell in love with Burgundy and the concept of “vin de lieu” – wine of place.  Massonnat made his money in private equity, based in Paris but travelling the world, where fine dining – and fine wine lists – only fed his terroir obsession. Two decades ago he was looking for a country house for his family, and – not having a car – settled on the Loire. “The more I was spending time there, the more I realised that the region was totally misunderstood,” he says. Prior to the upheaval of the French Revolution and the subsequent arrival of mildew and phylloxera, the Loire was one of France’s most prestigious wine regions – home to the nation’s kings, the fruit of its vines were the royal court’s natural choice. Post-phylloxera, however, quality was scrapped in favour of quantity. “Its image started to blur,” says Massonnat.  Combine the region’s history with its two great, native varieties – Chenin Blanc and Cabernet Franc – and Massonnat saw “an incredible diamond in the rough”. Wine had become an increasingly large part of his life – tasting widely and visiting producers as much as possible, especially in Burgundy where vignerons such as Philippe Pacalet and Thibault Liger-Belair friends and mentors. But it wasn’t just a hobby – Massonnat was starting to think this could be more, the adventure that lay beyond the world of finance.  As the adage goes, the world of wine is a brilliant way to make a small fortune – provided you start out with a large one. Massonnat, however, didn’t underestimate the challenges and set about getting to grips with the mechanics of the business. “It started really to become a project 10 years ago,” he says – talking to importers, consultants, journalists and merchants. And, perhaps unsurprisingly given his successful career, Massonnat wasn’t looking to make any wine – he was determined to create something exceptional.  After a failed attempt to buy a Chinon estate in 2015, he turned his attention to great Chenin Blanc sites in Anjou Noir, between the Layon and Loire rivers – low-yielding hillsides where producers were struggling to make money and consequently there was land to buy. More than just availability, it was here that Massonnat saw great potential. The area’s dark, schist soils (cause for the “noir” in the region’s name) were littered with tiny appellations, echoing those of Burgundy, with a much hillier landscape, and the only Premier and Grand Cru vineyards in the region.  Between 2016 and 2018, Massonnat started visiting every vineyard he could find – looking for the exceptional. Then the local winemaker Patrick Baudouin introduced him to Jo Pithon – a legend of the Loire. Pithon had been making wine since 1978, a pioneer of organic farming, crafting fine dry and sweet wines – but the talented vigneron was by no means a businessman. By the early 2000s, his lack of commercial knowhow lost him the rights to his name, along with the majority of his vineyards – all but one plot, the Coteau des Treilles.  Massonnat met Pithon at the Angers wine fair in 2018; they got on well enough and he arranged to see Pithon’s vineyards the following day. The next morning, it was snowing and he regretted his decision . But then, at 8.32am on 6th February 2018, “It’s as if I was struck by lightning,” Massonnat says. Pithon had brought him to Coteau des Treilles. Long farmed organically, it has slopes at a gradient of 70%, embedded in a natural reserve, with a Mediterranean microclimate – and Massonnat knew instantly it was what he had been looking for. He bought the Pithon-Paillé operation that Jo Pithon had created a decade earlier.  Luck continued to be on Massonnat’s side – and he bought two other vineyards over the next six months, adding to his collection of prime sites. He managed to buy a quarter of the Quarts de Chaume appellation – the only Grand Cru vineyards in the region – which amazingly had been on the market for 10 years. “Nobody wanted to buy it… They were looking at it as a sweet wine terroir. But actually, a great terroir is a great terroir… you will do dry wines that are quite exceptional,” Massonnat explains. Then he snapped up a parcel in Savennières – the only plot to have been sold in the last seven years.  He hired a young team and Pithon stayed on to consult – and the real work began. “Belargus is a 100-year project. Everything we do, we have that horizon,” Massonnat says. The vines are all organically certified, but they’re now working towards biodynamic accreditation. Yields are low, and they’re trying gradually to increase them to around 35hl/ha in a good vintage (currently the highest they’ve managed is 29hl/ha). “Our obsession is to have the right maturity,” Massonnat explains. To battle Chenin Blanc’s natural heterogeneity, they pick in multiple passes, minimum two or three but up to six, depending on the year – and that is just for the dry wines. The general approach is minimalist – with stainless steel and mainly larger, old oak, indigenous yeast, letting malolactic fermentation happen (or not), keeping wines on the lees and using only essential levels of sulphur. A new winery is being planned to take things to the next level, with, for example, a Coquard press (allowing especially gentle pressing, commonly used in Champagne).  