Sheestown – known locally as “ the place of the lush grass” – has well-drained lowland soils. The farm here, just outside Kilkenny, is owned by Philip O’Brien (whose son also works at Waterford). The 1.2 release from this site was aged in 33% first-fill American, 19% virgin American and 25% French oak, with 23% ex Vin Doux Naturel casks.
