It’s not every day that you get to taste wines made over half a century ago – but earlier this month I got to trace CVNE’s flagship Imperial Gran Reserva all the way back to the 1947 vintage. Victor Urrutia, the fifth generation of his family to take the helm of this legendary Rioja producer, put together a tasting of what he called “the dirty dozen” – lining up 12 vintages of Imperial. The wines were chosen to show how the wine speaks across a range of vintages – not just the most famous, but the hot, the cold, the mighty and the mediocre.  CVNE has been making wine in Rioja Alta since 1879, so – even going back to 1947 – this tasting offered just a snapshot of its history. Imperial was created in the early 20th century (1917 is the earliest vintage Urrutia himself has tasted), conceived as “super Rioja”, Urrutia explained. The idea was to make the best wine possible, regardless of its commercial potential, at a time when Rioja didn’t have the prestige of today. Around 50,000 bottles are produced, but – importantly – Imperial isn’t made in every vintage, with the quality of the fruit in some years not meeting CVNE’s stringent standards (there was no 2003, 2006 or 2013, for example, and there won’t be a 2023 either).  For Urrutia, the goal with Imperial now is to reflect each vintage, and fine-tune the wine rather than look for revolution. The early vintages are their benchmark and inspiration. Across the vintages, however, Urrutia points to a “churchy” nose – something he finds is distinctly Imperial and reminiscent of the winery.  It’s easy, perhaps, to forget how well Rioja ages – and not just over a decade or two, but over half a century. The oldest vintage in this tasting, the 1947, was undoubtedly the star – a wine that has retained its freshness, with delicate aromatics and a beautifully long, pure, resolved palate. The entire flight impressed – with the quality of Imperial shining through. Some of Rioja’s legendary vintages featured (the 1970 and 1959, which sit alongside the likes of 1982 and 1964 in the history books), but my personal favourites were the aforementioned 1947, the still compact 2004 (named Wine Spectator’s Wine of the Year in 2013), the brooding 2011 and pretty, elegant 2018.   The Imperial vineyards  The fruit for Imperial Gran Reserva comes from CVNE’s best vineyards, all over 40 years in age and almost all bush vines, yielding around 4,000kg/ha (equivalent to circa 25hl/ha or less than 1.5 tons/acre). The parcels all sit close to the Cantabrian mountains, at around 500-600 metres’ altitude, and on poor but cool soils (clay and limestone) – lending the wines great freshness, even in hot and dry years, explains longtime Technical Director María Larrea.  The village of Villalba de Rioja has been the backbone of the wine since its conception. This village was where the Real de Asúa brothers (who founded CVNE) first bought vineyards, four kilometres from Haro. The vineyards are steep and south-facing, exposed to the winds and some of the vines therefore have to be trellised (cordón Royat), but it brings acidity and freshness to the wine – something that is essential for its ageing potential. Parcels in the villages of Briones and Torremontalbo were added later, in the 1960s. Briones has richer soils, gentle slopes and a warmer climate, giving structure and body to the wine, while Torremontalbo has steep, stony slopes with calcareous soils and a significant diurnal shift, adding minerality and finesse to the blend.  The Imperial blend  The blend has shifted over the years, with the wine originally around 40% Garnacha and 40% Tempranillo, with the remaining 20% Graciano and Mazuelo. The old vineyards were field blends, with the varieties interplanted and harvested together, meaning mixed ripeness levels – something that arguably brought balance and complexity to the wines, even if some of the fruit wouldn’t have been ripe. Nowadays, each variety is planted separately at CVNE – allowing them more control and precision, harvesting each grape at the perfect moment and crafting a blend in the winery.  There was a move away from Garnacha in the 1970s, with more and more Tempranillo planted instead. Garnacha was less appreciated, seen as a workhorse, an impression that was only reenforced when lesser, high-yielding clones were planted in the 1980s and 1990s. As Larrea also noted, Garnacha is much more prone to coulure and millerandage (poor flowering and fruit-set), which may have been another factor in its decline. There was also a time, Urrutia explained, when Bordeaux was the reference point for fine wine, and they looked to imitate the region, favouring Tempranillo for its darker colour versus the more thin-skinned and therefore pale Grenache. Today, the blend is dominated by Tempranillo (with the 2017 and 2018 Imperial both 85% Tempranillo), but Grenache is undergoing a revival across Rioja and – provided they can have the right clonal material and/or older vineyards – it may contribute more to the blend in time.  The proportion of Graciano and Mazuelo has been reduced slightly, but Larrea emphasises how important the two grapes are in the face of climate change. Mazuelo (aka Carignan/Cariñena) provides structure and colour, while Graciano contributes acidity and aromatic complexity.  The winemaking  Although she joined CVNE in 1991, María Larrea took over the winemaking for Imperial with the 2005 vintage, following on from Basilio Izquierdo, who had been running things for over 30 years (since 1973). Before Izquierdo came Ezequiel García, known as “El Brujo” (“The Wizard”), winemaker for CVNE for over three decades (he returned briefly in 2014 to recreate their legendary white, Monopole).  Across the three winemakers and almost 70 years, surprisingly little has changed. The winemaking here remains extremely traditional, although technology has allowed the team to monitor the wines more closely, and for better winery hygiene, as in most regions. Fermentation remains indigenous, although it’s no longer spontaneous – the wines have been inoculated with a selected strain of their indigenous yeast since the early 2010s (with some experiments in the 1990s). Traditionally fermentation was in concrete tank, however this moved to oak in the 1990s, with one lone vintage (1994) fermented in stainless steel when the vats hadn’t arrived in time.  The wines used to be stored in barrel and only bottled when they were sold, so some older vintages of Imperial spent over a decade in barrel, while today the wine normally stays in barrel for between two and three years. (The bottling dates for each of the vintages is included below – the 1947 wasn’t bottled until 1960!) Originally the oak was all American, simply because that is what they had access to via their historic trade routes, and the barrels were kept for decades (Larrea remembers using 40-year-old barrels when she arrived in the 1990s). CVNE gradually started introducing French oak in the 1980s, with around 30% French oak used in the 1990s and around 60-70% today, with the remainder American.   The wines: tasting eight decades of CVNE Imperial  A note on the bottles themselves: older vintages are in green glass, however they moved to brown glass around 10-15 years ago.  2018 Imperial Gran Reserva: This was a real highlight of the vertical. It is very youthful still, fruit-forward, yet with amazing finesse and delicacy. The nose is precise with dainty aromatics of spice, graphite and florals alongside the crystalline fruit. The palate is juicy and lithe, pure, silken and fresh with savoury tobacco and dried red berries filling the mouth-watering finish. Beautiful and very open, even now. Fermented in oak, 14% alcohol and bottled July 2021.  2017 Imperial Gran Reserva: Frosts swept across much of Europe in late April in 2017, although the rest of the season was relatively warm, producing a tiny crop of concentrated fruit. It’s a drastically different wine to the 2018, yet still with great freshness and a floral lift alongside ripe, sweet red fruit. The palate is tight, much less approachable than the 2018, with compact tannins, a bite of crunchy acidity and a grip of firm tannins, while smoky tones that fill the finish. Decant to enjoy now, but this will be even better with a couple more years in bottle. Fermented in oak, 14% alcohol and bottled July 2020.  2015 Imperial Gran Reserva: The 2015 Imperial is dark and intense, layered with rich bramble fruit, cedar, tobacco, spice and something meaty – a hint of biltong, perhaps. The palate echoes the concentration of the nose, with chewy tannins and a line of acidity that cuts through its intensity. Powerful, almost stern, with more dried fruit coming out with air, the finish is long and savoury, with a touch of red miso. Fermented in oak, 14.5% alcohol and bottled June 2018.  2011 Imperial Gran Reserva: Another standout in the vertical, the 2011 Imperial offers a dark and pure nose, still surprisingly primary with black cherry and cassis fruit, lifted by sweet spicy perfume. The palate is silken and pure, still so youthful, flowing across the tongue, framed by firm but integrated tannins. It’s concentrated and long, with floral aromatics dancing on the juicy finish. Hard to resist with great balance. Fermented in oak, 13.5% alcohol and bottled July 2014.  2009 Imperial Gran Reserva: This is a very serious Imperial now at a lovely stage of maturity – with savoury undergrowth and spicy notes sitting alongside the vibrant dark berry fruit. The palate is intense yet with a softness to it, despite the chewy framework of tannins. It’s juicy and expressive, with smoky, spicy, tobacco notes playing on the finish, and just the slightest hint of leather starting to appear. Fermented in oak, 13.8% alcohol and bottled January 2013.  