The project is about expressing the different terroirs of this corner of Anjou Noir. The first release (which sold almost instantly given the hype from the critics, with 80% exported) consisted of 14 cuvées – nine dry wines and five sweet, focusing on nine specific plots across the estate’s vineyards. The dry wines are powerful, tightly wound and intense – as Massonnat says, “It’s not wine for every day,” comparing them to white Hermitage or Corton-Charlemagne, wines that need food and time. Although 90% of production is dry, Massonnat confesses, “We are obsessed with sweet wines.” These, he feels, are what will really set Anjou Noir on the world stage – if, perhaps, what he calls “the sugar pandemic” ever stops.   With Massonnat’s finance background comes a flexibility that few others have. He hopes to hold all the wines back four years eventually, but for now it is between three and four – and he was able to release the 2020s before the exceptional 2019s. It also allowed him to set prices unusually high compared to his neighbours. “I had the luxury to make that choice for the region,” he explains. “I wanted to break the glass ceiling.” And although he thought it would take time – his first release proved that there were plenty of people ready to snap up the value that these wines offered, including many of those now priced out of Burgundy.  And this is his real dream – for the Loire to be recognised as Burgundy is, as “a tier-one region which any collector needs to have in its cellar, that needs to be understood”. It’s easy to imagine other producers might have bristled at an outsider’s arrival, pitching their very first wines at unheard-of prices; but Massonnat is intent on leading the crusade for the entire region, not just Domaine Belargus. He volunteered to run the Paulée d’Anjou – a celebration of the region’s wines – in 2019, and made it bigger and better. In 2021, he became co-president of the Quarts de Chaume appellation, alongside Marie Guégniard from Domaine de la Bergerie. Together they are fighting for the appellation to permit both dry and sweet wines, as Savennières technically can, and Quarts de Chaume could until 1996. “Anjou was a dirty word. And look at the revolution now,” he says.  Like the precious blue butterfly that gives its name to the Belargus estate, Massonnat isn’t happy sitting still – and he’s already got another project – having had the chance to buy the Chinon estate he’d originally had his eye on in 2015. The best wine he ever tasted was a Chinon, a 1989 from Charles Joguet. “There was a whole civilisation in this wine,” he told me, trying to explain how moving the experience had been. One hundred years ago, two men, inspired by the Scottish distilling tradition, produced the first Japanese whisky. In the years that have followed, the category’s fortunes – much like its founders’ relationship – have been turbulent.    The story begins in 1923 when pharmaceutical wholesaler turned Spanish wine importer Shinjiro Torii invested his family fortune in building the Yamazaki distillery, against their advice. Torii enlisted the help of wet-behind-the-ears chemist Masataka Taketsuru – who had spent time learning his craft in Scotland – to lead production on their first whisky, Suntory Shirofuda, which was released in 1929. The two men did not see eye to eye and parted ways following the dismal reception of Shirofuda. Taketsuru famously went on to found the other great Japanese whisky producer, Nikka, and their fierce rivalry persisted. This is one of the reasons Japanese distilleries, to this day, blend in-house rather than trade liquid. Despite this rocky start, the Japanese domestic whisky market looked bullish by the late 1930s – Yamazaki’s next whisky (Suntory Kakubin, released in 1937) was more warmly received and Taketsuru successfully re-entered the scene with his first whisky, Nikka Yoichi, in 1940.  Fast forward to the early 1980s and the category was in fine fettle – Suntory and Nikka had both released their first single malt expressions and there was plenty of cause for optimism. But this prosperity sadly did not last as a steep decline in consumption caused the Japanese whisky market to splutter and almost entirely stall, resulting in many distilleries, including Karuizawa, being forced to close their doors. Both Yamazaki and Nikka managed to stay afloat but their output was significantly reduced as the economy and category stagnated, marking a bleak 25-year chapter in Japanese whisky’s history.   