Just over 25 years ago, French fashion house CHANEL entered into the world of fine wine, purchasing the largely underperforming Margaux Second Growth estate Château Rauzan-Ségla. Two years later they acquired the Saint-Emilion Premier Grand Cru Classé, Château Canon. They have since turned these properties into two of the most in-demand fine wines in Bordeaux today. In 2019 CHANEL embraced their latest endeavour, acquiring Domaine de l’Ile, a prestigious wine estate on the French riviera on the exclusive island of Porquerolles, the largest of the “golden” islands just off the Côte d'Azur. Sharing the same philosophy as their sister wineries, they have invested in a stellar winemaking team at the Domaine, enlisting the help of Pierre Etcheberry and celebrated winemaker Nicolas Audebert (of Châteaux Rauzan-Ségla and Canon). Nicolas Audebert is in fact a local to the region, born and raised in the nearby port city and naval base of Toulon. We caught up with him to discuss returning to his roots in Provence and to find out what makes this idyllic island so well-suited to fine wine production. “I was born in Toulon. My father was a naval officer, so we used to travel a lot, living in different countries, but we would always return to Provence. Porquerolles is a very special place to me as we would spend time sailing there with friends and family.  Probably my strongest memory of when we were kids is sailing with my family and spending nights “au mouillage” on the Notre Dame beach. My brother and I would wake up early in the morning with a mission:  buying some bread in the village. We would spend the whole morning walking on the back trails, discovering the island and its incredible nature, guided by the eucalyptus perfume to finally reach the Place d’Armes, where the bakery is. By the time we were back on the boat, it was lunchtime.  As a child, Porquerolles was the epitome of nature and freedom.   My travels and the great outdoors are part of my DNA, that’s why I decided to study Agronomy and then Oenology in Montpellier. Winemaking took me to Champagne, South America, Bordeaux... Today, coming back to Porquerolles is like coming back to my roots - and making wine there is the icing on the cake.”  The history of Domaine de l’Ile The island of Porquerolles is a place of idyllic beauty with a fascinating history. First inhabited in 1820, the island was largely destroyed by a devastating fire at the end of the 19th Century, before being auctioned off in 1910. The island was acquired in its entirety by François Joseph Fournier, who as Nicolas explains, “was a man of many lives”; the son of a poor Belgian boatman, he became fabulously rich thanks to his discovery of the largest seam of gold ever found in Mexico. Fournier was the sole bidder in the auction of the island, which was a wedding gift to his wife, Sylvia. They actually established vines on the island almost immediately, planting vineyards on different strategic plains of Porquerolles. Under their visionary and watchful eye, the island reclaimed its agricultural character. It sprung back to life; an oasis in the middle of the Mediterranean. The vines populated its gentle slopes and fuelled the chatter in the village. The vineyards were in fact some of the first in the region to be classified as Côtes de Provence, due to the quality of the wine produced. In 1957, the island was divided up between the four Fournier daughters; each one received a plain. Progressively, three of them sold their inheritance to the French government, but Lélia Le Ber (neé Fournier), fought to keep her land and replanted vines on the Brégançonnet plain.  She passed on the estate to her son, Sébastien Le Ber, who managed the family business before entrusting the site to CHANEL, opening a new chapter in the story of Domaine de l’Ile.  From the Classed Growths of Margaux and Saint-Emilion to Provence Asked why CHANEL decided to invest in a new winery, and in particular in Domaine de l’Ile, Nicolas explains that it was "love at first sight" with this island vineyard in the heart of Provence, its special terroir, the Le Ber’s philosophy of Porquerolles and their unique history. “As we took over Domaine de l’Ile in early 2019, Pierre Etcheberry joined the estate’s team as Vineyard Manager. Pierre has an Agricultural Engineering degree and spent three years at Château La Fleur in Bordeaux as Assistant Technical Director.  At Domaine de l’Ile he is now in charge of the winemaking, vine growing and day-to-day management. Pierre stays in touch closely with the teams in Bordeaux, and they visit regularly whenever their support is needed.”   In the vineyard The individual parcels of Domaine de l’Ile were delimited and planted in 1957. While Porquerolles shares similarities with Provençal rosé in terms of the soils and climate, it remains unique because of the insularity specificities, explains Nicolas. “Being an island, Porquerolles has a unique ecosystem: vines grow on orogenic schist bedrock and clay soils, vines are surrounded by wild and protected fragrant flora, under a warm Mediterranean climate and are exposed to fresh saline winds.  The unique environment of the vineyard has a real influence on Porquerolles wines. Surrounded by the sea, growing on an exceptional soil under seasonal high temperatures and exposed to salty winds, the Porquerolles vines produce wines of character with a fresh tension and saline notes. Pine trees, eucalyptus and wild flowers frame our parcels, this very rich naturally odorous environment finds its illustration in our wines, in delicate flavours.” “The blend of grapes in the Domaine de l’Ile rosé is made up of Grenache, Mouvèdre, Cinsault, Syrah and Tibouren.” For Nicolas, these traditional Mediterranean grape varieties express all the uniqueness and insularity of the Domaine de l’Ile wines. “On dry and stony soils, enduring the wind, gorged with sun, the Grenache brings generosity to the blend, a reminder of the sweetness of local life. The Mourvèdre likes to watch the sea. It affirms all its character here and adds its grains of spice. A window opens on the pine forest. The white flesh fruits of Cinsault combine with the freshness and crispness of Syrah. As for the Tibouren, authentic Provençal, it is at home here, deploying its nobility on these shale soils.”  Life on Porquerolles The idyllic picture postcards of the island don’t lie; Porquerolles is exceptionally beautiful. Such landscapes are due to its protection, conservation and very real isolation. During summer, thousands of visitors discover the good life of Porquerolles, exploring the local restaurants, community and the beautiful coastline by walking, biking or sailing. But once the high tourist season ends, nature takes back its rights. Spring is sweet but autumn and winter can be difficult. To live on Porquerolles is a real philosophy of life, a desire of being out of “the continent”, a place where time flows slowly.  Finally, we asked Nicolas’ thoughts on rosé wine more generally and where and when best to enjoy it. “Rosé is the traditional wine of Provence, a region that has nothing left to prove. It designates wines of incredible diversity that can be found on the most prestigious restaurant wine lists all around the world.  From the ones to be enjoyed between friends over a simple supper, to some brilliant and complex expressions of terroir paired with more elaborate menus. For me, when spring begins to bloom, and temperatures rise, opening a bottle of a rosé wine offers you a promise, a foretaste of the coming summer. And in autumn, or even in winter, it will put a smile on your face, as an opportunity to remember the joy and pleasure of the long-gone summertime. One name that kept cropping up when speaking to winemakers about wine and cheese pairing was Bernard Antony, a man who now supplies 20 of the world’s 3* Michelin chefs as well as working alongside many of the world’s top winemakers matching cheese and wine at events for Guigal, Angelus, Humbrecht and many more.   We caught up with Jean Francois Antony (Bernard's son and protege) to find out more about Affinage (the ageing of cheese) and their perfect cheese and wine pairings. 45 years at the service of taste Bernard Antony is one of the world’s great cheese makers. Strictly speaking, his mastery
is in affinage, that is finishing and ageing cheeses. From humble beginnings working as a travelling grocer in Alsace, in 45 years he has gone on to become one of the most recognised men in the world of fine cheese.  Bernard Antony was the protegé of the late great Maitre Pierre Androucet – known as “the Pope of Cheese”. Bernard says of Pierre: "To me, he was like a father. He was the man who created me, who taught us everything, to my wife and me. He didn't like me to say it because he wanted to give me all the credit for my success”.  Following on from Androucet’s advice and support, Bernard set up his own cheese ageing cellars in the early eighties in the southern Alsace village of Vieux-Ferrette. The ageing cellars are made up of seven different chambers all at different humidity and temperature levels – ideal for raising and ageing various different styles of cheese. Only when the cheeses are deemed ready and at perfect ripening are they released to the markets and delivered to restaurants. Ageing of cheeses can range from just a few months for the fresher goat’s cheeses to several years for some hard cheeses. Speaking with Jean Francois Antony, Bernard’s son, who works alongside his father, running the day-to-day operations of the cellars, he identifies that the skills in good affinage revolve around a number of key elements. First of all, “raw (unpasteurized milk) is essential if one is to speak of cheese with authenticity…taking into account the breed of animal, the animal's diet, the talent of the cheesemaker and then of course the controlled process of ripening are also key”. The cheeses arrive at the cellars already halfway through ripening and their ageing cellars go into action to give them the final touch. They provide the perfect environment and temperature for ageing as well as the most important element in the Bernard Antony cheese cellars, the natural yeasts that live there helping the cheese mature distinctly and in the best way possible. website. They often pair the cheeses with fine wine so we thought who better to ask for advice on the ultimate cheese and wine pairings than the man himself.  Below is the Bernard and Jean Francois Antony’s essential guide to food and wine matching, split up between the different styles of cheese, with additional advice passed down from Pierre Androucet.  The Floury crust family of cheeses Camembert        Brie de Meux (un peu sale)         St Marcellin and St Marcellin (runny)     Petit Mosellan         Coulommiers         Chaource