2004 Imperial Gran Reserva: From “a textbook vintage” in CVNE CEO Victor Urrutia’s words, the 2004 is shining. Pencil shavings and bacon complement ripe, dark fruit. The palate is tight and compact, yet with a juiciness that elongates the whole thing, with acidity that drives through to the long finish. The tannins are supple and soft, integrated with the fruit, but still offer a grip on the finish. Bright and effortlessly balanced. Fermented in oak, 13.8% alcohol and bottled October 2008.  1994 Imperial Gran Reserva: This is an intriguing vintage of Imperial, the only one ever to have been fermented in stainless steel as they were switching from cement to wood, but the new vats didn’t arrive in time for the vintage. It was also served at the wedding of Spain’s Crown Prince, who later became King Felipe VI. After the 2004, this marks a shift towards wines dominated by tertiary notes, although there’s still plenty of fruit here. The nose is spicy with mushroom and undergrowth alongside incense and leathery tones. The palate is laden with umami – with fresh leather and dried berry fruit – as well as dried strawberries, supple tannins and refreshing acidity. Fermented in stainless steel, 13.16% alcohol and bottled June 1998.  1980 Imperial Gran Reserva: As CEO Victor Urrutia said, 1980 was “a shit vintage” – and has always been in the shadow of 1981 and 1982. Tasting the wine today, that’s probably fair – however it’s still an impressive wine. The nose has a distinctly herbal, menthol edge to the sweet fruit – macerated strawberries, with a balsamic hint. The tannins still offer bite, while the fruit shifts to darker, more bramble tones towards the finish. Fermented in concrete, 13.4% alcohol and bottled May 1985.  1970 Imperial Gran Reserva: The 1970 vintage was hot and produced powerful wines – earning it a reputation as one of Rioja’s finest vintages. After over 50 years, the wine is intensely savoury – combining soy, marmite and barnyard tones with intense, dark fruit. With air, the wine offers layers of spice (almost reminiscent of paprika), bacon frazzles and smoked almonds, complementing the concentrated core of fruit. It’s intense yet balanced, with bright acidity that keeps everything fresh and fills the long finish. Fermented in concrete, 12.97% alcohol and bottled March 1975.  1968 Imperial Gran Reserva: From a more difficult vintage, the 1968 Imperial has a charming nose that seamlessly combines savoury and sweet – with earthy richness that sits alongside incense-inflected berry fruit and a pleasing herbal note. The palate is elegant and vibrant, with plenty of fruit still driving through its core, while more savoury, smoky notes dominate the finish. Fermented in concrete, 12.7% alcohol and bottled April 1974.  1959 Imperial Gran Reserva: The 1959 vintage is another of Rioja’s most lauded, although I suspect this bottle was not showing its best. There’s a plushness and intensity to the palate, with a sharp drive of acidity, while the nose is dominated by leather, black liquorice and barnyard. Fermented in concrete, 13% alcohol and bottled February 1968.  1947 Imperial Gran Reserva: An amazing wine to tasted, the 1947 CVNE Imperial has a reputation – one that this bottle more than lived up to. Coffee and tobacco notes with bright fruit – ripe red cherry and raspberry, as well as florals, incense, black tea and sage, alongside smoky perfume. It’s long and fresh on the palate, seamless and fully resolved but pure and persistent, with a Bovril edge to the finish which is vibrant and long. Gorgeous now – drink it while you have the chance. An icon through the ages: CVNE’s Imperial Gran Reserva 

Some of Nicolas Champagneux’s earliest memories are of life in the vines – of the hubbub of harvest with his grandparents. It’s not the hard work that he recalls, it’s “des bons moments de famille” he tells me – the convivial spirit that infused the air. He grew up in the heart of Côte-Rôtie, spending weekends and holidays in his family’s vineyard – a swathe of Les Grandes Places, a prized site in the commune of Verenay, where his great-grandfather planted vines at the start of the 20th century.  Les Grandes Places is an extraordinary site – with the most famous producer arguably Jean-Michel Gérin. In the north of the Côte Brune, in a southwest-facing amphitheatre, this steep site has crumbly mica schist soils, which allow the vines’ roots to drive deep into the bedrock. It’s home to some very old vines – such as the centenarian plantings that Champagneux farms – and produces wines that are beautifully elegant yet with dark, fleshy power. Champagneux has almost two hectares here, having the largest holdings. Nicolas’s uncle André took over running the vineyard after his grandparents, while his father Gérard went to work in a factory. There wasn’t enough money for both brothers to join the family business back then, with Côte-Rôtie not nearly as sought-after as it is today. Other than a couple of barrels for personal consumption, the family didn’t make wine, farming the site and selling almost all the fruit to Guigal, one of the Northern Rhône’s most famous names.  Indeed, beyond the family vineyard, Nicolas spent a lot of time at Guigal – after his father Gérard left life on the factory floor to head up their viticulture team. From 16, Nicolas would work there in his holidays to earn some money. When Champagneux turned 18, he needed to find a job: he was determined not to work in an office and loved being outside, so he ended up becoming a high-wire electrician – working with huge currents of 20,000 volts. “You were never in the same place, each day was different, each task was different – so there was no monotony,” he says. He often finished his day early, and – a farmer born and bred, unaccustomed to the concept of relaxing – would go help in the family vineyard.  When his uncle passed away, there was no one else to take over the domaine – so he stepped up to the plate, keen to ensure his family’s heritage was preserved. He decided to start keeping the fruit and making wine under the family name, wanting to see the year’s efforts captured. He knew how to work the vines but had never dreamt of being a winemaker – but, never one to be put off by a challenge, he learnt on the job. That was 2014, and the wines have rapidly earned him a reputation in the region. The family cellar had the essentials, but the first few vintages were made with the bare minimum – with a new cellar built in 2016 (Yves Cuilleron advised on the project).  Almost a decade after he left the world of pylons, transformers and conductors behind, life might follow an annual cycle, but it’s as un-monotonous as it was before. Nicolas works as a one-man band and values the independence that brings – managing his own time and being his own boss. “There is still a lot to do and each year is different,” he tells me. He hopes his son will join him at some point – he was born in 2009, and his uncle put away a stash of wine from the vintage, some of which is set to be released for its 20th anniversary in 2029.   Climate change is at the forefront of his mind, with harvests now early September and even August versus October under his uncle. Where they used to struggle to get 13% potential alcohol, his wines often sit at 14-14.5%. He’s now working with grass cover, deleafing less and using a little whole bunch in warmer years to preserve freshness in the wines. Otherwise, little has changed in the decade since he started – he continues to work as simply as possible, looking to translate the vines he grew up amongst into wine. And that’s just what he does: the wines are elegant expressions of Les Grandes Places, perfumed and suave, with a fine grip of tannins and an underlying savoury salinity, ageing beautifully – as a mini-vertical of the 2015, 2016 and 2017 vintages showed recently.   The Nicolas Champagneux wines  From his four hectares of vines, Nicolas Champagneux makes three wines: an IGP Vin de Pays des Collines Rhodaniennes La Rémise and two Côte-Rôties, Les Grandes Places and La Dédicace, all made with 100% Syrah.   La Dédicace comes from the younger vines in Les Grandes Places, with a “mere” 40-60 years behind them on average. Around 6,000-7,000 bottles are produced of this “baby” Grandes Places.   Les Grandes Places comes from his oldest vines, averaging a little over 100 years in age, with some planted in 1910. Just 1,500 bottles or so are made of this wine each vintage.  Both the Côte-Rôtie wines are made in exactly the same way, mostly de-stemmed with  little whole-bunch added in warmer vintages and fermented with indigenous yeast, reaching a maximum 28-30°C, and spending around three weeks on skins. The wine then spends 20-24 months in old oak before bottling.  Nicolas Champagneux Côte-Rôtie Les Grandes Places: a vertical tasting  2022 Côte-Rôtie Les Grandes Places: This is packed with spicy intensity – clove and cardamom along with a hit of Szechuan pepper. The palate offers a juicy lushness, layered with deep, concentrated dark cherry fruit and a twist of black tapenade, with mouth-coating tannins and all refreshed by a line of vibrant acidity. A baby now, best approached from 2030.  2021 Côte-Rôtie Les Grandes Places: A really impressive 2021, poised and powerful, Champagneux’s Les Grandes Places needs air but gradually reveals pepper spice and more delicate, lifted, violet florals. There is, however, power and weight to the palate – more than you might expect from the pretty nose, with a savoury firmness, supple but structured tannins and juicy acidity. It’s dark and brooding, gothic with its haunting florals, with a long, mouth-watering, saline finish. Approach from 2027.  