When demand was reignited around the mid-to-late 2000s, it largely came from Europe. A perfect storm caused this spike in interest, including wider interest in Japan (think Bill Murray in Lost in Translation), the resurgence of the Highball cocktail (circa 2007) and Suntory’s Yamazaki Single Malt Sherry Cask 2013 being named the world’s best in 2014 – a first for the category. Around this time, the world was also introduced to Ichiro Akuto’s highly collectable Card Series and the lost distilling icon, Karuizawa. “The mad scramble for crumbs on the Japanese whisky scene is something nobody could have predicted,” acclaimed Japanese whisky writer and Ghost Series independent bottler Stefan Van Eycken tells me. “In the space of 10 years, the situation went from being able to buy a whole range of single-cask Japanese whiskies at a big electronics chain for peanuts to bottles not even reaching the shelves of liquor stores anymore. “Even I, who had been exploring the Japanese whisky scene in the ‘dark ages’, couldn’t have predicted that,” he says matter-of-factly. “If I could have, I would have rented a van, bought up all the bottlings that were available for purchase and I could have retired by now.” Yumi Yoshikawa joined the team at Chichibu in 2013 after a two-year stint in Scotland, first working in the Highlander Inn in Craigellachie – which will require little introduction for spirits journalists or enthusiasts – and at the Bruichladdich Distillery on Islay. “People didn’t know the value of aged [Japanese] whisky back then,” Yoshikawa tells me. “Or that Japan had a long whisky history,” she adds. Somebody who was instrumental in educating the world on these two points is Marcin Miller, a man whose fortitude dragged Karuizawa out of obscurity. The genteel and thoroughly entertaining former Whisky Magazine Editor turned drinks entrepreneur, recalls the landscape when he and business partner David Croll first tasted those fateful Karuizawa single casks in the early 2000s.  “The most common complaint [from whisky enthusiasts] at the time would seem to be that it's all very well for me tasting this stuff but we never get to see any where we are in Western Europe or Northern America,” he recalls. So the two men set about changing this by buying the remaining stock from the then-lost Karuizawa, bottling it, and making it available to the masses – with resounding success. It’s a gross misapprehension – held by many – that the duo meandered into a meeting room, tasted a parcel of Karuizawa, bought it on the spot, and bottled it shortly after, grinning like Cheshire cats as the coffers swelled. In truth, it was four and a half years of negotiation and countless sleepless nights during the process. When pallets of casks from the ghost distillery in a nascent whisky market were finally shipped to them, there was no guarantee the wider whisky world would be interested. “Whatever anyone says, it really was not easy…” He trails off, transported to that time, and all the challenges the pair transversed when bringing the mature Japanese whisky from a then-unknown producer to its now almost mythic status.  Miller talks of the “extraordinary, phenomenal effect” Karuizawa had on him. Croll, Miller and acclaimed drinks writer Dave Broom – who has since quite literally written the book on Japanese whisky – initially tasted 69 single-cask Karuizawa samples. “I would have bottled any of those casks,” Miller says, a fond smile warming his face. If it hadn’t been for Croll, who had lived in Japan for 30 years and owned a successful drinks business, Miller says they likely never would have got a foot in the door at Karuizawa – or secured the exclusive distribution rights of the much-lauded Chichibu and Hanyu. “I dare say Karuizawa would have been blended away into big plastic five-litre tubs of supermarket whisky,” Miller says reticently. When Van Eycken moved to Japan around the same time as Miller and Co were negotiating the Karuizawa deal, he hadn’t even realised whisky was being produced there. Japanese whisky consumption and production were at an all-time low and the general feeling, he says, was that the whisky made in Japan was “cheap and good for getting a buzz when going out, but that the good stuff – that you would savour – was Scotch, and Bourbon, to a lesser extent”. The intrepid Van Eycken was taken aback by the quality of the long-aged liquids he sampled on his travels and couldn’t understand why this sentiment wasn’t shared domestically or further afield. When Japanese whisky’s popularity did finally begin to soar, he was perfectly placed to fill the knowledge chasm with his widely acclaimed Nonjatta website and, later, his seminal work Whisky Rising – a fully updated second edition of which came out earlier this year.  “When I wrote the original edition in 2016, there were 14 active distilleries in Japan,” he says. “Fast forward to mid-2022 and there were 41 active distilleries (and even more in the progress of getting ready to distil),” Van Eycken tells me. All of the new distilleries, he says, are attempting to follow the so-called “craft model” with a single pair of pot stills and fairly limited production. The inspiration, of course, being Ichiro Akuto and his incredible accomplishments over the past 15 years at Chichibu. “But not everyone can be an Ichiro – though most new distillers are certainly hoping to be equally successful, if not more, than Ichiro,” he adds. Several of these new distilleries are located in and around the town of Karuizawa. “My personal feeling is that it doesn’t make a lot of sense to try and compete with the legend that is the (old) Karuizawa distillery,” Van Eycken is quick to add. “The liquid that was made there turned out to be something very special, and not only by design. I have had the dubious pleasure of tasting the new-make from the old Karuizawa distillery and it was absolutely foul.  “But during the maturation process, over 20, 30, 40 years, something magical happened. Some of this can be explained, but most of it is a hermetic mystery. We simply cannot know why decades later this harsh spirit transformed into a sublime whisky (in most cases). Even if you wanted to replicate this whisky – or aspects of it – you couldn’t.  “And hoping to match the quality of the (original) Karuizawa whisky… well, it’s good to aim high but it's a bit like naming your kid Roger Federer in the hope that he would turn into a tennis player of the same calibre. Why would you want to put that sort of pressure on the kid?”  Miller is humility personified and doesn’t want to come across as a wizened cynic or, in his words, “boring old fart”, but he’s not confident that all the country’s new distilleries are set for success. “I think people are now trying to replicate the business success but without the foundation of the liquid. They are selling Japanese whisky futures but who knows what the liquid is going to be like because it's not just A + B = C.” There is a cautionary tale in the annals of Scottish whisky distilling that Japanese producers might be wise to heed. Scotch has famously fallen victim to its own success – with booms and busts resulting in whisky lakes, or lochs, that have crippled the industry and forced mass distillery closures. In so faithfully replicating Scotch, there is a real danger Japan will find itself back in the 1980s when the likes of Karuizawa were shuttered. This time, however, there would be many more casualties.      “For the time being, the Japanese whisky scene continues to be marked by an unbridled optimism,” Van Eycken adds. “Distillers price their (invariably young) whiskies very high (compared with similarly established whisky markets around the world) and consumers snap up the bottles regardless of the (sometimes unjustifiably) high prices.”  This price war is one of the reasons Miller et al sold their remaining stock of Karuizawa, which had initially been priced fairly but wasn’t the case when they left the scene. The 1960 Karuizawa, for example, which yielded 41 bottles was released circa 2014 for £12,500. Within a decade, those same bottles were easily reaching $375,000. “That's not a bad return in 10 years,” Miller says caustically. “But that's not why we did it. If that had been our motivation, we'd have just held on to it and had 41 times that.” For those still in the industry – and disciples of it – there is a real push to protect the integrity of Japanese whisky and futureproof it. Yoshikawa picks up the point, outlining that the few have muddied the water for the many: “The rapid publicity and the reputation of Japanese whisky have led to its use of excessive PR strategies, even when this is not in line with the facts of the product.” For these reasons, she is an advocate of more stringent regulations, like the ones announced by the Japan Spirits and Liqueurs Makers Association in 2021 which aims to restrict certain practices – like labelling whisky that isn’t actually from Japan as Japanese whisky – akin to those enshrined and strongly policed in Scotland. But she, like many, thinks these could go further and believe it is important to continue scrutinising the practices of the small and larger players, ensuring there is greater transparency and less “skullduggery”, as Van Eycken puts it. As the ink dries on the past 100 years of Japanese whisky, no one knows what the next century might entail – but there's plenty of excitement. The landscape will undoubtedly change once more, and new giants and legends will likely emerge. For whisky enthusiasts, the challenge – as always – will be pre-empting the plot twists and securing bottles before they become little more than folklore. While at the top end, Chile has historically been known for its Bordeaux-style blends, the country has a staggering range of climates to choose from. But prior to Errázurriz’s Las Pizarras range of Chardonnay and Pinot Noir from