 The classic pairing would be Champagne (Blanc de Blancs, Aged and even Rose Champagne) however Bernard Antony advises that you remove the crust as it can make the wine appear more harsh. The bubbles work brilliantly in refreshing the palate from these rich cheeses and the yeast flavours from the Champagne also work really well. Avoid tannic reds with these cheeses. One of Bernard's favourite matches include a Gevrey Chambertin 2012 from Domaine Denis Mortet with the St Marcellin. He states a white wine with both gentle oxidation and good acidity works particularly well with Petit Mosella (Saint Peray from
Domaine Tunnel or Alain Voge) or a fruity red wine with well-coated tannins such as a Beaujolais Cru wines with the Chaource and Colombier fermier. The Washed Crust family of cheeses Epoisses       Langres         Livarot     Munster  Maroilles    Vacherin         Pont-l’Eveque According to Androuet: robust and virile wines, with sap and generous bouquet work best with these potent washed crust cheeses. They require “solar wines“ which can harness the power of washed crusts. Gewurtztraminer Grand Cru from Albert Mann, Chambolle Musigny from Liger Belair would both work well. Pinot Noir from Zind Humbrecht, Bollinger 2008 Grande Annee also a particular favourites with Bernard Antony. The pressed crust family of cheeses Comte     Emmenthal        Beaufort         Gruyere Suisse According to Androuet the matches depend on the evolution of the cheese. Dry white or red wines with bouquet work well, red wine brings a balancing touch of bitterness. These cheeses flatter any red wine by erasing astringency and promoting fruit therefore making White or Red Burgundy a good match. With more ageing of the cheese, wines from the greater South-West, the Rhône Valley and Languedoc Roussillon become better matches. Other personal
favourites from Bernard Antony include Vernaccia di San Gimignano (Italy) White
wines from Valais (Switzerland), and Savignin wines from the Jura. The pressed (uncooked) crust family of cheeses Morbier   Tomme de Savoie fermiere       Mimolette demi étuvé         Salers     Roblochon  Sainte Nectaire Pairing again depends on the maturity of the cheese. The older the cheese the richer the wine. Chateau Latour 2001 is Bernard’s match with Morbier. Saint Joseph Pierre Gonon 2013 works well with Reblochon and Chateau Canon La Gaffeliere Grand Cru Classe St Emilion 2008 works well with Saint Nectaire. The family of blue cheeses Bleu d’Auvergne     Roquefort        Fourme d’Ambert      Blue de Gex          Stilton    Gorgonzola These are best paired with sweeter fruited wine or sweet wines. Avoid red wines as the mould changes the structure, the aromas and brings out the bitterness. Top picks are Rivesaltes Vins Doux Naturels, Pacharenc du Vic Bilh or aged Sauternes even red Vins Doux Naturels such as Maury, Banyuls work well with blue cheeses. The family of Goat and sheep cheeses Ossau-iraty         Brebis cremeux et parfume Brebis Corse     Chevre Frais    Chevre Moelleux et onctueux   Chevre Affiné. Vieux et sec   St Maure de Touraine Banon de Provence Chevrotin des Aravis With this family of cheeses the wine must tame the acidity of milk. The wine must work with the texture of the fat and complexity of the flavours. Androuet confirms the well-known phrase – match local wines with cheese of the same origin, particularly very dry and fruity whites. Dry white wines from the Loire – include the smoky Pouilly Fume, Sancerre, Menetou-Salon, Quincy and Reuilly work well with the goats cheeses from the region. From Burgundy, try the lighter Aligoté, Saint-Véran, Macon villages and from the Alpine pastures the white wines of Savoie or lighter reds of the Loire – Bourgueil and Chinon. Bernard Antony’s particular favourites with these cheeses include wines closer to home including Riesling Vendange Tardive 2007 from Barmes Buecher, 2002 Brundlmayer Gruner Veltliner Kaferberg 2002 and Pinot Gris Grand Cru Osterberg 2016, Domaine Agape. If you haven’t already heard about Baettig, we urge you to read some of our previous coverage of this rising-star producer. Conceived by Francisco Baettig (the winemaker behind Errázuriz, Seña and Chadwick) and Carlos de Carlos (previously Commercial Director at Errázuriz, he now works for Paul Hobbs) over dinner in London in 2010, Baettig is one of Chile’s most exciting projects – crafting site-driven wines from Malleco and the Maule.  The duo spent years seeking out the right site – realising that to find vineyards that met their standards, they’d have to plant them themselves. In 2013 they put their first vines in the ground, planting Burgundy clones of Chardonnay and Pinot Noir in Traiguén, in the Malleco province. Both Francisco and Carlos had family ties to the region – making it seem like fate.  The site, however, wasn’t chosen purely for their emotional connection to the area, but with an eye on sustainability and quality. This is one of Chile’s southernmost wine regions, with red clay, clay loam and volcanic soils, cool conditions, 25% less sunshine than the Central Valley and – most importantly – plentiful rainfall, allowing them to dry-farm the vines and produce restrained, Burgundy-inspired Pinot Noir and Chardonnay with moderate alcohol levels, bright acidity and vibrant fruit. Francisco is clear that the quality of their vine material has been key to their success – as it is only relatively recently that Chile had access to high-quality, clean Burgundy clones.  While Baettig started with Chardonnay and Pinot Noir, the producer has since added Cabernet Sauvignon from old vines in the Maule to the range, unsurprising given Francisco made his name making Chile’s icon wines.  Fourteen years after they first imagined their joint project, we welcomed Francisco to London to look back at the Baettig journey so far – tasting through a vertical and exploring how the project has developed and evolved.  About the Baettig range  There are currently two tiers to the Baettig range, with the idea that a top tier, single-vineyard offering that will be their “Grand Cru” of sorts, is likely to be added in the future. The current range comprises:  Vino de Viñedo: these wines are a vineyard selection designed for earlier drinking, effectively a “village” equivalent. The Chardonnay and Pinot Noir at this level go by the name of Los Parientes (“the relatives”, a reference to the closeness of the different parcels), while the Cabernet Sauvignon is called Los Compadres (“close friends” – a tribute to the growers with whom they’re working). Los Compadres is sourced from various dry-farmed, cool plots in the more coastal areas of the Maule, with the vines all over 30 years in age and some up to 150 years old, creating lively, juicy and intense expressions of Cabernet Sauvignon. The first vintage of the Los Parientes Pinot Noir and Chardonnay was 2019, while the first vintage of the Los Compadres was 2021. These may be the entry point to the Baettig range, and they are made to drink on release, but they also – like good village Burgundy – have capacity to evolve and will only benefit from an extra year or two in bottle.  Selección de Parcelas: their “Premier Cru” equivalent range, made in smaller volumes from specific parcels and built for longer ageing. These wines see a higher proportion of new oak and longer ageing prior to release. The Chardonnay and Pinot Noir are labelled under the Los Primos name (“the cousins”), while the Cabernet Sauvignon is named Los Padrinos (“the godparents”). The Pinot Noir comes from their El Primo, Chuir, and La Cuñada parcels, chosen for their elegance, structure and ageing potential; while the Chardonnay comes from the Triángulo and Llaima parcels, creating mineral, vertical wines that are all about tension. The first Los Primos Chardonnay and Pinot Noir were made in 2016, with the first wide release from 2017, and Los Padrinos was first made in 2022. Volumes of these wines are tiny, with just 300 to 350 cases made of each of the Selección de Parcelas.  About the winemaking The emphasis with Baettig is firmly on expressing site – and as such the winemaking is very “light touch”, allowing the sense of place to shine through in the wines. The style has evolved, with the use of oak reduced a little from the earliest vintages, generally shifting toward less time in barrel, larger casks and smaller portions of new wood. The fruit is all hand-picked and fermented with indigenous yeasts. The cooler sites, combined with the way Baettig farms and when they harvest, produces fruit with naturally low pH, allowing them to use minimal amounts of sulphur (although with sufficient doses to allow the wines to age and be shipped around the world).  For the Chardonnay, it is all whole-cluster pressed and cold-settled, prior to native ferment in old French barriques. Malolactic fermentation on the Chardonnay is left to happen or not, according to the vintage conditions (with often around a third going through). The élevage for all the wines varies according to the vintage, but the Los Parientes Chardonnay normally spends eight to 10 months in cask, with up to 15% new oak, while the Los Primos spends between 10-15 months in barrel with up to 35% new oak. The new oak for the Chardonnay is all larger 300- and 400-litre casks. A portion of the Pinot Noir is whole-bunch fermented (typically 10-20%), with the rest de-stemmed – with fermentation all in used oak. The Los Parientes stays in barrel for around eight to 10 months, with up to 15% new oak; for the Los Primos, it is 15-16 months, with up to 40% new wood – with the new oak all 300-litre barrels.  