2017 Côte-Rôtie Les Grandes Places: The 2017 Les Grandes Places combines delicate florals with a bloody, iron note on the nose, leading on to a palate layered with bramble fruit. The tannins are round, supple and soft-textured, with tangy acidity that cuts through the concentrated fruit, while the long finish is scented with white pepper and parma violets.  2016 Côte-Rôtie Les Grandes Places: This 2016 is in a gorgeous place. Heady incense combines with sweet cherry fruit and a touch of smoke on the nose, leading onto a palate that you sink into – the wine soft and supple, with waves of sweet fruit, yet all cut by an intensely saline, savoury edge. Fresh and flawlessly balanced, decant and enjoy now and over a good decade to come.   2015 Côte-Rôtie Les Grandes Places: The sternest of the trio of 2015, 2016 and 2017, this is a powerful and impressive vintage of Les Grandes Places – with all the best characteristics of the year. The wine is dark and broody, compact and amazingly primary still, with black cherry fruit and blackberry filling the nose. On the palate, however, it has amazing purity and intensity, with a crystalline quality to the fruit, plenty of acidity to complement its concentration and the firm tannins. Smoky, saline notes linger in the mouth, with a dusting of petal florals on the finish. Ch. Belle-Brise is a rather inconspicuous Bordeaux property with a “garden” vineyard of just two hectares and an annual production of just 800 cases. With such small quantities produced and a legion of loyal followers, the wine is little known outside of an exclusive list of top restaurateurs, a few lucky distributors and their clients. Henri-Bruno is the 20th generation of the de Coincy family, famous for their Armagnac production that dates back an incredible 700 years. Despite this impressive lineage, Henri-Bruno's winemaking skills are a much more recent labour of love. Similarly, Ch. Belle-Brise was late to commercial winemaking – an enterprise started by Henri-Bruno when he bought the property in 1991 – despite producing wine since the 18th century. Ch. Belle-Brise is often compared to the Grand Crus of Burgundy and has been referred to as the "Musigny of Pomerol", such is the elegance and weightless power this wine consistently seems to possess. Theories abound about why this is the case. Perhaps it is Henri-Bruno's  Burgundian wife's influence, or the pre-1956 vines, or small-scale operation? For De Coincy, it is all of the above that makes this little wine of Pomerol so unique. The foundations of Ch. Belle-Brise What is really special about the Belle-Brise vineyard is the age of the vines, more than 100 vines are a staggering 120 years old and the average vine age is around 70 years old.   It is rare to find any Pomerol vines that pre-date 1956, as devastating frosts that year destroyed virtually all the region's vineyards. Many vines planted in Pomerol post-1956 were reliable clones but not as good in terms of wine quality. This is not the case at Belle-Brise, where vines either pre-date 1956 or were propagated from the surviving old vines. Outside of Belle-Brise, there are just a few pre-1956 vines dotted around Pomerol and Saint-Emilion – most noticeably at Ch. Lafleur and Ch. Ausone. Old Cabernet Franc and Merlot vines, De Coincy believes, create an overall elegance, finesse and depth of flavour on the palate that is something really special. The Belle-Brise vineyard contains a split of around 80% Merlot and 20% Cabernet Franc. The soil has gravel on the surface and beneath, a layer of clay, chalk and crasse de fer (iron rich bands of sand that play an important role in the flavour characteristics of many top Pomerol wines). Many believe this is responsible for the truffle aromas commonly found in Pomerol wines. Others believe it provides viticultural benefits, limiting vigour and excessive leaf growth, in turn producing smaller concentrated berries. Natural winemaking at Ch. Belle-Brise Despite being an experienced Brandy producer, De Coincy's project in Pomerol required considerable learning on the job and was faced with a challenging start. His first crop in the 1991 vintage was largely decimated by frost, meaning he had very small quantities to work with and likely not enough to sell. This did, however, mean he was able to experiment with the vintage and trial different approaches. Three very challenging Bordeaux vintages followed as Mother Nature threw everything at De Coincy. It was a steep learning curve. When the more successful 1995 and 1996 vintages arrived, the winemaker was ready to produce Belle-Brise in his style, with confidence. The approach is artisan and natural. There is no electricity on site and everything is made much as it would have been centuries prior. The grapes are grown using biodynamic and organic principles, and De Coincy employs horses to work the vines. The grapes are all harvested within one day allowing pin-point accuracy on picking dates. They are then hand-sorted exclusively by women – something de Coincy is insistent upon. Once picked and sorted, the grapes are then left uncrushed in concrete vats in the winery. De Coincy then closes up the cellar and leaves the grapes for five days, so the natural coolness of the cellar retards the fermentation process. After five days, De Coincy returns to open up the cellar. As the heat of the day enters the cellar, the grapes naturally begin to ferment from natural yeasts. De Coincy tends to pump over the juice twice a day over six to 10 days depending on the vintage and then leaves the wine to settle in-tank prior to the pressing of the skins. This traditional method is not very common in modern winemaking as it can run the risk of contamination. De Coincy, however, believes this method helps extract the delicate aromatics from the wine. After this stage, De Coincy carries out a very slow pressing of the skins using an old manual vertical process, which he believes is another vital element in the process that retains a delicate finesse typically found in Belle-Brise. Many of these methods are not possible in larger estates as they are laborious and manual. The Belle-Brise wines are then matured in large 400-litre barrels (one-third new, one-third one-year-old, one-third two-year-old), eschewing smaller barriques which De Coincy feels has too strong an affectation on the wine. The Ch. Belle-Brise drinking window Ch. Belle-Brise has always been a fairly accessible wine in its youth with its compact but soft tannins already beautifully integrated. For De Coincy, Belle-Brise needs five years maturation in bottle before you can really benefit from the full impact of the wine and then, depending on your tastes, it drinks beautifully over the next decade. De Coincy has often served his wine blind to his restaurateur clients and found it has been mistaken for premium Burgundy. The similarity with Grand Cru Burgundy is difficult to fathom, considering the completely different varieties and different climates, yet Belle-Brise does boast the silkiness, finesse and almost weightless power of Grand Cru Burgundy, with a touch more opulence you expect from Pomerol. Ch. Belle-Brise's rarity With a mere two-hectare walled -garden vineyard, production at Belle-Brise is minuscule, making it one of the rarest wines on today's marketplace. The vast majority of liquid never reaches private clients as it is snapped up by some of France's finest three-Michelin-starred restaurants. In fact, 80% of three-star-Michelin restaurants in France (and 25 other countries) list the wine, including Georges Blanc and Alain Ducasse: Le Louis XV. I’m sitting opposite Rino Fontana, an Italian wine collector that Antonio Galloni named his Wine Personality of the Year in 2023. Fontana looks unassuming – like any other septuagenarian that you might find, cigarette in hand, knocking back an espresso in a sunny piazza. Sunglasses hang on a string around his neck, and occasionally he rifles through scraps of paper that seem to operate as a calendar and/or journal. I’m not sure what I was expecting, but it was perhaps someone a little more, well, suave. Fontana has been collecting wine since the 1980s and is renowned for his cellar, a treasure trove of remarkable vintages from Piedmont’s top producers. Indeed, Galloni has dubbed him “Il Professore” for his extensive knowledge of Italian wine – despite never having worked in the industry. As Fontana scrolls through pictures on his phone, recalling recent dinners, he rolls off names and vintages that would leave any wine-lover speechless. He grew up in the Oltrepò Pavese, where his father was a stonemason, but would buy grapes and make a little wine for the family. Fontana was sent to school in Valenza, a town known for its gold industry – and he started working in a gold factory in his late teens. Aged 24, he and his best friend opened their own jewellery workshop. It was the owner of a local restaurant in nearby Mortara who introduced Fontana to the real pleasures of wine, and a bottle of Conterno’s Monfortino that made him fall head over heels for Nebbiolo – the 1958 vintage, in fact. Since that first taste, he’s opened over 150 bottles (yes, really) of the 1958 Monfortino. It was that wine that prompted Fontana to start visiting producers – an adventure in self-education. At the time, people weren’t buying wine, and Italy’s winemakers were far from fashionable. He became friends with the likes of Giuseppe Rinaldi, Bruno Giacosa and Gianfranco Soldera, rapidly securing significant allocations of their wines when few others were showing interest. Producers, in turn, suggested he had a gift – unique in his ability to understand wines in barrel and foretell their future. Today, he covers around 80,000km a year visiting producers – but the vast majority of that mileage is in Piedmont, for Fontana drinks – and collects – little other than Nebbiolo. This one grape represents around 95% of his consumption, he says, with Barolo and/or Barbaresco