Aconcagua Costa, the Burgundy grapes had not seen great success in Chile. The last few vintages of these wines – made by Francisco Baettig – have, however, turned the tide, proving that Chile can work with much more than the Bordeaux varieties. But why did it take so long for the country to reach this realisation? Francisco believes that up until 15 years ago the Pinot Noir in Chile simply wasn’t good – low-quality clones, infected with viruses, and often planted in the wrong place. He also thinks that the influence of Bordeaux hung too heavily, meaning Pinot was being picked far too late, producing wines that were too sweet and too heavy. Since the mid-2000s, however, better plant material has been available and now, 15 years on, these vines are reaching maturity – and their potential.  But Las Pizarras is just one style of Pinot Noir and Chardonnay – and Francisco knew that a very different style could be achieved further south, where radiation is lower and there’s enough rainfall to allow vines to be dry-farmed. Francisco’s grandparents lived in the southern region of Traiguén, on a farm fittingly called “La Vigna”, and it had always been his
dream to return to his roots to make wine there. It so happened that his friend, and business partner in his new venture, Carlos had ties to the region too – and so together quickly settled on making wine here.  Traiguén is the southernmost wine-producing region in Chile, in line with Argentina’s Patagonia; as such radiation is 25% lower than in Central Chile. For Francisco, this was key: there’s less chance of the grapes being sunburnt (especially important for delicate Pinot Noir and Chardonnay), while also not requiring as thick a canopy to shield the grapes from the hot sun (as having lots of leaves can lead to green flavours in the grapes). Higher levels of radiation also cause grape skins to thicken, meaning wines are more tannic – something that Francisco was looking to avoid in ethereal expressions inspired by Burgundy. Finally, there’s also much more natural acidity in the fruit, meaning he could craft wines with real tension.  Another incentive behind the project was to discover a more sustainable solution for the long-term wine production in Chile. Irrigation is becoming a real concern in Central Chile. While Chile and Argentina have been blessed with the Andes, producers rely on snow melt to irrigate vineyards. In a dry season like 2019, there was no snow on the mountains and water reserves completely dried out. Francisco states that 40 years ago the average rainfall in Santiago was around 500mm a year: now the average is close to 300mm, and in 2019 it was just 70mm. Traiguén, by contrast, saw 850mm of rain in 2019 – meaning there is no need to depend on irrigation. Beyond the issue of sustainability, however, in Francisco’s view irrigation can be a problem when it comes to fine wine, as it’s all too easy to over-water vines, preventing them seeking out water and establishing deep roots. He believes that deep, complex root systems are essential for producing a wine of the soil, rather than a wine of the sun.  It took two years to find the perfect spot for the new project. Francisco brought Burgundian geologist and friend Françoise Vannier-Petit over to help seek out the right site. Eventually they found a corner of Francisco’s cousin’s property in Traiguén with the right soils and microclimate. Together they planted 15 hectares in 2013 at high density (7,000 vines per
hectare) with carefully selected Burgundy clones. There are nine hectares of Pinot Noir and six of Chardonnay, with three clones and rootstocks for each variety spread over five distinct parcels. Long-term, Francisco hopes to produce single-vineyard wines from these plots, showcasing the varied terroir of this volcanic region. The first commercially available wines are remarkable. The entry-level bottlings are the Vino de Viñedo Los Parientes Pinot Noir and Chardonnay – with fruit sourced from across the property, while the top grapes are reserved for the top Seleccion de Parcelas Los Primos cuvées. All the wines clearly display the nervosity, tension and minerality of cool-climate Pinot Noir and Chardonnay, but with a New World ripeness thanks to Chile’s sunny climate. Production in these early days is miniscule – with less than 150 cases of each wine made in 2018 – and the aim is to keep the operation human-sized. This project is a true labour of love for Francisco, investing significant personal savings in what he believes to be the ideal terroir for ethereal-styled Pinot Noir and Chardonnay. Looking south: Francisco Baettig’s cool-climate quest

