Blended of 60% Chardonnay and 40% Pinot Noir coming mainly from cool climate Victoria regions, 30% of the NV Brut Chardonnay/Pinot Noir batches undergo malolactic fermentation while reserve wines are stored in a combination of large oak barrels, barriques and stainless steel and comprise more than 20% of the blend. It is produced in the traditional method and following the secondary ferment the wine is aged on yeast lees for 15 to 18 months. Giving a delicate to moderately intense nose of apple tart, honeyed toast and peach blossoms, it has a light to medium body and a good concentration of apple and fresh pear flavors. A dry style, the crisp acidity is well balanced by the faintest hint of dosage sweetness (9 grams per liter) and the bubbles and small, fine and persistent. Drink it now. With aromas of lemon zest and golden delicious apple plus subtle scents of cream and toast, Domaine Chandon’s NV Brut fills the mouth with small fine bubbles, crisp acidity and a moderate intensity of citrus fruit flavors.