on the menu every day. He always has the latest releases on hand in the fridge – even some basic Langhe Nebbiolo, but at least twice a week he’ll uncork something special from the 1960s or ’80s with wine-loving friends or producers. While Nebbiolo is one of many grapes to be declared “the king of wines”, for Fontana it really does reign supreme. When I ask why, marvelling at how he could drink so much of just one variety, he shrugs: “Nebbiolo is Nebbiolo.” When I push him, he says he loves its ageability, structure and elegance – something he feels you can’t find in Pinot Noir. He recalls a recent dinner with Galloni at Il Centro in Priocca, sharing a bottle of Domaine de la Romanée-Conti’s 2004 La Tâche alongside a 1947 Borgogno Barolo and 1989 Vigna Rionda from Giacosa. Both the Barolos, he says, grew over the dinner – while the La Tâche faded slowly. For him, Burgundy (even the world’s most sought-after bottles) is no match for Nebbiolo. That’s a controversial opinion – but Fontana is not a man short of views. He dismisses the wines of Cappellano and Accomasso, while he has firm beliefs on how Nebbiolo should be made, favouring traditional winemaking with old oak – not wanting to feel the wood in the wine. He argues that too many young producers are going to Burgundy and trying to echo that style in their wines, losing their Piedmontese identity. The resulting wines are, he feels, too technical, too clean. “Great wine can’t be perfect,” he says – suggesting that those imperfections are partly what makes wine feel alive. While the most established and famous producers dominate his collection, he also likes the wines from newer names such as Trediberri, Crissante and Cascina Baricchi. Beyond Nebbiolo, he’ll dabble in certain labels of Sangiovese – Soldera, for example will pass muster, as well as SanCarlo (a producer he feels rivals the former). Montevertine’s Le Pergole Torte would previously have been a prime choice, but now he’d choose Le Boncie’s Le Trame instead. He likes Valentini and Emidio Pepe, and used to buy Gravner but feels the style changed in 2004 so stopped. He sold his jewellery business in 2000 – dedicating his time entirely to wine – visiting producers, building his collection and selling to select parties (of which FINE+RARE is lucky enough to be one). Fontana has around 9,000 bottles in his collection today. He shows us a video of his cellar – intriguingly with many of the wines stored upright. Anything post 1990 is kept on its side, but older wines stand proud in his cellar – something which he argues is better once they reach a certain age, with the cork and humidity of the cellar more important in their preservation. It’s a remarkable collection, with incredible verticals of many wines. His access seems unparalleled – receiving larger allocations than many importers, given his historical ties. He is the only individual, for example, to receive an allocation of Rinaldi’s Brunate Cru – a wine that is otherwise kept exclusively for the family. Some of his most prized bottles are Giacosa’s 1964 Santo Stefano and magnums of 1970 Monfortino (“amazing” – he says), while he has a soft spot for the youthful 2015 Soldera. Now aged 73, Fontana seems just as enchanted by wine as when he first tasted that 1958 Monfortino. I ask him if there’s a wine he is still desperate to taste, a unicorn that he’s still hunting: the answer is no. He’s been able to try every vintage from the producers he loves. Since Bruno-Eugène Borie took over Ch. Ducru-Beaucaillou in 2003, the estate has become one of the best-known and most-loved properties in Bordeaux. The 2023 vintage will be his 20th at the helm – during which time the estate, and the region, have been transformed.  “Everything has changed, and nothing has changed,” Borie says, laughing. “Go all the way back to 1720. Even then, Ducru was trying to improve and adapt to current market conditions.” While he insists that Ducru’s quest to produce the best wine possible dates back centuries, facilitating that motivation has not always been easy. Bordeaux thrived throughout much of the 18th and 19th centuries, prior to the arrival of phylloxera in 1875. The economic turmoil in Europe during the first half of the 20th century was even more challenging, and the recovery slow. It’s only really in the 21st century that many of the top Bordeaux estates have regained the resources and clawed back their premiership. Borie took over Ducru at a key turning point for the region – with both the climate and markets rapidly changing. Economic reform in China led to a huge influx of new customers for the fine wine market, and Bordeaux in particular. “China represents 30-40% of the Bordeaux sales today,” says Borie. “It changed everything.” For Borie, this sudden and huge expansion of the market began to lure investors from all over the world. As investment flooded into the region, new wineries, new equipment, new viticulture and new technology began to pop up everywhere. “More investors meant more managers, and more managers hired innovators,” says Borie. It facilitated a whole qualitative movement that, he believes, is behind so much innovation in the region. But the investment in Bordeaux was not the only factor behind the big changes at Ducru. Borie’s decision to slash production had a huge impact on the estate. Before he took over, the property made around 15,000-20,000 cases of the Grand Vin. Today, it’s closer to 7,500 to 8000. Few estate owners can attest to such a dramatic drop in yield for the sake of quality. Such a bold move was certainly helped by Ducru’s independence – it is one of the few Classed Growths that is still 100% family-owned. And the risk has paid off, with Ducru regularly competing for wine of the vintage in the Médoc. Climate also brought about big changes at the property. Borie’s first year in charge – 2003 – was the hottest on record. Soaring temperatures were causing havoc all over France and not just in the vineyards. “People were dying on the streets of Paris,” recalls Borie. He remembers his viticulturist at the time came to him in June, suggesting they start leaf-thinning the vines (removing leaves, opening up the canopy and bring more sunshine to aid ripening). With the vintage’s blazing sun, Borie thought it was madness. “People did it because it’s what they always did,” says Borie. But he resisted. He quickly realised it would be the weather – rather than tradition – that dictated work in the vineyard going forward. As harvest dates crept forward, the days of an August off at the beach were disappearing. Everything was changing. While the investment and innovation in these early years coincided with rapid change in the region, it is over the last 10 years that Borie has witnessed the most impactful changes in Bordeaux. In the vineyard, these changes have not arisen from flashy new machinery, but in the strategic employment of companion planting and cover crops. These agricultural techniques have been used through the ages, but, Borie believes, never as dynamically and rigorously as today. “We plant a certain type of radish in the vineyard where we find compaction, this opens the soil and creates more oxygen. We plant alfalfa at the beginning of spring where needed, bringing nitrogen to the soil at the right time,” he explains. The control of organic matter, Borie believes, is the key to healthy soils, healthy vines and, most importantly, the quality of the grapes. But, Borie is quick to emphasise, this is not simply a revived practice from the days before chemical farming. For Borie, the science behind which and what cover and companion crops to use is much more advanced. Practices are no longer habitual, but much more scientific. “The companion planting of crops between the rows is very new,” says Borie. “Each plot has different requirements.” It doesn’t always work. Borie recounts how the planting of sorghum to encourage the root development of the vines resulted in a nematode infestation (a pest similar to phylloxera) – and the sorghum was quickly replaced. They’re still learning, admits Borie, but he’s convinced the vineyards have never been in better shape. Over the last 10 years, there have also been technological developments in the winery too. Borie is very proud of his “smart” tanks – which analyse the must and wine throughout fermentation, 24 hours a day. It’s a game changer for Borie who has been experimenting with them since 2019. In recent vintages, the Grand Vin has been made exclusively in these tanks. The information these tanks provide is perfect for monitoring temperatures and maceration levels – allowing Ducru to get the best out of the tannins without over-extracting. With live updates on what’s going on inside the tank (and no need to manually take a reading), they can adapt their processes instantly. Ducru has always been family-owned – giving Borie a sense of responsibility and duty. He still lives at the estate, making it one of the very few inhabited châteaux in the Médoc. Borie resides in one of its famous towers, while his mother (95 years old) lives in the other (and still enjoys two glasses of wine for lunch and one for dinner).  