The growing season in 2019, as is becoming the norm these days, started with a warm February and March, leading to an early budbreak at the beginning of April. An early budbreak leads to a nail-biting spring for the vignerons, where the window for frost damage is only extended. Fortunately, there were only a couple of occasions where temperatures dropped to dangerous levels, with most Chablis producers today well equipped either with smudge pots, electrical heating wires or water sprays to offset the frost damage.  At Long-Depaquit they lost just 5%, which was not a concern. Samuel Billaud notes that the frost was much more dangerous on the lower slopes of Chablis where damage was higher than the 1er Cru and Grand Cru sites which were largely undamaged. For Olivier Bailly, winemaker at Domaine Billaud Simon, it was not simply the direct damage of the frosts (particularly on the night of 14th April) but the resultant stress on the vine following the outbreak that saw yields further affected. However, the real issue in regard to yields, came down to flowering rather than frost, with a windy, rainy, wet period during May which meant yields were notably affected. This period led to a lot of heterogeneity in the bunches and also noticeable millerandage (which results in very small berries): this does not affect quality but markedly lowers yield. Unlike 2018, therefore, 2019 is a low-crop vintage with producers’ yields ranging from 20 to 40% below normal. Despite the poor flowering, the rest of the growing season was straightforward, with very little rain and plenty of sunshine, which meant excellent sanitary conditions in the vineyard with no rot at all and very little sorting required at picking. There were two short heatwaves, one at the end of June and another at the end of July, which did cause sunburn damage to exposed grapes but other than that, no sorting was required. Regarding temperatures and rainfall, it was similar to 2018 with average rainfalls down 50% on average. Temperatures were also a full 2.2 degrees above average during the growing season, which is quite extraordinary. When comparing the similar effects of drought and sunshine in the 2018 vintage, vignerons talked about how the high yields helped dilute the intensity of the sun. With half the crop, how did the grapes survive in 2019? Was this to be a low-acid vintage with abnormal tropical fruit tones like 2015 or 2003? Matthieu Mangenot, winemaker at Domaine Long-Depaquit, describes how something quite unusual happened. In the later part of the growing season, the grapes concentrated – with water in the berries evaporating from the skins. This increased sugar levels and therefore alcohol (typically to 13.4 to 13.8%, which is high for Chablis, but it concentrated the acid levels too. Despite the drought and heat, the acid levels sit close to great vintages such as 2008, 2014 and 2018, with a pH of 3.25 to 3.3 after malolactic fermentation. Olivier Bailly at Domaine Billaud Simon had even higher acidity levels (between 3.10 - 3.25 pH), stating, “It is the magic of Chablis to find Chardonnay retaining such acidity, despite the warm weather”.  The result is, as Mangenot told us, “undoubtedly a ripe, concentrated, powerful vintage, but with a freshness too, at the same time retaining real Chablis mineral typicity. It is a hot, warm vintage but it does not really behave like that in the glass.” The fruit ripeness is similar to ’15 – but there are no excess aromatics of over-ripeness or yellowness in the wine that is typical of the low-acid vintages like ’05 and ’06. The acid profile is much more like ’17, and very much still retaining a sense of place, avoiding the tropical fruit aromas of 2015. Samuel Billaud describes 2019 as “highly concentrated Chablis with sun-kissed aromatics – it is concentrated, with balanced structure and excellent minerality. It is a ‘gourmand’ [moreish] vintage, yet with tense, structural minerality.”  Our own impressions is there is no doubt a concentration and aromatic pungency to the wines, yet the nose retains the Chablis-esque chalky minerality and savoury dried-straw tone, as well as lifted floral aromatics. There is noticeable power, weight and warmth to the palate even on the Premiers Crus, with the top examples retaining mouth-watering acidity despite this opulence and concentration. They really have a wonderful combination of intensity and power, while retaining mineral typicity. Producers such as Samuel Billaud still has a majority of his 2019s undergoing élevage, with the Grands Crus left another six months in tank before being bottled. Despite them being babies the wines are already showing a lot of promise. Billaud compares his 2019s to the 2016s in terms of riper aromatics, but with much more concentration and minerality. It also has similarities to the 2017 vintage when it comes to structure and minerality, he says.  For Mangenot, the power and concentration allied with vibrant acidity and minerality makes this vintage hard to compare, “It doesn’t really taste like any other,” he says, “but for Chablis-lovers, it makes it a fascinating vintage to discover.” Read more Editorial

What is Cristal – and who makes it? 