For the Cabernet Sauvignon, the fruit is all de-stemmed. Fermentation temperatures are low at around 24-28˚C, with maceration for a maximum 20 days, given the natural concentration and structure of the fruit. The Los Compadres is aged for 10 months in French oak (20% new), while the Los Padrinos spends 15 months in 65% new oak (including around a third in larger 300-litre barrels).  Tasting through the range, there is a clear stamp of style – a flinty restraint, with the emphasis on crunchy fruit and minerality, vibrant acidity, moderate alcohols. While some of the earlier vintages might have offered more overt oak in their youth, this has integrated with time in bottle – and the wines offer at most a subtle spicy complexity. They are beautifully judged, pure expressions of Traiguén.   About the vintages 2022: Generally speaking, 2022 was an outstanding vintage. In Malleco, the year was cooler than average. Winter was relatively dry, with little rain in spring and cool conditions including frost in September and October, leading to particularly low yields. Weather warmed up in February before cooling again in March and April, which also saw quite a lot of rain. This resulted in a late harvest of a small crop of fruit, with great intensity, concentration and excellent tension – with high acidity levels retained thanks to the cooler conditions. In the Maule, the season was moderately warm, producing a more generous yield than further south but similarly high quality. The weather here was warmer in December and temperatures close to average from January through to March. Moderate rainfall in March and April refreshed the season and eased the final stage of ripening, with the fruit offering good acidity, colour and aromatic intensity. The 2022s offer an up-front richness of fruit, with good backbone of acidity – in some ways a combination of 2020 and 2021.  2021: The 2021 vintage was a cooler year – producing wines where the emphasis was on elegance, finesse and tension, perfect for the Baettig style. The winter in Malleco was rainy, with 650mm of water over June and July, laying the groundwork for a good budbreak. Spring was dry and reasonably warm, although a late frost in September reduced yields. Summer was cool, with some rain over December and January (90 mm in total across the two months), allowing the fruit to ripen slowly ahead of a late harvest, developing great aromatic complexity and preserving the acidity levels. These should age particularly well.  2020: This was a warmer year versus 2021, producing richer-styled wines. There was plenty of rain in June and July, however this dried up in August, with little rain for the rest of the growing season. Temperatures rose and the hot, dry conditions allowed the grapes to ripen easily, although an early harvest was key to preserve freshness and tension to complement their natural intensity and generosity. Offering a little more flesh, particularly at this more youthful stage, versus the 2021s, the 2020s are juicy and open, yet with everything in balance. The one we’d pick for drinking now, although there is certainly no rush here.  2016: A rainy winter led on to a cool and rainy spring, with later-than-normal flowering and fruit set and a small crop. Summer was dry and largely warm, and the fruit was harvested early, producing wines that combine refreshing acidity and good density of fruit. The 2016 Los Primos Pinot Noir and Chardonnay were never released, the tiny volumes of Baettig’s first crop, so it was a real treat to taste these special bottles, offering a glimpse of the wines’ ageing potential – with both drinking beautifully.  The vertical: tasting Baettig Chardonnay 2022 Vino de Viñedo Los Parientes Chardonnay: This was really showing well, even though it has only just been released. It’s tight, full of energy, with a punch of minerality, bright taut citrus and crisp green apple. It’s lean and sleek, but with a fleshy, juiciness that makes it hard to resist now. A wine that’s singing. Aged for eight months in 15% new oak. Production: 7,254 bottles  2021 Vino de Viñedo Los Parientes Chardonnay: There’s a lick of lime curd on the nose here, with tightly wound greengage emerging with air. It’s pure and linear, driven with its intense, stony purity, but there’s a pleasing fatness to the fruit behind, with a mouth-wateringly juicy finish and long, saline tang to the finish. Aged for 10 months in only used oak. Production: 16,909 bottles  2020 Vino de Viñedo Los Parientes Chardonnay: The warmth of the 2020 vintage, combined with the cool climate of Traiguén and Baettig’s trademark flinty, lean style, has created a gorgeous Los Parientes in 2020. Now with a few years in bottle, it’s drinking beautifully. The wine remains taut – dominated by vibrant citrus that drives through its core, and the bright acidity brings incredible tension. Yet, there’s also a softness to the wine, with a suppleness to the palate and its ample riper stone fruit that flawlessly complements the mouthwatering zest of the long finish. Punches well above its weight. Aged for 10 months in 10% new oak. Production: 15,240 bottles  2021 Selección de Parcelas Los Primos Chardonnay: The 2021 Los Primos is incredibly impressive – and the step up from Los Parientes clear. There’s a creamy, lactic note on the nose, working alongside lemon curd, honeysuckle and bright citrus and green fruit. There’s a lushness to the fruit, with gorgeous length and energy, outstanding tension and an everlasting finish, with stony, saline minerality that lingers long after the wine is gone. You can drink this now, but it will be even better if you can give it a couple of years in bottle. Aged for 15 months in 35% new oak. Production: 3,480 bottles  2020 Selección de Parcelas Los Primos Chardonnay: Much more open now than the 2021, the 2020 Los Primos is rich and concentrated, with riper white peach fruit and honeyed complexity. There’s a softness to the wine, reminiscent of the suppleness of the 2020 Los Parientes, but additional depth here. It’s round and enticing, still with a backbone of taut acidity, and a long finish with just a touch of oak spice. Hard to resist now, drink this over the next five years. Aged for 15 months in 38% new oak. Production: 4,069 bottles  2016 Selección de Parcelas Los Primos Chardonnay: The first vintage of Selección de Parcelas, with the very first fruit from the Baettig vines, and never released. The 2016 is showing some beautiful development, with honey, sweeter plump peach and nutty complexity. Cooked apple and dried mango sit alongside a zing of limey citrus, with a line of bright acidity that runs through the palate and brings lovely energy. Gorgeous. Aged for 16 months in only used oak. Production: 2,160 bottles  Pinot Noir  2022 Vino de Viñedo Los Parientes Pinot Noir: There is 10% whole-bunch in this vintage, and combined with the youth of the wine, it is shining on the nose – with overt pepper spice, floral perfume and stemmy complexity that makes it aromatically enticing. The palate is pure and bright, with juicy but concentrated mulberry and black cherry, with a saline edge and fresh, chalky purity. Incredibly moreish. Aged for eight months in 14% new oak. Production: 13,205 bottles 2021 Vino de Viñedo Los Parientes Pinot Noir: For this cooler vintage, Francisco opted to reduce the portion of whole-bunch fermentation a little. The wine is bright, crunchy and pure, with a lovely restraint from the extended growing season. Floral tones (rose, violet) sit alongside crunchy red fruit, leading to a palate of effortless purity and length. Vibrant, mouth-wateringly fresh with an earthy, saline finish and very fine tannins. Aged for 10 months in 10% new oak. Production: 13,400 bottles  2020 Vino de Viñedo Los Parientes Pinot Noir: This is in a lovely spot right now – sharing the supple texture of its Chardonnay sibling. It is beautifully elegant, with tealeaf aromatics, gentle spice and crunchy berry fruit. Structurally, it is fine-boned – the fine, chalky tannins adding a graceful outline to the mouth-watering fruit. Gloriously fresh, the finish is saline with the slightest hint of smoke. Dangerously drinkable and incredible value. Aged for 10 months in 10% new oak. Production: 15,180 bottles  2021 Selección de Parcelas Los Primos Pinot Noir: This is such a baby at the moment – and clearly needs time to reveal its full potential. It’s much more savoury than the 2020. There’s some gunflint reduction, but beneath that smoky intensity and an earthiness, alongside the subtle florals, bright redcurrant and raspberry. There’s more grip to the tannin, a tightness to the fruit, but the structure and length offer great promise. A wine of tension. Made with 20% whole-bunch fermentation, aged for 16 months in 34% new oak. Production: 3,409 bottles 2020 Selección de Parcelas Los Primos Pinot Noir: It’s immediately evident that this is Baettig’s Premier Cru – with notably more concentration and complexity. The warmer 2020 vintage produced a vibrant and intense wine, with vivid, juicy red cherry and raspberry fruit, complemented by more delicate floral notes. Alongside the impressive weight of fruit, there’s a pomegranate freshness and mineral line, with the slightest hint of smoke and spice, and a framework of superfine, supple tannins. Made with 20% whole-bunch fermentation, aged for 15 months in 38% new oak. Production: 4,102 bottles 2016 Selección de Parcelas Los Primos Pinot Noir: This was, for me, the star of the tasting. The nose was effortlessly complex, shifting between soft florals, spice, violets and crunchy red fruit, with a dried-earth note too. There was a glorious suppleness here, silken and flowing across the palate, with a fine, chalky texture to the tannin, juicy cherry and a