As custodians of the estate, Borie – and his mother – have witnessed many changes. And as Borie has grown accustomed to greater precision in the vineyard and winery, he has returned to consider older vintages in the estate’s cellars. He and his team set about checking every mature bottling, re-corking only those in perfect condition and destroying the rest. These bottles are more than history, they represent his family – and his sense of duty to their reputation has been the driver behind many similarly costly projects over his 20-year tenure. Having the opportunity to taste the entire range from Ch. Ducru-Beaucaillou from the magnificent 2019 vintage (now all in bottle) was a wonderful experience. Across the range, it is the textural quality of the wines that really stands out. The clarity of fruit – which Ducru has become renowned for – is also apparent. The quality of the Grand Vin, however, is so impressive – the depth and concentration, the layering of abundant tannins while never losing its finesse. Even at such a young age, its drinkability is a perfect example of contemporary Bordeaux with that extra level of precision. Tasting the 2005 alongside proved how well the wines at Ducru age. Still youthful with plenty of fruit, the first hints of midlife tertiary development bring so much complexity to the palate. It was only Borie’s third vintage, but the lower yields produced a wine of incredible concentration and balance.  The fortunes of history and the new wealth in Bordeaux has benefitted practically every property in the region but few have been so effective at capitalizing on it than Ducru. The transformation of this Saint-Julien property, both in the vineyard and winery, is impressive but there is, Borie believes, still room for improvement. His latest investment is a state-of-the-art winery planned for completion in 2024. With Borie in the driving seat and committed to championing the Super Second’s – and his family’s – reputation, Ducru-Beaucaillou is in a safe pair of hands. Browse all Ch. In a report published in 2014 by the UN’s Food and Agriculture Organisation, under current rates of degradation, all the world’s topsoil could disappear within 60 years. With 95% of all food produced relying on these living soils, this pronouncement was a stark and terrifying warning of what lies ahead. Industrial farming and deforestation are the leading causes behind the degradation of soil. Grape growing and large parts of the wine industry remain very much part of that problem. France’s vineyards, as an example, are the country’s biggest consumers of chemical fungicides, insecticides and herbicides. These products can devastate the life in the soil and completely disrupt the biodiversity of a region. Although viticulture represents just 3% of France’s agricultural land, the sector spreads 20% of the country’s fungicides. Many vignerons have tried to reduce chemical inputs, either using them as a last resort or not at all. Some believe non-chemical additions of copper and sulphur typically used to treat fungal diseases (the biggest threat to yields) are more damaging to the environment than systemic chemical interventions. It is a complex picture. But there are vignerons committed to non-chemical approaches – growers who believe they can offer alternative methods that are both sustainable for the future and remain commercially viable. While there are various approaches, they all share the belief that protecting the health of the soil is fundamental to their vineyard’s long-term future, as well producing a farming system that is not only sustainable but regenerative, in that it sequesters more carbon dioxide in the soil than it takes out. Exactly how this is practised remains a contentious debate. Many of these growers are certified organic, many are not – certification itself is another controversial issue. Biodynamic farming is organic farming with a more holistic approach, trying to recreate a natural balancing ecosystem that allows nature to restore and rejuvenate itself, in rhythm with the lunar cycle. Others have gone even further and have allowed their vineyards to grow wild, believing that an undisturbed vineyard is the most sustainable and ecologically healthy. Organic and biodynamic farming practices are essentially a return to conventional farming methods carried out prior to the introduction of chemical farming 70 years ago. The more non-interventionist approach goes one step further, attempting to recreate an environment that pre-dates all commercial farming. It is an approach in which crops and other plant life coexist together, allowing the environment to dictate what grows where. Under the teachings of Masanobu Fukuoka, it was coined “natural farming”. Masanobu Fukuoka was a Japanese microbiologist and agricultural scientist who studied plant pathology. After nearly dying during a bout of pneumonia, he experienced what he described as a profound spiritual experience – leading him to begin to doubt modern agricultural science. He gave up his scientific post and returned to his family’s farm on the southern Japanese island of Shikoku. It was here that he developed his own non-intervention farming techniques, which involved no tilling or ploughing, and no fertilisation of the land. This was to protect the vital microorganic life in the soil, that he believed was essential to creating an ecologically balanced environment. The publication of his seminal book, The One-Straw Revolution, in 1975, went on to influence the permaculture movement (no till, no ploughing) in the west, and even more radical concepts. Alsace-based viticulturist Bruno Schloegel (of Domaine Lissner) is one such radical. He has a nine-hectare estate that, over the last 20 years, he has adapted to what he calls the “savage” approach to viticulture. For him, “savage” is a more accurate translation of Fukuoka’s methods. “I asked my Japanese friends to translate Fukuoka’s Japanese term,” says Schloegel, “and it translates as something between being free and alive. But not just the vines, the whole system of animals, insects, fungus. The key is not to disturb, as this will weaken the system.” For Schloegel it is a better translation than “natural” which today, he believes, no longer means anything. Despite adopting Fukuoka’s ideas, Schloegel was in fact practising the same approach before he was even aware of the Japanese farmer’s book. “I never knew about Fukuoka until a few years ago. I was given his book and it was amazing. Almost every page, we were totally linked.” Both former scientists, Schloegel too became frustrated by the scientific data available. “It is more complex than the techniques we have been taught,” he says. “Even when I was a student, I thought this. I am a scientist as he was. I studied in the ’70s. He studied in the ’60s. But our conclusions are the same. The answer is to not disturb.” Prior to Fukuoka, Schloegel was taken by the work of the eminent English scientist Dennis Noble, a pioneer of systems biology whose publication The Music of Life became a huge influence. Noble uses the analogy of life as many orchestras playing different scales, very small and very big. “Molecules, atoms, landscape, living beings as well as the vine – all are playing together and that is what we call life. We can listen to each scale of this living system, and you will find almost the same music, because it is totally coherent. Each scale is in harmony. It was very inspiring to me,” Schloegel explains. Like Fukuoka, Schloegel has a strong respect for spirituality as well as science and talks about how the human brain deciphers experiences differently. He uses music as an example, describing how listening to music creates an emotional reaction which the scientific part of your brain can’t explain. “Knowing you only have a small knowledge of this complexity, this complexity of nature, makes you humble. But spiritually you get pleasure from living with this complexity and not trying to control it. It’s just like a wave you are surfing on. This is the pleasure side.” As well as adopting a no-plough, no-till approach, unlike biodynamic farming, Schloegel does not sow seeds for cover crops, nor use any organic fertiliser, preparations or other inputs. He believes his vines’ roots not only root deeper, but are more resistant to disease and suffer less from stress. He also saves on the costs of such additions. So what does he do? He prunes the vines each year – very late in March/April just prior to the new buds forming – and he mows between the rows just prior to harvest. He does also use copper and sulphur, when necessary, to tackle disease but believes he can phase this out. Beyond that, the vineyard is left to its own devices. It is hard to keep up with Schloegel sometimes – his concepts are unconventional, but this holistic approach is highly considered. It is completely at odds with the commercial farming approaches and understandably has caused controversy. But he, along with a growing number of viticulturists around the world, is totally committed to the concept that permaculture is essential to the future long-term health of arable land. He believes he can not only produce an economically viable crop (up to 40hl/ha), but he can produce wines with greater complexity and terroir expression. He believes it takes between seven to 12 years of not disturbing the vineyards for them to find their balance. “At this point you are on the crest of the wave – it is very calm,” he says. But this is a long process and requires a lot of faith to commit to. Even Schloegel admits it gets worse before it gets better, as the vineyard adapts. “When you stop the herbicides, the mowing and the ploughing, you get the bad weeds. But these weeds prepare the soil for the next generation of plants,” he says. Poppies, lilies, thistles, wild orchids then start to appear and then fruit and vegetables and a huge variety of plant life and wild flowers begin to grow. His vineyards today have a huge variety of plant and wildlife species coexisting, with cherry, apricot, fig, almond trees and wild vegetables, flowers, fruits, and aromatic herbs all growing between the vines. What then happens seems incredible. Schloegel explains, once in equilibrium you see distinct plants continue to grow in the same place each year, depending on the terroir of that part of the vineyard. There is one part of his vineyard where 30 metres of wild strawberries appear every