The Grande Marque Champagne Louis Roederer produces Cristal. Founded in 1833, Roederer is the largest independent, family-owned Champagne house today. Cristal is their prestige cuvée – the very best wine they produce, only made in the finest years. Always a vintage wine, it's a blend of Pinot Noir and Chardonnay. The current Chef de Cave (and Executive Vice-President) at the house is Jean-Baptiste Lécaillon, who is responsible for the entire Louis Roederer range. When was Cristal first made? The wine is considered the first and original “prestige cuvée”. It was first made for Tsar Alexander II in 1876, after he asked Louis Roederer to reserve the house’s best wine for him and his court. At the time, Roederer was one of the few house’s to own its own vineyards (a legacy that continues today). A gold capsule and label was used to indicate that the wine was the best in the range, as was common at the time. Reportedly, the Tsar lived in fear of assassination – and as such requested that the wine be bottled in clear glass, so that he could see if it had been poisoned, and with a flat bottom so that bombs couldn’t be contained in the punt (the traditional indent in the base of Champagne bottles). The glass used was lead-crystal – giving the wine its name, “Cristal”. When the Russian Revolution took place in 1917 and the Tsars were no more, Roederer continued to make the wine – releasing it commercially for the first time in 1945. Although the wine would originally have been sweet, the dry style of Champagne gradually became more popular (made initially for the English market) and Cristal evolved with the fashion. Today it is one of the most sought-after Champagnes in the world, alongside other prestige cuvées such as Taittinger’s Comtes de Champagne, Dom Pérignon, Krug, Pol Roger’s Sir Winston Churchill, Veuve Clicquot’s La Grande Dame and Bollinger’s Grande Année. How is Cristal made? Until 1999, Cristal was blended solely on taste. Different parcels from Roederer’s estate vineyards were tasted blind and the best-possible wine created. From 1999 onwards, however, Jean-Baptiste Lécaillon took over and started using the same 45 plots, all mid-slope with chalky soils across seven different Grands Crus. These plots have all been farmed biodynamically since 2012. Only fruit from vines more than 20 years old is used for the prestige cuvée, with any younger-vine fruit declassified to the Collection bottlings (the estate’s vintage, Blanc de Blancs and rosé wines all come from specific vineyards). Typically, it’s a blend of around 40% Chardonnay and 60% Pinot Noir. The base wines are mainly fermented in stainless steel, with a proportion in oak. The wine undergoes secondary fermentation and is aged on lees for a minimum six years, then aged for at least eight months after disgorgement prior to release. With climate change and general trends in Champagne, the dosage has been reduced – from 12-13 to around 8g/l today. The final blend is still blind-tasted by the family to ensure the wine is up to scratch. Around 300,000 to 400,000 bottles of Cristal are made a year. 
What does Cristal taste like? Cristal is an incredible Champagne – and one of the most age-worthy. With vibrant acidity and refined minerality, it is a linear and precise style of Champagne that rewards time in bottle. Complex, expressive and aromatic, critics have awarded the wine multiple 100-point scores over the years – notably the 2002 and 2008 vintages. To further emphasise its ageability, in 2017 Louis Roederer released the first of a new series of Vinothèque bottlings – aged both longer on lees and then for a further 10 years on cork. The first Vinothèque wines were from the 1995 vintage, but wines from 1996, 1997, 1999 and 2000 have since also been released. These are available in extremely limited volumes, but offer a taste of the wines with maturity. They tend to have a slightly lower dosage than the earlier-released wines. Is Cristal rosé? Yes and no. The original prestige cuvée is a white wine, however a rosé sibling was introduced with the 1974 vintage, created by Jean-Claude Rouzaud. The wine celebrates old-vine Pinot Noir from Grand Cru vineyards in Aÿ, historically from three sites (Bonotte Pierre Robert, Gargeotte and Côte du Moulin), but now also from La Villers. Pinot Noir typically represents 55% of the blend, complemented with Chardonnay from Pierre Vaudon in Avize and Montmartin in Le Mesnil. Cristal Rosé is made using the saignée method – pressing the grapes to extract colour, with the Pinot and Chardonnay then co-fermented (rather than blending). From the 2008 vintage, the Pinot Noir sees a cold-soak "infusion" with no punching over/pumping down, for up to 10 days. Around 20% of the base wine is aged in oak. The wine goes through secondary fermentation in bottle and is aged on lees for around eight years prior to release. Why is Cristal wrapped in plastic? The trademark gold cellophane wrapper is to protect the wine from UV light. As the wine is bottled in clear glass, UV light can cause “light strike” – a fault that causes cabbage or rotten-egg aromas in the wine. As such, the plastic should be kept on the wine until it is served. Cristal’s street cred and controversy Cristal was once the choice of hip-hop’s most famous names. “Cristal forever/Play the crib when it’s mink weather,” raps the Notorious B.I.G. on Jay-Z’s Brooklyn’s Finest. Raekwon, 50 Cent, Big L and many more were all fans. Tupac even created a cocktail with Cristal called “Thug Passion”, a combination of Cristal and Alizé Gold Passion liqueur. In 2006, however, Frédéric Rouzaud – seventh-generation of the Roederer family and