subtle, savoury finish. Beautiful. Everything was destemmed in this vintage and the wine aged exclusively in used oak. Production: 1,440 bottles  Cabernet Sauvignon  2022 Vino de Viñedo Los Compadres Cabernet Sauvignon: This is a glorious expression of bright, modern Cabernet – pure and pristine with crunchy red and black fruit, vivid pencil shavings and an herbaceous green-pepper edge. There’s such intensity to the palate, with its tart red berry fruit, mouth-wateringly fresh and juicy. The abundant fruit is framed by graphite tannins, leading on to a spicy finish. Aged in 20% new French oak for 10 months. Production: 17,000 bottles  2022 Selección de Parcelas Los Padrinos Cabernet Sauvignon: The first vintage of Los Padrinos is only offering more since we first tasted it in February. It’s strikingly different to Los Compadres – a much darker, spicier and smokier expression. The two wines share their tension, with firm acidity that forms the backbone of this wine and drives the long finish, as well as gloriously crunchy and fresh fruit. The nose is savoury and brooding at first, but sweeter plum and cassis fruit lurks behind, while there’s a tart, bright bite to the palate. It still feels compact at this youthful stage, the power and gum-drying tannins needing time to unfurl. Aged for 15 months in 65% new French oak. Juliette Couderc didn’t have the easiest start at Ch. l’Evangile. She arrived in September 2020, in the heart of the pandemic, and just in time for the 2021 growing season – a vintage that saw incredible mildew pressure and a return to the chaptalisation that was, pre-climate change, normal for the region.  But the 31-year-old isn’t one to shy away from a battle. The Sunday before I spoke to her, she’d broken a finger playing rugby – something about which she was particularly blasé (it was “very, very blue”, she told me). Indeed, she used to play fullback for Narbonne’s team in the Fédérale 1 league, and now represents the local Libourne squad. In a wine region that is dominated by the slick and suited, she’s a breath of fresh air.  Born in the Charente, Couderc studied winemaking in Bordeaux and Montpellier before travelling to opposite ends of the earth – Chile and then New Zealand – to learn her craft. But L’Evangile – one of Pomerol’s most respected names – is a far cry from the wineries she started in. Both Escudo Rojo (a Mouton Rothschild project) and Wairau River in Marlborough were big operations, giving her exposure to larger-scale winemaking. She returned to France and worked her way through Burgundy and the Rhône before settling in the Languedoc for several years, focusing on viticulture. It was here that she first met Olivier Trégoat, who was then Technical Director of Domaines Barons de Rothschild’s projects in Chile, China and the Languedoc. In 2017, he recruited her – then aged just 26 – to head up the vineyards for Long Dai, their winery in Shandong Province. She’d planned to only stay a year, but then she was made Technical Director, managing work in both the vineyards and winery. It was Covid’s arrival, along with China’s strict lockdowns, that saw her return home – and Olivier Trégoat, who had just taken the reins for L’Evangile and Rieussec gave the talented winemaker her next opportunity, as Chief Operating Officer at Ch. l’Evangile.  For the rest of the team – including a Cellar Master that had been there 20 years – she may not have been the obvious choice. Despite growing up just an hour away, the 29-year-old had never worked in Bordeaux, let alone one of the region’s top estates – one that is sibling to First Growth Ch. Lafite Rothschild.  “At the beginning, it was pretty stressful for me,” she confesses, “because I’m pretty young in comparison to the rest of the team.” But it didn’t take long for them to realise why she’d been chosen. She’s not the sort to sit behind a desk. She was instantly out in the vineyards and winery talking to the team, digging into the DNA of the estate – and gently starting to question why they did things this way and that.  Baron Eric de Rothschild bought shares in Ch. l’Evangile in 1990, taking full ownership in 1998. Significant investment and change followed, with a new winery completed in 2004, extensive replanting and an additional seven hectares bought to complement the original 15. Bearing in mind the Rothschild family has owned Lafite since 1868, L’Evangile is just a baby – but that hasn’t held them back. Robert Parker gave the 2009 vintage 100 points – and the estate has been a cult address ever since.  L'Evangile is big by Pomerol standards, with 22 hectares spread over various sites. Between four and five hectares sit on the appellation’s famous blue clay (shared by Pétrus), with the rest on sandy clay and gravel soils. It’s the Merlot from that blue clay that contributes the creaminess that is key to the property’s fingerprint – along with soft yet dense tannins. Couderc is looking to make sure that that fingerprint shines through in the wines, even with climate change.  Her appointment is part of an ongoing shift at Domaines Barons de Rothschild. Since Saskia de Rothschild took over in 2018, she’s been pushing for a new vision, putting Jean-Sébastien Philippe in place as her right-hand man, and a flurry of fresh faces throughout the company, with the hope to move from “aristocratic” to “up-to-date” – and certainly more approachable, breaking the fourth wall to talk to consumers. This is the new generation taking over at the highest level. The broader vision is enormous, with the cornerstone establishing an agricultural ecosystem. They are reintroducing corridors of vegetation, establishing ponds and natural waterways, and planting cover crops to improve biodiversity and soil health. They’re re-structuring the vineyards, breaking up plots into smaller parcels, reducing vineyard density, re-orienting vines and adjusting the trellising, working on massal selections and trial plantings of different varieties, as well as moving towards biodynamics – all with extensive trials and studies to ensure changes are for the long-term. Indeed L’Evangile has become a “laboratory” of sorts for the family, with many of these changes introduced at the smaller estate before they are implemented at Lafite. At L’Evangile, the aim has been to pull back – unmasking the terroir. Couderc is experimenting with ways to manage extremes – both drought conditions (as experienced in 2022) and mildew (as in 2021). One key from her point of view is managing the vineyard to retain freshness in the wines – reducing the canopy size and using cover crops, as well as farming both organically (certified since 2016) and biodynamically (certified since 2018).   When she first arrived, she plotted areas to harvest based on how the fruit tasted, planting flags to mark off areas, often stopping partway along a row. Although having done it “blind”, the final map matched up with the different soil types almost exactly. The differences between these parcels are particularly accentuated in hot years, with as much as a week between harvest dates for plots. And, as Couderc tells me, while once they might have waited a little, with warmer September days, finding exactly the right moment to pick has never been so important.   With each parcel harvested separately, it can be treated differently, Couderc explains – pushing the extraction of Merlot on the blue clay, for example, but being more careful for gravel-dominant sections which can bring overly “straight” tannins.  She’s also planting more Cabernet Franc, having seen the success of the variety on sandy plots. Naturally more resistant to mildew and bringing welcome freshness, she feels it will be key for the future – and aims to have it represent around 30% of the vineyards eventually (up from around 20% currently).   In the winery, élevage has been the focus – tweaking to find the right balance. She’s worked closely with Trégoat, Saskia de Rothschild and the cooper Taransaud to find the right oak profile, which has then been translated across three additional coopers (including the Rothschilds’ in-house operation) for barriques, as well as starting to use both foudres and amphorae. For Couderc, amphorae are tricky – with a risk of crude tannins, but the ability to emphasise tension and freshness which she likes, anticipating they will represent a small but important 8-15% of the final blend each vintage. Foudres were trialled on the second wine (Blason de l’Evangile) first, but will now also be used for the Grand Vin. With the natural generosity of Merlot, Couderc sees her job as “to keep the austerity, the freshness” of the wine – while also preserving the innate density of their terroir.  Tasting through a flight of vintages, it’s easy to see the transformation that is underway here. The 2015, for example, is one of the last “old-style” vintages, only enhanced by the generosity of the year. The wine is exotic, rich and ripe – a voluptuous, decadent wine that envelops you. By contrast, the 2019 and 2020 display a crunch and vibrancy, while not losing any of the property’s signature density. The 2022, meanwhile, manages to take the generosity of the year and contain it – with restrained precision and perfume, smooth but gravelly tannins and a seductively lighweight feel.  It's clear already that Couderc is set to be a star – and L’Evangile will only rise higher with her.   Browse all Ch. l’Evangile listings or read more about Bordeaux