year, growing alongside the vines. In other parts there are leeks, other parts a particular herb. Schloegel outlines that even within a single vineyard, very little is exactly the same. The composition, altitude, slope, geological make-up are all different and, when left to adapt, one vineyard grows multitudes of plant species at different levels of concentration in different parts of the vineyard, depending on what adapts best to that particular spot. This is what Schloegel believes is real terroir in action: “A terroir is a full, complex living system – and a wine of this terroir is a response. In this totally free, rich, complex place. I know it is possible for natural systems to rebuild from themselves. But it cannot be fostered.” Fukuoka’s farm on the island of Shikoku in southern Japan was a rice and citrus fruit farm and, while he managed to produce commercial yields of both rice and fruits, the transference of his techniques to the vineyard is not quite as straightforward. The concepts are radical and while a few like Schloegel are convinced it’s possible – with his own yields varying from 10-40hl/ha, others remain sceptical. Schloegel’s Alsatian neighbour Olivier Humbrecht MW (of Domaine Zind-Humbrecht) does not believe a non-interventionist approach is a good idea – nor that it is necessary for making wine a sustainable crop for the future. While Humbrecht accepts there may be many good ideas in terms of regenerative methods that heighten biodiversity and increase the health of the soils, he is sceptical of its long-term future. Humbrecht’s fundamental criticism is that Schloegel’s approach is not as undisturbed as he claims.“A vine is a cultivated plant,” says Humbrecht. “You are cultivating something, disrupting something natural and making it not natural. It is not natural to plant vines one metre apart on a slope, in poor rocky soil, in a place where it doesn’t rain much. It’s not natural to force it to produce grapes every year. So you have to compensate this with something.” For him, permanent cover leads to soil compaction – with the shallow roots of these plants and the topsoil damaged when working in the vineyard – which has graver long-term effects than tilling or ploughing. These stresses on the vine, Humbrecht explains, are exactly why we have flavour in our wines. Each of these stresses, whether it be the nutrient stress from poor soils, the water stress from growing on a slope or well-drained soils, or nutrient stress from high density planting – these are all deliberate decisions made by vignerons who, over the last 2,000 years, have discovered the best places to cultivate and stress the plant in order to produce delicious fruit. This fruit is the vine’s attempt to escape, through tempting wildlife to eat it and disperse their seeds somewhere less inhospitable. “France would be a forest if untouched and I’m not sure you would not find one wild vine where we have the top vineyards today,” he says. Humbrecht remembers discovering the vines on his own Grand Cru vineyard Rangen de Thann. These vines had been abandoned since World War One. When he arrived 60 years later, most of them had disappeared. The vines that did survive and adapted were producing tiny, small clusters of grapes. Humbrecht believes non-intervention farming would have similar results. “If you don’t prune a vine for 10 years you will end of with tiny clusters, producing maybe 2-4hl/ha – a typical commercial yield in the region is closer to 80hl/ha. Humbrecht’s biggest concern centres around this approach’s commercial viability. And that is important if these methods are to be adopted more globally. If these vineyards’ crops are too small, the vineyard will fail and more likely be bought up by someone else who could return the vineyard to conventional, chemical farming. While there may be disagreements between Humbrecht’s biodynamic approach and Schloegel’s “savage” approach, the permaculture concept has led others to adapt their practices. Michel Chapoutier has been farming biodynamically for the last 30 years but has more recently adopted permaculture. “How I am managing my soil today is completely the opposite to how I managed them biodynamically 20 years ago,” he tells me. Chapoutier now believes the disturbance of the soil is more damaging than the removal of weeds and therefore has stopped ploughing his vineyards. For Humbrecht, light ploughing and resowing cover crops is a better solution. “There is no technique that is 100% good,” he explains. “You have to weigh up the options. What is better? Let the vine die from the competition of the plants growing in May, or disrupting the microorganisms in the soil by ploughing four inches into the soil (between May and June) – you have to choose. It is always a question of balance.” Another producer who has gone beyond organics and placed the development of biodiversity and regenerative practices at the heart of their operation is Gaja. The early success of Piedmont as a fine wine region in Italy saw areas such as Barbaresco and Barolo become dominated by vineyards. Forests were felled and biodiversity dropped. Gaja has since incorporated more trees, adopted permaculture methods in the vineyard and today produce their own organic fertiliser in their historic vineyards. The team has also recently purchased new land in Alta-Langhe where they are not just planting vines, but trees too, incorporating the trees and the vines together. “There is a growing sensibility towards the importance of biodiversity,” says Gaia Gaja, “therefore we are fine with sacrificing space suited for vineyards in favour of trees, we believe in the long run this decision will benefit the health of the vineyards.” Industrial farming is in ecological and financial crisis. More sustainable approaches have to be adopted if we are to survive the next generation, but, so far, those choices come at a cost. For many farmers struggling to make a living, the conventional, chemical farming approach has become the only way to financially survive, taking each year as it comes. These growers can ill afford to think much beyond that, despite the system’s long-term unsustainability. Many feel trapped and find more sustainable approaches economically unviable without better directed government subsidies that promote regenerative farming practices. Wine is hardly an essential food product, but it is the economic engine for entire communities that rely on it for subsistence. In certain wine regions where there is a reliance on water reserves and chemical inputs, it will have to adapt or die. Minimal intervention viticulture is no doubt a radical option, but truly regenerative viticultural approaches will be necessary in a future where food shortages become more widespread. “I want to struggle,” says Cristiana Tiberio, earnestly, as we talk in London. This Abruzzo winemaker has rapidly become one of Italy’s most fashionable names. Thanks to her hands-off approach in the winery, she’s a darling of the natural wine scene, but is also earning top scores and rave reviews from the likes of Eric Asimov (The New York Times), Antonio Galloni (Vinous) and Ian d’Agata. But, as I found talking to her, she’s far from complacent.  Cristiana fell in love with wine as a teenager. Her father, Riccardo, was friends with Bruno Giacosa and the legendary Piedmontese producer’s wines were her favourites. She noticed early on that wines made with the same grape from different sites tasted totally unlike each other. “Wine was an infinity world,” she tells me, still with a touch of whimsy – and it was a world that she set her heart on exploring. When the time came, she set off to study chemistry at university – looking to the science behind wine rather than more practical oenology. Before she knew it, however, she’d been diverted, ending up with a PhD in photochemistry, far from “the infinity world” she’d committed to. So she quit. Instead, she travelled the world, working with various top producers, including Jacques Selosse, Nicolas Joly, Egon Müller and leading names in Chablis, before returning to Abruzzo in 2004.  In the meantime, her father Riccardo had found a special parcel of land in the mountains near the town of Cugnoli, with an abandoned plot of Trebbiano Abruzzese – the indigenous grape that had largely disappeared from the region. With its large, juicy berries and thin skins, this variety is more susceptible to fungal disease, can be challenging to ripen and lose its bright acidity if not picked at the perfect moment. Trebbiano Toscano (ubiquitous across much of Italy, and in France under the guise of Ugni Blanc) had replaced many plantings – favoured for its small berries, ability to accrue sugar easily and retain its moderate acidity.  This abandoned vineyard had survived largely because of its unique site – with canyons to the south and west, meaning a wind blows through the vines constantly, clearing the humidity and reducing disease risk. It was also planted in the traditional Abruzzese pergola system, with two vines planted at each post, wider (four-by-three-metre) spacing, providing competition but also forcing the branches to grow longer, meaning a larger canopy, aiding photosynthesis and therefore ripening. Now 95 years old, these ungrafted vines had also endured thanks to their fortuitously sandy soils (a neighbouring plot, on marly clay, had to be replanted on rootstock, and is now around 80 years old).  While the Trebbiano Abruzzese was the lure of this site, much of the property Riccardo purchased was unplanted. Today, Tiberio has 30 hectares of vines, all in one contiguous parcel – with additional woodland, as well as alfafa and wheat fields, all part of the family’s championing of biodiversity. And, as much of the area hadn’t been planted, the property hadn’t suffered from industrial farming – meaning the soils were already healthy, however preserving it is at the forefront of what Tiberio does.  