Originating from Pinot Noir vines planted in white sand soils in the village of Sacy, Gaspard Brochet’s NV Blanc de Noirs Cochon Pinot de Sacy Tome I (2020) hails from the lieu-dit Les Eaux Belles, planted in 1988. Vinified in oak barrels without topping up and disgorged in January 2023 without dosage—though retaining a few grams of residual sugar—it reveals an expressive, flamboyant bouquet of raspberry, pink grapefruit, orange zest and spices. On the palate, it is medium- to full-bodied, concentrated and ample yet focused, with an elegantly muscular profile. The wine is underpinned by ripe yet racy acidity and concludes with a perfumed and resonant finish.