 When the UK entered the first coronavirus lockdown in March 2020, there was a sense that the end of long, thoughtful, funny and serious conversations was dangerously close. Over a Zoom call, sat at our respective kitchen tables, F+R’s Patrick O’Connor, creative director Alan Aboud and myself, a journalist and editor, started to wonder if we could work together in some way to explore topics usually explored at the communal tables that were sadly empty.  The first project we worked on together marked the 90th birthday of iconic Lebanese winemaker Chateau Musar and the simultaneous publishing of a book celebrating the winery by Académie du Vin Library. Working together with music consultant Leo Walton, we conceived a package of content for FINE+RARE’s website to coincide with F+R’s exclusive release of various mixed cases of Chateau Musar vintages going back to the 1960s.  As part of the content package, I wrote three articles for the F+R website, and worked with Leo to create four Spotify playlists featuring Lebanese music from the relevant decades of the Musar vintages being released: the 1960s, 1970s, 2000s and 2010s. Leo and I also suggested the potential to add more cultural context to both the wine and our selection of music by producing a podcast in which we interviewed a Lebanese musician about musical culture and heritage in the region. We explored various ideas before interviewing two members of the Beirut Groove Collective – a group of DJs with a reputation for unearthing records from the 1960s, 70s and 80s and giving them a new audience. We asked the DJs to give us the low down on their legendary all-night vinyl-only parties in Lebanon’s capital, and about Beirut’s surprisingly vibrant music scene throughout the Civil War (1975-1990). We also asked Ernesto about his new reissue project with BBE Records and the first release in the series: Ihsan Al-Munzer’s 1979 synth-led Belly Dance Disco album.  This idea – of creating original editorial content that proactively ventured into topics in and adjacent to the worlds of fine wine and spirits in order to enrich the FINE+RARE experience – immediately appealed to all involved. Between us, we started to flesh out the idea for a new content platform that could explore and commission stories that took advantage of our combined knowledge, skillsets and networks, plus FINE+RARE’s access to the best producers and most interesting personalities driving quality in the worlds of fine wine and exceptional spirits.  While the concept was always for FONDATA to be a multi-media platform whereby we would produce content in whatever medium seemed most relevant to a given subject matter – podcast, video, blog or print – we focused our initial efforts on producing a large-format, print journal. It would provide a brilliant canvas for us to commission the best writers, photographers and illustrators, and it would also be the perfect format to function as a physical mission statement, something we could send to F+R customers. Doing this in 2020, when we were in lockdown, seemed like a great way to maintain connection and morale in an unprecedented moment in living memory. We formed a small ‘bubble’ to sit, appropriately distanced, in Patrick’s back garden in Hackney to brainstorm the idea and start mapping out what stories we could potentially commission for our first FONDATA journal. For the inaugural issue, one story in particular was pivotal to realising our ambition: commissioning American essayist, author and regular contributor to The New Yorker, Adam Gopnik to write a piece for us. In his book, Paris to the Moon (Quercus, 2000), Gopnik likens Jean-Philippe Derenne’s L’Amateur de Cuisine book (Éditions Stock, 1996) to “a medieval almanac, offering a timeless, secure, benevolent universe of food.” In our initial conversations, we’d identified Wine Grapes, A complete guide to 1,368 vine varieties, including their origins and flavours (Allen Lane, 2012) – the weighty 1,240-page tome authored by Jancis Robinson MW, Julia Harding MW and Dr José Vouillamoz – as a book we’d love to celebrate in some way. We wondered if Gopnik would be as enamoured with the book as much as Derenne’s and if he’d write something for us about it and its value to wine lovers and gastronomes alike. We duly sent him a copy of Wine Grapes (clothbound and slipcased) and a note introducing ourselves and outlining FONDATA’s ambition. He loved the book and the idea for the piece, so we contacted Jancis to ask if she would be happy to be interviewed by Adam. It turned out they were both fans of each other’s work. Our first feature was underway. But how would we present the piece? What would FONDATA look like? Alan asked Jancis if she would agree to be our cover star for our first issue. When she agreed, we had to work out how to bring the inaugural cover to life. “Gavin Bond popped into my head,” Alan, recalls, of the task at hand, “as he has become the ‘go-to’ photographer for celebrity portraits, especially in the film and fashion business. I felt Jancis deserved that status and reverence. Of course, the wine world reveres her, but no wine journal seems to be able to look beyond a shoot involving wine bottles and grapes.”   With Gavin Bond on board, the next step was to think about the shoot itself. “We enlisted the help of a wonderful floral design company, Studio Lupine,” Alan explains of his art direction. “We briefed Raggie Furuseth, the designer, to create a wildly original space in which Jancis could be photographed. The resulting portrait is a stunning and sensitive study of one of the world’s most learned and charming wine writers in her prime.” Another crucial part of our first issue planning was around design concepting and setting out our production values. As a kind of guiding light, Alan and I had adopted a mantra: “This isn’t a magazine”, as FONDATA would have none of the concerns of a regular magazine. We didn’t want to print on flimsy paper. We didn’t want to create something predictable or ephemeral, but rather an object that felt it had more permanence, more lasting value. FONDATA, we were all very clear, would strive from the outset to be a joyous, opulent celebration of cerebral, long-form editorial content.  Alan began working with his studio designer, Haley Austin, exploring different oversized formats, experimenting with page layouts and type treatments to realise his vision for how FONDATA would look. At the same time, he commissioned Rick Banks of Foundry 37 to create a bespoke logotype for FONDATA’s masthead based on his F37 Caslon typeface. We also adopted F37 as our core typeface for body copy, and to use at large scale for feature headlines and beautiful, full-page pull quotes.  In terms of our editorial direction, we were keen from the offset to commission editorial that explored evergreen (and ever-fascinating) topics. What does it mean to collect? How has the pandemic affected our lifestyles, and how much of that is positive? How do ideas germinate, and how does genius emerge? How important is history and tradition to innovation and revolution? What are the most significant drivers and the biggest hurdles for excellence? Once the Gopnik feature was in the proverbial bag, we set to work commissioning an issue full of features that we hoped would appeal to a wine-loving audience but not feel like we were trying to sell them something.  We approached Jancis Robinson’s co-authors of Wine Grapes, Julia Harding MW and Dr José Vouillamoz, to call out five relatively obscure grape varieties from around the world to champion them and the producers making remarkable wines with them. We also commissioned botanical artist Sarah Jane Humphrey to illustrate each variety.  We asked the former director of London’s Design Museum, Deyan Sudjic OBE, to contemplate the history of social spaces. To accompany his feature, we asked him to approach a number of highly regarded architects and interior designers to illustrate their visions of social spaces of the near future. As a result, we soon added John Pawson, AB Rogers, Paloma Strelitz, and Jon Marshall to our list of contributors. We tasked journalist and author Dylan Jones OBE with critiquing wine’s critical landscape, connecting him with some of the world’s leading wine writers and critics to discover how the pandemic had reshaped their work lives and lifestyles.  Author and historian (and one of the most elegantly dressed gentlemen about town) Nicholas Foulkes very literally wrote the book on cigars. His son, Max, is a Master of Havana and works at Davidoff in Mayfair. And it was Nicholas’ father-in-law who first introduced him to the pleasures of cigar smoking. Especially for our first issue, Nicholas pondered the joy of his relationship with his sons and the idea of passing cultural knowledge and enthusiasms from one generation to the next. We commissioned Julian Broad to shoot a portrait of Nicholas with his sons.  I spent time talking with restaurateur-turned winegrower Alex Xu and wrote a piece about how he’d come to completely reshape his future by planting three hectares of Pinot Noir and Chardonnay vines in the foothills of the Jade Dragon Snow Mountain in China’s most idyllic province. I also interviewed Waterford distillery owner Mark Reynier to find out how (and why) he’s bringing notions of terroir, traceability and transparency to the fore in the world of single malt whisky.   Meanwhile, British chef and food writer Thom Eagle contemplated the value of spending more, rather than less, time in the kitchen, and artist Stewart Walton illustrated the piece.  We commissioned educator and business guru Germana Di Falco to interview fashion designer Brunello Cucinelli about his philosophy to business and life itself, and we engaged British-born, LA-based writer and critic Geoff Dyer to chart the slow journey towards appreciation of and reverence for well-chosen wine. The issue signs off with a Letter from California penned by winemaker Maya Dalla Valle, who reflects on her 11-year journey to become the winemaker at her family’s celebrated vineyard in Napa. The resulting inaugural issue is everything we hoped it would be. As Patrick says in his publisher’s letter on its very first page, it is a celebration. One that delivers rich, engaging editorial content in a format that feels lavish and collectable in and of itself. “It is also a collective,” he continues. “The best minds brought together to tackle the subjects that captivate, so arresting in their absence – experience, space, people and family. [This issue] became a journey into the sound of the things that matter to the soul of the collector, the reasons things exist, the FONDATA.”