The vineyards are divided between Trebbiano Abruzzese, Pecorino and Montepulciano – a fraction of the various grapes permitted in Abruzzo, but – importantly for Cristiana – the ones that were historically native to their mountainous terrain. They only planted with massal selections – something Cristiana feels is key. She argues that clones sourced from vine nurseries are designed to be planted anywhere, sacrificing anything “native” in the name of disease resistance and/or yield. “For me, historical heritage is everything in the wines,” she explains. On a more practical front, she finds that massal selections cope better in difficult vintage conditions, adapting more easily. As evidence, she points to a plot of ungrafted vines that she planted in February of this year (2024), explaining how despite the extremely dry conditions, the vines survived – entirely unirrigated.  While Cristiana clearly values the traditional pergola training, she has chosen to use guyot training for most of their vines. The old vines – largely used for Fonte Canale and Archivio – are under pergola, however she doesn’t feel it’s right for everything. When it comes to Pecorino, she explains how the variety naturally grows vertically, meaning pergola-training would force the vine into an unnatural shape, impact sap flow, and therefore quality. As for Montepulciano, while they have 2.5 hectares (used for Archivio) under pergola, she feels that the pergola system can push the grape’s rustic character – the thin skins with less phenolic ripeness (due to shading) at risk of producing more easily extractable, less refined tannins. For her, guyot elevates the flavour profile of the grape and helps balance the potentially aggressive tannin, avoiding it being too “loud”.   Cristiana’s brother Antonio is in charge in the vineyards, where they work organically. They briefly trialled biodynamics, however have veered away from using the preparations, along with any fertiliser or seeded cover crops – keen to avoid adding any outside inputs that aren’t “respectful of their terroir”, as Cristiana puts it. The winemaking continues this philosophy, with indigenous yeast, almost no new oak across the range (just 30% for the Archivio bottling), the wines unfined and unfiltered, largely avoiding temperature control where possible, and SO2 only added at bottling.  Although organic, they aren’t certified – something she feels strongly about. She explains how both dedicated, small growers and “big, industrial” producers can bear the same certification, while one’s farming is considered and artisanal, yet the other is borderline conventional. It “certifies our attitude and we stay lazy”, she tells me. “We stop struggling with our mind to find what is better for our terroir,” she says – something that she is anxious to avoid, keen to continue striving, pushing and working to do better, rather than tick a box and move on.  And that work is not merely intellectual. Having just finished harvest in Abruzzo before touching down in London, she was soon flying off to Oregon – squeezing in a second northern-hemisphere vintage at a property there. It’s a chance to learn, and few 50-year-olds seem to be quite as restless as this one. While Tiberio is a family venture, it’s not one that was passed through the generations – something for which Cristiana is grateful; she has been able to choose her site, choose the wines she’s making and define her own philosophy – one that is now resonating loud and clear around the world.  The Tiberio range  The regional wines  Trebbiano d’Abruzzo: Tiberio’s entry-level Trebbiano Abruzzese comes from three hectares of 75-year-old pergola-trained vines, those that were grafted 14 years after their oldest (dedicated to Fonte Canale). Only made with free-run juice, it’s fermented and aged in stainless steel.  Pecorino Colline Pescaresi: The vine material for their Pecorino was selected from a few old vines on the site, but comes from a 3.8-hectare plot planted in 2001 and guyot-trained. Only made with free-run juice, it’s fermented and aged in stainless steel. These are some of the oldest Pecorino vines in the region and the wine is unlike the modest Pecorino you may have previously tasted – ageing impressively.  Cerasuolo d’Abruzzo: This rosato is very special. It comes from nine hectares of Montepulciano, planted in 2001 and Guyot-trained. Made with free-run juice (with no maceration whatsoever) and only seeing stainless steel, it’s a perfumed and bright style of rosé that can and should age.  Montepulciano d’Abruzzo: This is the largest production cuvée, coming from 15 hectares of Montepulciano – both older pergola-trained vines (62-year-old) and younger Guyot (planted in 2001). As with the other entry-level wines, it only sees stainless steel, spending 15 days on skins.  Single-vineyard bottlings  Fonte Canale: Arguably Tiberio’s most sought-after wine, Fonte Canale is pure Trebbiano Abruzzese from 736 ungrafted, 95-year-old vines, spread across around two hectares of sandy soils. (They currently aren’t replanting the individual vines when they die, as don’t want to plant grafted stock, but are cautious of fragile young ungrafted vines attracting phylloxera.) It was first made in 2012, with these ungrafted vines needing time to recover from their previous neglect. The combination of site and variety produces wines with modest alcohols (often 12-12.5%) and naturally low pH (the 2018 is a mere 2.7pH!), giving a backbone of taut acidity (as Tiberio says – “not raw, but flavourful acid”). The site’s indigenous yeast produces a cool ferment (reaching maximum 23̊C) and a wine that doesn’t need racking post ferment, with little reduction. The malolactic is naturally blocked by the low pH and the wine only sees stainless steel – “to allow this wine to express its meaning”, Cristiana says. This stunning, vibrant white is a pure expression of a special site – one that ages beautifully, with its old vines almost overpowering vintage. If any further praise were needed for this wine, it has featured on the list at Massimo Bottura’s Osteria Francescana since its first release.  Colle Vota: First bottled separately in 2014, this vineyard is always the last to be picked. Planted in 2000 with massal selections from their old Montepulciano and guyot-trained, Tiberio finds the berries have thicker skins but release less during maceration (around 20 days). She also finds the tannins in the stems different here so is using a small portion of whole-bunch fermentation in the blend. Again with only free-run juice, the wine doesn’t see any oak whatsoever. Coming in a Burgundy-shaped bottle, this is the lighter of Tiberio’s two Montepulciano bottlings, but still with a firm tannic backbone, but with more delicate perfume.  Archivio: Launched in 2017, Archivio comes from the property’s 60-year-old pergola-trained Montepulciano on clay-rich soils, where the wind helps thicken the skins. Tiberio finds that the fruit has thinner skins from the middle of the pergola system, so these bunches are harvested separately. With thinner skins, the ferment has more lees and more reduction, needing oxygenation, so this is the 30% that goes into new oak to give it the necessary air. The bolder and firmer of the two Montepulciano bottlings, it is bottled in a Bordeaux-style bottle to indicate its ageing capacity – a wine that Tiberio confesses can be “monolithic” in youth, but offers great potential.  And coming soon… Quarmarì: A new single-vineyard Pecorino from 2023, this wine takes its name from the family dog, who passed away a few years ago. The wine has – so far – only been tasted by Ian d’Agata, who wrote that it is “a wine so amazingly good and unique that it will shatter all you thought you knew about the grape and what it can deliver”. Given how good even the entry-level Pecorino is, we can’t wait to try this.  The vertical tasting Pecorino  2006 Pecorino Colline Pescaresi: It’s hard to believe this is close to two decades old – the wine vibrant, lively and juicy with lean lemon freshness to the palate. There’s a suppleness to the body, yet it’s taut and mineral, and more honeyed and herbal notes emerging with air.  2009 Pecorino Colline Pescaresi: The 2009 Pecorino is instantly open, giving sage, thyme and honey on the nose, alongside fresh white peach. On the palate, however, it shows its restraint – still fulsome but with a mineral backbone that makes it feel youthful.  2013 Pecorino Colline Pescaresi: Leesy and mineral, this is almost reminiscent of mature Chablis or Blanc de Blancs Champagne – with a honeyed, chamomile edge. The palate is waxy and long, with a herbal lift to the finish.  2015 Pecorino Colline Pescaresi: There remains a creaminess to the nose here – the wine tighter than the 2013, with a limey, lean purity and plenty of energy.  2019 Pecorino Colline Pescaresi: This is strikingly different after the 2015 – much riper and more exotic, with apricot, peach, mango and orange peel. Combined with the wine’s viscosity, there’s something Viognier-like, however there’s still brilliant, mineral energy here, with tight, citrus-edged acidity.  Cerasuolo d’Abruzzo  2022 Cerasuolo d’Abruzzo: It will be amazing to see this wine develop. The nose is restrained – you can feel the potential behind. Gradually wild strawberry and bright raspberry emerge, alongside delicate rose petal florals. It’s tightly wound with immense energy to the flinty palate, a minerality driving through its core into the long, mouthwatering blood-orange finish.  2020 Cerasuolo d’Abruzzo: Deeper-coloured than the 2018, the 2020 has a brighter nose – with raspberry sherbet, strawberry laces and a creamy richness. The acidity again is in the driving seat, the palate chalky and mineral with lemon freshness and a slight phenolic grip that frames the crunchy red fruit.  