CEO – was asked in an interview about the wine’s association with a “bling” lifestyle. In response he said, “What can we do? We can’t forbid people from buying it. I’m sure Dom Pérignon or Krug would be delighted to have their business.” Jay-Z responded: “It has come to my attention that the managing director of Cristal, Frédéric Rouzaud, views the ‘hip-hop’ culture as ‘unwelcome attention’. I view his comments as racist and will no longer support any of his products through any of my various brands, including the 40/40 Club, nor in my personal life.” Others followed, and soon Cristal was replaced by other wines and spirits. Steven Spurrier might be approaching 80, but his wit, quill and tongue are as sharp as ever. While – as is now the norm – we spoke on the phone, there is no doubt in my mind that the voice at the end of the line was immaculately dressed – with due attention paid to every detail. Spurrier has a critical eye, both precise and unfailingly honest in his assessment of whatever crosses his path. “People do go on about the Judgement of Paris,” he laments. “It’s stuck to my back. I can’t do anything about it.” Instantly, I feel grateful for the phoneline, as I blush, knowing that I will join the cohorts of pesky interviewers who can’t not ask about the 1976 tasting that flung both Spurrier and Californian wine into the limelight. The blind tasting – pitching the best Bordeaux and Burgundy against California’s finest – paved the way for the New World, challenging the fine wine status quo, and creating a template for almost every other region to follow as they looked to prove their worth.  It is this, Spurrier feels, that was the real mark left on the wine trade – opening people’s eyes to the power of blind tasting. “I just happened to put it on,” he says modestly of the event. Certainly, there is an element of coincidence that has ensured the tasting’s place in the history books: if journalist George Taber hadn’t attended – writing up the event for Time magazine with its now iconic Judgement of Paris title – and Spurrier’s wife Arabella hadn’t thought to take a few pictures, the occasion might have been remembered only by the few. At the time Spurrier was running a wine shop and school (L’Académie du Vin) in Paris, being
one of few Englishmen bold enough to try and teach the French about wine. He’d started his career just a few years earlier at Christopher’s – then London’s oldest wine merchant. Returning to the UK in 1988, he made the switch to writing and consulting on wine. The rest, as they say, is history: today he is one of the most famous names in the world of wine. That might be achievement enough for most people, but Spurrier isn’t most people – and he’s certainly not resting on his laurels.  In 2009 he and his wife Arabella planted their first vines on their Dorset property. Steven had long thought the chalky soils and the natural amphitheatre could make for a good vineyard, but it took a while for him to take the plunge. More than anyone, he knows how true the old adage is that the wine trade is the best way to make a small fortune – if, of course, you start out with a large one. Nevertheless he’d been fascinated by England’s sparkling potential – ever since he was served a glass of Nyetimber Blanc de Blancs blind in the mid-1990s. Soon after the first vines took root at Bride Valley, he was at a black tie dinner at Château Lafite-Rothschild, talking to Baron Eric de Rothschild, he mentioned that he had planted a vineyard. Baron Eric put an arm round him and said, “Welcome to the club.” At the time he felt he was being congratulated; now he knows it was an element of commiseration. He’s 100% over budget on the project but is confident things will turn out ok. And, on the upside he hasn’t had cause to buy a bottle of Champagne for five years. The wines are made by Ian Edwards (of nearby Furleigh Estate), with Spurrier involved at both blending and dosage. At
first the project was focused on sparkling only, but now they’re making still wines too – something about which he is very excited, particularly in the wake of the superb, warm 2018 vintage. A lot has changed since he joined the wine trade in the 1970s. Although he’s not necessarily enthused about everything (“I think natural wine gets away with a lot”), Spurrier thinks we’re in “a golden age for the wine drinker”, with a kaleidoscopic offering for today’s consumers. I ask him what of everything he’s tasted has stood out recently: like most people, he’s been spending a lot of time on Zoom – and one bottle from a recent online tasting stood out, 2017 Volnay Premier Cru Santenots from Faiveley, a close rival for the best Volnay he’s ever had (from Comtes Lafon).  But while wine might have filled his days, art seems to permeate every aspect of his life. It
is, he says, an “addictive passion”, ever since he bought his first Stubbs etching at Sotheby’s 63 years ago. “I’ve got about 3,000 bottles of wine in the cellar, and I’ve got a list of what’s there. I think about them in vague terms, what one might drink tonight and so on,” he tells me, “but they don’t play a part in my life.” His home is full of fine art – paintings, sculpture and sketches. Unlike wine, he feels that “art speaks to you,” he says. I ask whether he ever thinks about the path not taken – working in art, rather than wine. The answer – despite the fact that things have, at times, gone “exceedingly badly” – is, in short, no. “Life in the wine trade was so captivating, so encompassing, with the ups and the downs,” he says with a touch of nostalgia. “Although I would have lost less money in the art business,” he knowingly chuckles.