FONDATA: The genesis story

Saint-Emilion has been hitting the headlines. And not in the way it would like to. In July, just after the region’s châteaux submitted applications for the 2022 classification, two of the region’s four Premier Cru Classé A estates – Chx Cheval Blanc and Ausone – announced that they would be withdrawing from the classification system. This week sees a dispute over the 2012 classification enter the courts – with accusations that the results were fixed. The Médoc’s leading names were ranked in 1855 – with but one change (Ch. Mouton Rothschild's promotion) in 1973. The classification was uncomplicated, with no fussing over terroir, tastings or winemaking talent; it was based purely on price. It’s hard to believe that it remains relevant today – but, while of course there are properties that stand out, it’s more or less accepted, and reflective. Across the river in Saint-Emilion, they wanted something different. Something fairer. A system that flexed with an estate’s waxing and waning. The ambition was – and is – laudable. The reality, well… The classification is overseen by the Institut National des Appellations d’Origine (INAO) – the body responsible for France’s appellation system. The concept was mooted in the 1950s, with the first list published in 1955. The idea was that it would be re-drawn every 10 years – both to be more democratic and provide an incentive for long-term quality. Unlike the Left Bank’s system, it would assess terroir and include a tasting of the wines. The aim was, and is – as a spokesperson for the INAO told me, to help consumers distinguish between the region’s many properties and help “maintain a level of excellence”. The classification is based on a scoring system out of 20, with the breakdown of scores different to qualify for Grand Cru Classé (requiring a minimum 14 points) versus Premier Grand Cru Classé (requiring a minimum 16). In 2012, the possible points for Premier Grand Cru Classé were broken down thus: 30% based on the quality of the wine – with a tasting of 15 vintages; 30% on the estate’s terroir; 35% on the property’s renown (both national and international), promotion and distribution; and the remaining 5% on viticulture, vinification and traceability. Even the first, 1955 list was disputed, changed just three years later, then again two months later, before settling on 63 Grands Crus Classés and 12 of the elite Premiers Grands Crus Classés. The very best of this latter group were named “Premier Grand Cru Classé A” (the rest Premier Grand Cru Classé B) – with just two making the cut, Chx Ausone and Cheval Blanc. Since 1958 the region’s wines have been re-classified regularly – if not quite on the 10-year cycle forecast, in 1969, 1986, 1996, 2006 and then 2012. But there has always been an undercurrent of discontent. In 2006, five properties filed lawsuits and the ruling was declared invalid, with the 1996 classification reinstated. For the 2012 classification, the INAO seemed determined to clean things up. The tastings and site inspections were, for the first time, outsourced by the INAO, with wine professionals from other regions (Burgundy, the Rhône, Champagne, the Loire and Provence) roped in – including Marcel Guigal and Robert Drouhin. A company called Qualisud was to handle the tastings, while Bureau Veritas would take on visiting the estates. These independent authorities would, they thought, make it indisputable. The result was two new Premiers Grands Crus Classés A estates – with Chx Angélus and Pavie; while Larcis Ducasse, La Mondotte, Pavie Macquin, Troplong Mondot and Valandraud all promoted to Premier Grand Cru Classé B, and significant changes to the Grands Crus Classés (with a new total of 64 estates). But of course that wasn’t the end of it. Enter Chx Corbin-Michotte, Croque-Michotte and La Tour du Pin Figeac. The latter two had applied for and hoped to be promoted to Grand Cru Classé, while Corbin-Michotte was demoted in the 2012 rankings. They argue that the decision against them was “incomprehensible”, challenging the criteria for classification and insisting that two individuals – Hubert de Boüard (of Ch. Angélus) and Philippe Castéja (of Ch. TrotteVieille) – had “undue influence” with their roles within the INAO. It’s alleged that de Boüard was “present at all stages of the process elaborating the 2012 classification” (with it implied he influenced the ranking not only of Angélus but seven properties for which he consulted), while Castéja “pulled strings” to guarantee TrotteVieille’s Premier Grand Cru Classé status. The case went to administrative court, however the plaintiffs lost in 2015. They appealed, but lost again in 2019. And now they’re taking it to the criminal courts, with jail time and a fine of up to €500,000 on the cards for the accused. When I asked Frédéric Castéja – Philippe’s son and General Director of Borie Manoux – about the accusations, he told me: “I can only tell you that the Attorney General has dropped all accusations against [my father] and stated that he was not concerned at all with this so-called ‘influence’.” “When it comes to a public ranking, the level of controversy is as high as the stakes,” the INAO told me. It’s unsurprising, perhaps, given the impact the classification can have on an estate’s bottom line. After their promotion in 2012, Chx Pavie and Angélus saw instant price hikes: 2012 Angélus was released at 30% more than the 2011 en primeur, while Pavie went up 58%. That’s big bucks. And beyond the actual wine, it’s the land prices that really rocket. It wasn’t just these three (relatively minor) properties that seemed dissatisfied. Rumour has it that each year, the Médoc’s First Growths, Cheval Blanc, Ausone and Pétrus (“the group of nine”) all meet to taste the latest vintage. After Pavie and Angélus became newly minted First Growths, the group reportedly preferred to restrict the group to the original set. And in 2012 Ch. Ausone quietly removed the classification from its labels – a hint at what was to come. Eric Morain – one of the lawyers representing the three disgruntled estates – has commented that the classification has become “a system that sells the brand and no longer the grape”. La Revue du Vin de France’s 2021 Man of the Year, the attorney is a specialist in the world of wine and has earned a reputation for standing up for the little guys. He was instrumental in establishing the Syndicat de Défense des Vins Naturels (which introduced the Vin Méthode Nature trademark last year – a formal definition for natural wine in France), and has defended several wronged natural wine producers, such as Olivier Cousin and Alexandre Bain. Morain’s latest crusade, however, is against two goliaths – with connections and deep pockets. “The classification was thought out and developed and judged by people who had a direct interest. The rules were not the same for everyone,” Morain said on email to me. De Boüard and Castéja should have recused themselves, he argues. For Chx Corbin-Michotte, Croque-Michotte and La Tour du Pin Figeac (“They aren’t notable, just winegrowers who do their job well,” Morain says), this isn’t about money. They just want someone to admit they were wronged, unfairly excluded from the ranking. “Will they be convicted?” Bordeaux expert Jane Anson pondered, “I would imagine not, but I guess we will all have to wait and see...” For her, the drama is an unnecessary distraction “from the excellence of the wines and the entire classification”. In the meantime, the process for the 2022 classification has been rumbling on, with applications submitted this summer. Some changes have been made, again trying to make the classification – once and for all – watertight. Independent third party Bureau Veritas is now in charge of both tastings and site inspections, and the weighting of the tasting element has been increased for the Premiers Grands Crus Classés (bringing it in line with the weighting for the Grands Crus Classés) – worth 50% of the score (previously 30%) – while the portion for a property’s terroir has been reduced to just 10% (previously 30%). The puzzle is why the criteria remain different for a Premier Grand Cru Classé versus a Grand Cru Classé – something for which I haven’t been able to find an answer. Given estates need to score 17 for the heralded Premier Grand Cru Classé A, 16 for Premier Grand Cru Classé B and 14 for Grand Cru Classé, why make things even more complicated and declare that, for example in 2022, the quality of terroir has more significance for a Grand Cru Classé than a Premier Grand Cru Classé estate (20% versus 10% for the latter)? To make it into the upper echelons of the Premiers Grands Crus Classés, reputation is considered key – and this is a sticking point for many. While reputation, promotion and distribution represents 20% for the Grands Crus Classés, it stands for 35% of a property’s score for Premier Grand Cru Classé status. Including elements such as wine tourism, social media, PR and the accessibility of an estate, it has prompted remarks that the size of a winery’s car park has more relevance than the quality of its soils. The INAO emphasises that the criteria are very similar to those of the original classification in the 1950s. Reputation has always been included, they argue – they are simply adapting this to the modern day. Either way, it’s a minor element, they assure me – with, for example, social media representing just 0.3 points, or 1.5% of the final score, while wine tourism makes up a mere 1%. This hasn’t soothed the worries of the region’s two original Premiers Grands Crus Classés A properties, Ausone and Cheval Blanc. News broke soon after applications for the classification closed on June 30th that the prestigious estates had not submitted anything. When I spoke to both estates ahead of en primeur (April this year), the responses were interesting. Pierre-Olivier Clouet, Technical Director at Ch. Cheval Blanc, noted it was “a touchy question” before he continued. “We believe it’s quite difficult in 2021 to classify the wine like in 1855. This is not the same period this is not the same price per hectare, it is not the same price per bottle… Producing an outstanding wine is difficult on paper,” he said. “We don’t produce wine for the critics, for the classification – we make wine for the wine lover. Premier Grand Cru Classé A, Premier Grand Cru Classé B, Grand Cru Classé… we are Cheval Blanc, that’s it.” When I enquired whether he felt a wine’s distribution should have as much weighting as its terroir, he shrugged and smiled: “The answer is in the question.” Pauline Vauthier of Ch. Ausone was less willing to broach the topic, not wanting to be embroiled in the debate. “What counts is the quality of the product,” she said – making very clear that that is where the estate’s focus lies. “There are many classifications and they’re difficult for the public to understand. Ausone prefers to communicate about the quality of its wine.” She added: “[The 2012 classification] created much controversy, and that will certainly be the case with 2022.” When the news broke in July that both estates were withdrawing (along with sibling estates, La Clotte and Quinault l’Enclos), Pierre Lurton (Director of Ch. Cheval Blanc) and Clouet told Terre de Vins that there wasn’t enough emphasis on “the terroir, the wine, the