2018 Cerasuolo d’Abruzzo: A surprisingly deep pink (especially given this is made only with free-run juice), with a copper hue. This was a real highlight of the tasting. The nose combines a flinty minerality with a funky, savoury, almost cheesy note, alongside dried cherry and rose florals. The palate has a line of bright acidity and a mouthwatering lemon finish. Very serious rosé that deserves bottle age.  Fonte Canale  2021 Fonte Canale: From a very dry growing season, this is such a baby. The nose is mineral with notes of pear skin, white florals, lime pith and cordial, with riper apricot emerging. It’s vibrant and full of tight, lemony acid, driving on to the chalky finish. Precise and pointed, there’s crisp apple and herbal freshness, with a saline edge.  2020 Fonte Canale: At first with a touch of gunflint reduction, the smokiness gradually lifts to reveal a tight and lean expression of Trebbiano d’Abruzzese – all citrus and mineral, needing time and air to reveal itself fully.  2019 Fonte Canale: The nose here combines vibrant green apple, greengage and lemon with a sea-spray freshness. It’s still limey and tight on the palate, but with a soft, full weight too – with generous yet tangy, white-pear fruit on the mid-palate, before tightening up on the saline, mineral finish.  2018 Fonte Canale: Dried herbs mingle on the nose with more hedonistic fruit – peach and green mango,, with real weight to the fruit here. There’s still the bite of piercing lemon acidity, surrounded by fleshier peach fruit.  2017 Fonte Canale: This feels much more closed in comparison to the 2018, with pure citrus energy, tangy, pure and limey, but with a slight creaminess mingling with the tart fruit. It’s concentrated and full of promise, but not giving much away now.  2016 Fonte Canale: Waxy and bright, the 2016 is full of energy. Pure flint, Meyer lemon and grapefruit pith, with more delicate white florals all vie for attention, while the palate is all about pure crunchy apple, minerals and its vibrant acidity.   2015 Fonte Canale: The nose here is complex – with notes of honey, chamomile, tarragon, bruised apple and a praline richness. The palate, meanwhile, feels brilliantly youthful, with lime sherbet and chalky minerality driving long into the mouthwatering finish.  2014 Fonte Canale: This was closed at first, with subtle floral tones of apple blossom and honeysuckle dancing on a background of lemon and pear flesh. The palate has that familiar drive of acidity leading into the impressively long, saline finish.  2013 Fonte Canale: Fresh cashew mingles with lemon sherbet on the subtle nose of the 2013, a wine with lift and energy. The palate is lively and long, with the finish offering honey, herbal notes and sweet hay.  2012 Fonte Canale: The first ever vintage of Fonte Canale, it was a real treat to try this special wine. The nose combines rosemary and thyme with candied lemon peel, as well as more honeyed notes. The palate is lithe and vibrant still, with a stony purity and saline finish.   Colle Vota  2020 Colle Vota: This combines juicy dark fruit, sweet spice, baked plum and violet florals. Rich black and red cherry fills the palate, with an edge of dried herbs and the scent of nutmeg. The tannins are savoury and firm, with a chalky freshness and zesty edge to the acidity.  2019 Colle Vota: The 2019 offers floral lift, with brighter cherry and raspberry fruit. Less savoury than the 2020, the palate is tight and mineral, yet with a softness to the mouth-filling fruit, all cut by juicy acidity.  2018 Colle Vota: This is drastically different to the 2019, offering an aromatic profile of baked strawberry and tea leaf – almost lapsang souchong. The chalky minerality stands out here, with high, piercing acidity giving the wine backbone.  2014 Colle Vota: There’s a significant colour change moving from the 2018 to the 2014 Colle Vota, while the nose reinforces this shift with leather and damp undergrowth sitting alongside dried red fruit. The tannins have softened and are supple, while the acidity still refreshes and cuts through the fruit.  Archivio  2020 Archivio: Savoury and rich, this is a powerful, dark, compact Montepulciano d’Abruzzo that needs time. It is intense and structured, full of tight bramble fruit and drying tannins, but with an impressive line of acidity at its core.  2019 Archivio: This is much more open than the 2020, with a sweeter, more red-fruited profile, and more overt sweet spice. Dried herbs and incense complement the bramble fruit. There’s a firm chalky grip to the tannins, tightening up as the structure announces itself on the palate, yet with mouthwatering acid keeping things balanced.  2018 Archivio: The sweet, baked red fruit of the vintage seems to carry through both of the reds in 2018. There’s a softness to the fruit, yet still power behind. It’s full-bodied and firm, yet the most approachable of the trio of 2018, 2019 and 2020, with fresh, juicy acidity.  2017 Archivio: There’s a touch of maturity just starting to show here, with the first hint of sousbois and leathery richness, an almost tarry character, sitting alongside the sweet plum, baked blackberry and smoke. Making Champagne is different. More than any other wine, it’s a long-term game. The region’s cellar masters don’t see the fruits of their labour for years, even decades, depending on the wine; their work closer to that of a master distiller rather than most winemakers.  “It humbles you – you are not the superstar. The superstar is definitely the Champagne,” Elise Losfelt – who took over as Cellar Master at Champagne Charles Heidsieck earlier this year – tells me. She has just done her first blends for the prestigious House, with wines selected by her predecessor, Cyril Brun – and those blends won’t be tasted by the rest of the world for as long as eight years, when it comes to the vintage wine.   With three young children (aged three, four and six), Losfelt’s home life is very much about the here and now, but the world of Champagne gives her the chance to slow down; “Putting myself in a timeline – not just in today,” she explains. Losfelt has big shoes to fill, following in the footsteps of Brun, who arrived at Charles Heidsieck in 2015 and helped steer the House into a new, more prosperous era, including the re-introduction of the property’s Champagne Charlie cuvée. He has since caused a stir in the world of sparkling wine by being the first Champenois ex-pat to move to Italy, taking on a new role at Ferrari (one of the top names in Trento DOC).  Similarly to Brun (who came from Veuve Clicquot), Losfelt arrives from one of the Moët Hennessy properties, Moët & Chandon. Also like Brun, wine runs in her blood – she’s the seventh generation to make wine, with her mother at the helm of the family estate, Ch. de l’Engarran in the Languedoc.   Losfelt spent over a decade at Moët & Chandon, a business which became “a place that feels like family”; but when the phone rang and it was a job offer from Charles Heidsieck… “I had to grab it,” she tells me. Not only has she always loved the Charles Heidsieck Champagnes, but it was over a glass of 1995 Blanc des Millénaires that she and her husband first connected, back in 2014.  For the majority of her time at Moët & Chandon she was the Head of Vinfication, preparing the wines for the cellar master, responsible for much of the winemaking – almost everything but the final blend. It was the scientific side of winemaking that had attracted her originally, but the lure of this unexplored artistic side of the job, combined with her emotional tie to the wines, made the opportunity impossible to resist. It was, as she told me, time to leave her “first family” to take on a new challenge.   For her, Charles Heidsieck stands apart from others for its endless complexity. “It’s a Champagne that doesn’t offer you just one facet, doesn’t offer you just one aroma, or just one characteristic of aromas… it’s everything together,” she explains. While the brief for something like Moët Impérial is to craft a consistent and fresh, vibrant wine, her brief at Charles Heidsieck is for “profoundness”. Even at the non-vintage level, she is looking for wine that would meet many Houses’ vintage standards; the aim is to consistently exceed quality expectations.  Talking about trends in the region today, I enquired whether there were any plans for Charles Heidsieck to follow in the footsteps of Louis Roederer, Krug or Jacquesson – creating numbered non-vintage releases, highlighting the base vintage and variation between years, rather than the consistency historically seen as desirable. There are no plans for imminent changes, but the House has – since the 1990s, under Chef de Cave Daniel Thibaut – had the “mis en cave” date, the year in which the bottle was laid down in the cellar for secondary fermentation to get underway. As for adding tirage or disgorgement dates: “This is a question for me in five years,” Losfelt says, with an unrushed shrug.  For this new Chef de Cave, it is only the beginning – with much to learn, test and try before any changes are made. Losfelt’s job is a little like the now-famous Patek Philippe advert, she tells me; she’s just keeping the seat warm for the next generation, inheriting the work of her predecessors and creating the tools for those that will follow her. As she tells me, “Every step of the way, one choice makes a difference.”  As we await the first releases bearing her fingerprint, there’s no doubt she’ll be working tirelessly to preserve and further Charles Heidsieck’s legacy. “Until it’s tasted, and it's good, I will not rest,” she says, a clear sense of responsibility for the weight on her shoulders.