history”. Edouard Vauthier (Ch. Ausone) explained, “Since 2012, some criteria added are not linked into the wine itself anymore. Some people apply for the classification for economic reasons more than quality and the respect of the terroir.” He highlighted that many of their customers hadn’t even noticed that “Premier Grand Cru Classé A” was no longer on the label. Indeed, why would they? Interestingly, these estates agree with Eric Morain on this. For Morain, the tasting component should represent much more – and as long as it counts for so little, “the classification will mean nothing”. The two behemoths are their own brands – brands that are much stronger than that of Saint-Emilion Premier Grand Cru Classé A. The loser, sadly, is set to be the classification itself, and its top-tier properties – which will no longer benefit from Cheval Blanc and Ausone’s halo effect. Of course, the INAO was keen to emphasise that – whether classified or not – the two estates would always be closely associated with the region, and that there were plenty of other estates that eagerly submitted applications. “Ausone and Cheval Blanc have always been driving forces behind the appellation and I hope will remain so,” Frédéric Castéja told me. “The risk is that at the next occasion other top estates (meaning other First Growths) do the same, then if too many leading estates leave, the classification is meaningless.” Morain – unsurprisingly given his campaign against the classification – is damning about its fate. Ausone and Cheval Blanc’s departure is, for him, “a symptom of a system on its last legs”. So is the 2022 ranking set to be the Saint-Emilion classification’s swansong? Perhaps – the more important question is maybe if it matters. “Saint-Emilion has so many châteaux (by far the most of any of the prestigious appellations) that there is a definite benefit to have some way of distinguishing the best wines,” Jane Anson said. “I fully agree with the principles, in fact think the idea of a renewable classification is very much consumer-driven and provides an incentive to estates to keep investing etc, but I think it has become unworkable.” And that is the problem – the theory is excellent, but how can it be put into practice? While the classification sounds helpful in principle, for most people, I suspect it isn’t. There’s too much confusion with Grand Cru, Grand Cru Classé and Premier Grand Cru Classé A or B. Unlike the Médoc’s straightforward numbering of First to Fifth Growth, it is not – to the uninitiated – immediately clear which is meant to be better than the other. Price and branding of an individual estate will be the more important differentiator. Talking to other producers in the region, few have answers – and few wish to champion the system’s survival. I asked Noëmie Durantou Reilhac – of Denis Durantou estates – whether she’d ever wish to see something similar in Pomerol. The answer was a firm no (“definitely”). “What really saddens me is seeing some plots in Saint-Emilion Grand Cru that are truly devastated,” she tells me. When I ask Nicolas Glumineau at Pichon Comtesse in Pauillac – a producer with a little distance – about his thoughts on it, he’s quick to quip: “That’s why we have an 1855 [classification] that we never move.” More seriously, he thinks the decade cycle is problematic. “I have this feeling that one classification every 10 years is probably too fast, too frequent. Probably 25 years – one generation could be enough.” Of course applying for the classification is voluntary – and not everyone does. Ch. Tertre Rôteboeuf, notably, has never played the game – despite the high quality of its wines. (The property is also renowned for handling its own distribution, outside the négociant system.) Ch. Haut-Brion owner Prince Robert of Luxembourg recently highlighted a benefit to being outside the classification – announcing his plans to expand Quintus with vineyards from the recently bought Ch. Grand Pontet. And this really gets to the point of what could make the Saint-Emilion classification work. As Anson said to me, “Saint-Emilion is the only classification in Bordeaux that includes the notion of terroir (and in fact taste) and that is also linked to a specific piece of land.” A classified property can’t automatically include new vineyards – unlike estates on the Left Bank. The classification is admirable in many ways – but how can you really quantify excellence? Is it ever really possible to pin down the true quality of a wine, or estate, with such exactitude? Is the picture not more nebulous than points can ever paint? “All classifications are correct as long as all players clearly know the rules,” Frédéric Castéja noted. “One must remember that classifications are always the picture of the past, but of course confirm the potential of the estate.” For Saint-Emilion, even the past feels in flux – discussed and debated. What the future holds is hard to say – but, for now, we’ll wait to see what’s in store for the class of 2022. Read more about Editorial  Since this article was published, Hubert de Boüard was found guilty of having undue influence in the 2012 Saint-Emilion classification. He was fined €40,000 and has not appealed the charge. Two properties, Ch. Croix de Labrie and Ch. Tour Saint-Christophe, are taking the INAO to court over their applications for the 2022 classification. In January 2022, Ch. Angélus announced it too was leaving the Saint-Emilion classification, stating the system had become a "vecteur d'antagonisme et d'instabilité". This leaves Ch. Saint-Emilion’s classification is in crisis – embroiled in court cases and controversy. But why? And does it matter? Sophie Thorpe investigates

Saint-Emilion’s classification is in crisis after leading names abandoned the system. We talk to Ausone, Cheval Blanc, Angelus and more about the controversy

Marco Simonit has become something of a celebrity in the world of wine, but his specialisation – pruning – is not normally considered glamorous. Pruning is often low-paid work left to contract crews. But with his childhood friend Pierpaolo Sirch, he set up the Simonit&Sirch pruning consultancy that now has a team of 20 experts operating all over the wine world.  Partly this is because of the rise in grapevine trunk diseases, which are considered a major threat to viticulture. Simonit’s pruning methods are suddenly in high demand because they have the potential to vastly reduce the risk of trunk diseases. Now, in conjunction with FINE+RARE, he has made his first wines from old vines in Collio. The origins of Marco’s interest in the vine began with his background. "I lived with my grandparents because my father died and my mother worked," he says. "They had a small farm with cows, horses, sheep and goats, and also a small vineyard to make wine for the family’s consumption."  He says that it was a good environment to grow up in, surrounded by nature with a gentle pace of life. His real passion was animals, though – not vines – and he had set his heart on becoming a vet. But after studying agriculture at the local college in Cividale in Friuli, he had to take a job. He began working as the technical adviser for the Consorzio of the Collio DOC in 1988, a role he was to fulfill for a decade, offering guidance to growers on viticulture. "I loved the landscapes, and I loved to observe the trees, plants and hills," he recalls.  Then one day, he started drawing vines. "After work, I would go to the fields, and I drew the vines," says Simonit. "I drew the trunk and the arms and the canes and leaves, and I met the wounds. There were a lot of wounds. I started to think about what it must be like for the vine." Observing the pruning wounds and their effects on the old vines made a big impression on him. He asked a viticulturist if he could pull out an ailing old vine, and when he got permission, he approached one of his friends who was a carpenter. "I asked him if it would be possible to help me make a section through an old vine," Simonit recalls. "He said, this is a strange request. Why do you want to do this? I said I wanted to see inside."  So with the aid of the carpenter, Simonit cut the vine in half. "It wasn’t completely dead but it wasn’t in good health," he says. "It had an extraordinary impact on me: when I saw inside, a big part of the vine was destroyed. A small part of the wood was white (alive), but most of the inside of the trunk and the arm was brown and black, and with fungi. I was shocked." At that time no one in the schools and universities had sectioned vines to look at the consequences of pruning. "I called my professors and I spoke about this, and the professors said, Marco, since the beginning people have always approached pruning the vines in same way, so why are you going crazy taking the trunk and making sections to see what is happening inside? Just do a normal pruning like everyone has always done." None of the professors he spoke to were interested in his ideas. But he decided to carry on.  His growing obsession with old vines led him to start travelling, initially around Italy, and then further afield. He saw a similar pattern everywhere. "In these years the viticulture was changing," he says. "A lot of local training systems, such as pergola in Trentino, tendone in Abruzzo and albarello in Sicilia, were being transformed."  People were turning to more ‘modern’ ways of training vines, such as vertical shoot positioning (VSP), and then after 20 years these new vineyards were starting to lose vines to trunk disease. "The spacing for growing the vines wasn’t enough," he says. "In its natural state, the vine is a creeper, a liana. For sure, it is not easy for the vine to remain in the same position for a lot of time, with domesticated demands, without consequences for its health and longevity." He came back to Collio. "I asked some viticulturists if it would be possible for me to try to change the approach of the pruning in modern vineyards. I wanted to change the approach to pruning because the consequences were terrible. The response was they said they didn’t really understand what I wanted to do, but they let me try. In the beginning of 1990 I started to introduce a new technical approach to pruning and shoot thinning by myself in different places in Friuli." Simonit didn’t have a program, and at the time hadn’t heard of Guyot-Poussard pruning, which is an old system that’s somewhat similar to the technique he developed himself. Over a ten-year period he tried to find new solutions, observing old vines and applying different approaches. After this period of experimentation, he thought he had something worthwhile, and he began to approach professors and viticulturists, only to meet with disinterest. Attilio Scienza, professor of viticulture at Milan University, was the exception, though. "Scienza said to me, it is interesting what you do," he recalls.   "Scienza was impressed with my work and started to speak about it with important producers in Italy, such as Bellavista and Ferrari," says Simonit. "And in Schiopetto we built our campus, our laboratory. In Schiopetto today it is possible to see and touch the last 30 years of my work." This was the early 2000s, and although Simonit was starting to get his first consulting gigs, he wasn’t sure that pruning was going to be his professional future.  "But I thought: I believe in this. I had a passion for vines and wanted to help reduce the risks from bad pruning. And I thought, maybe the top wineries in Italy might be interested in my new approach for pruning and shoot thinning. I tried to call these guys and show them what I was doing in the campus of Schiopetto. One day I was in my car, and I looked up Angelo Gaja’s number. I thought this guy might be interested because the wines are expensive and high quality. Maybe he would be interested to keep his heritage vines." "I called and asked the secretary whether I could speak with Angelo." He was stunned to be put through to him. "I told him that I’d worked in a lot of vineyards over the last five years to find a new solution for pruning and shoot thinning, and I asked him if he was interested in coming to Friuli to see it in action.  He said yes, and two weeks later he came along with his entire team from Piemonte and Tuscany to Friuli. They were really impressed, and a few weeks later I had contracts with Angelo Gaja, Ferrari and Bellavista." This was in 2003, and Simonit finally began to see that this was going to be his future. He took his approach all over Italy, working with some of the top estates, including Frescobaldi, Planeta, Tasca d’Almerita, Feudo di San Gregorio and Ornellaia.  What is different about the Simonit approach?  There is no recipe because vineyards, regions and training systems are all different. But there are two main principles. The first is that the sap flow of the vine has to be respected, and pruning cuts are made with this in mind. The second is what Simonit describes as ‘ramification’. "One of the big principles for respecting vines is independent of the training system you use, or the variety," he says.  "It is ramification. You first build the trunk (the first structure), then the arms (the second structure). It is like a chronology. You need to build a chronology of wood." He points out that the vine is naturally a creeper, and that pruning should respect this as much as possible. "Our principle rule is ramification. Build a chronology of live wood: first floor, second floor, third floor and so on."  So, for example, with a double Guyot, the canes chosen on each side of the vine should be furthest from the head each time, with the replacement spur the outside cane, and the cuts should always be made on the upper branch. When a cut is made, it should be of young wood only – one or two years old. And the cut should not be made flush to the trunk, because there is always what is called a ‘cone of dessication’, roughly equal to one-and-a-half times the diameter of the cut, where the wood left dies back. This can interfere with the sap flow and make the vine susceptible to trunk disease.  But respecting the sap flow isn’t always key. "Not all the varieties suffer if you don’t respect the sap flow," says Simonit. "Some varieties are very sensitive, like Sauvignon Blanc, Cabernet Sauvignon, Cabernet Franc and Sangiovese. Others don’t suffer a lot. For example, Nebbiolo and Semillon. I work for Château d’Yquem. They called me because the Sauvignon Blanc is being destroyed by trunk disease after 20 years. The Semillon is not: it has super energy and lives a long time, because the genetics are different." "But always respect the ramification. If you think about the albarello in Primitivo in Puglia, they grow up vertically. The arms of the Primitivo grow up vertically. It isn’t possible to respect the sap flow. For other examples of alberello training with different varieties, such as Moscato d’Alexandria, to follow the sap flow is necessary. We need to find solutions for each variety in each terroir: it’s not always possible to take the same approach." Bordeaux came calling A big moment for Simonit was when he was contacted by the late Denis Dubourdieu in 2011. "Denis called me from Bordeaux, because with the Guyot Médocaine, after years and years, there wasn’t enough space for the canes. They wanted to know what to do." If canes are taken from the outside each time, after a while the vines grow out along the row, and when the planting is close, they run out of space.  In Bordeaux, their solution was to take a shoot from inside, close to the head, and then lay that down after cutting the old arm off. Often, this would result in fatal trunk disease. "They destroyed a lot of vines this way, trying to regain the space and reduce the risk of congestion of canes overlapping," says Simonit. "This was a disaster for the Médoc and all the double Guyots in the world, because the big wounds destroyed the vines." "We started with a new approach in the Médoc, introducing the spur in the sap flow, building the chronology, preparing new exits for two or three years in the way of the sap flow, and then cutting the big arm, far away from the position of the new spur. This is one of the smart solutions when you have lost a lot of spacing. But this problem is particularly present when the distance between the vines was not enough in the first place when they were planted." Simonit now has many prestigious clients in Bordeaux. The dangers of high-density planting High-density planting is very popular these days, but it is causing problems because the vines are planted too close to allow for sustainable pruning approaches. "The risk is that if you don’t have the idea of the vine architecture at the beginning for the next 50 or 60 years, it becomes a problem. I see this problem all over the world, not only in the double Guyot, but also in Bourgogne and Champagne and Provence: everywhere. The big problem is people and space: people are scared to leave space for vines. Then to create space they use pruning, and it is a disaster." "In the past in Bordeaux, particularly in the Médoc, the Cabernet Sauvignon was planted further apart. Now we find Cabernet Sauvignon vines planted 80cm apart. We need to think about this for the future sustainability of vines and vineyards. We need to speak about the space. If we build vineyards for the next generation we need to think about the spacing." One idea that Simonit has adopted from Dubourdieu was ‘curetage’. Dubourdieu gifted Simonit with a book: this was René Lafon’s 1921 title Modifications à apporter à la taille de la vigne des Charentes, taille Guyot-Poussart mixte et double: l'apoplexie, traitement préventif (méthode Poussard), traitement curative.  This book described the experiments on pruning carried out by Eugène Poussard, a viticulturist in the Charentes area. Poussard is responsible for the vine pruning system called ‘Guyot Poussard’, which is very similar to Simonit’s system. But he also treated affected vines using ‘curetage’, cutting away affected wood. "More than 150 years ago this man was trying to do some surgery on the vines with rudimentary tools," says Simonit. "Denis asked me to go to Sancerre, because he knew that a lot of older viticulturists had used small chainsaws to open the vines and clean the wood affected by fungi, and the vines survived." They headed to the Loire and visited different vineyards. Sancerre has been particularly badly hit because Sauvignon Blanc is very susceptible. "We shared experiences with François Dal [another pruning expert who works for Sicavac, the regional technical body], and he was also interested in working with chainsaws. We tried doing this surgery in the wineries of Denis Dubourdieu, like Château Reynon, Doisy-Daëne and Floridène. In 2014 we began teaching others how to do this." As soon as the first foliar symptoms are seen, then any soft wood that has been infected by the fungi is cut out of the trunk. The infected wood produces toxins, and once it is taken out, the vine usually recovers.   FINE+RARE x Simonit&Sirch Now, for the first time, Simonit has begun making wine from old vines, in conjunction with FINE+RARE. "On my trips and jobs around the world, I met a lot of old vines, and sometimes these vines are not vinified separately," he says. Making small parcels of wine appeals to him. "It is a ways of speaking to people about the importance of old vines for increasing the identity of wines, speaking about vineyard sustainability, and thinking about the relation between humans and vines." He adds, "I wanted to make wines that speak about this philosophy." "Patrick O’Connor [of FINE+RARE] and I share a mutual friend, and he knew about my idea," says Simonit. "One day Patrick called me to ask me if it’s possible to organise a meeting because he was interested in this old vines project. He was very excited about the idea, and he proposed starting this project in Friuli, where my heart is." "He asked me which varieties were most interesting for me. I chose Sauvignon because I love it, and it is very difficult to have old vine Sauvignon because of trunk disease. Many of the vineyards have vines of different ages, because after 25 years the original vines often begin dying, and people co-plant with new vines. Then they make wine with all the vines – young and old – together. Also, I chose Chardonnay: in Colli Orientali we have the oldest Chardonnay in Friuli, 80 years old. And after I chose Friulano, which is 50 years old." Winemaking is in the hands of Christian Patat, an old friend of Simonit’s. "Twenty years ago we started with a small project but it stopped because we were both so busy. So when FINE+RARE and I began working, I spoke to Christian seeing if he could make the wines. He married the owner of Ronco de Gnemiz, and he makes the wines there. This guy has an approach to wine that’s close to mine – we like the same sort of wines. Our goal was to make two or three barrels of each variety." This is Marco’s first wine project. "I have never thought about making wine before. Now I’d like to expand this project to other Italian regions, and also other countries, with a small production focusing only on old vines." "It is a unique approach because we try to vinify with just the oldest vines. In the Chardonnay project, for example, we don’t use all the vines. Part of the vineyard is 80 years old. We pick only the grapes from the original old vines to make this wine from. These wines speak about the relationship between humans and vines, sustainability, the importance of the age of the vine, the importance of terroir." Tasting notes The wines are called L’Età Più Bella (With Age Comes Beauty), and will be released as a mixed case of three separate cuvées – a Chardonnay, a Friuliano and a Sauvignon Blanc. L’Età Più Bella Sauvignon 2018 - Collio, Italy "13% alcohol. Lean, taut and chiselled, this is a bright lemony Sauvignon with good acidity and some fine herbal hints. It’s quite compact and mineral with precision and focus, finishing quite taut. Stylish stuff." L’Età Più Bella Friulano 2018 - Friuli Colli Orientali, Italy "14% alcohol. There’s good density here with taut pear, apple and lemon fruit, as well as a touch of richness on the mid-palate. This has a lovely focus, combining some richer notes with good acidity and a long, mineral, subtly nutty finish. Beguiling and elegant. " L’Età Più Bella Chardonnay 2018 - Friuli Colli Orientali, Italy "13% alcohol. Hazelnut, spice, honey and citrus on the nose. The palate has fresh fruit with an appealing cedary, woody, spicy undercurrent. Citrus, pear and white peach, with a warm spicy finish. Lovely intensity here, with good fruit purity."
