Christian Patat is one of Italy’s busiest and most successful vignerons working with his wife at top Friuli estate, Ronco del Gnemiz, as well as working with Enzo Pontoni, vigneron extraordinaire, at the legendary Miani estate. He also works as a consultant winemaker for many properties producing wines from all over Italy. Most recently he has been involved in an old vine project with long-term friend and fellow Friulian, Marco Simonit – famed for his work protecting old vines all over the world most particularly at the legendary estates of Yquem, Leroy and Louis Roederer.

We caught up with Christian to talk more about L’Età Più Bella (With Age Comes Beauty), which is set to release its first collection of wines from top sites in Friuli next month. His insight into the Friuli region is a great starting point to understanding Italy’s mecca for white wine.
 Can you describe what you think is so special about the Friuli region for wine production?  "Friuli is one of the most complex scenarios in the wine world given the unheard of combination of grape varietals, soil identities and climatic challenges. I’ll try to explain from the inside. The wide number of varietals is provided by different waves of invasion, such as
the French (at the time of Napoleon) and the Austrians (in the same period of Napoleon
but they stayed for much longer); these invasions explain why we have so many 
Bordeaux varietals (Merlot, Cab Franc, Cab Sauvignon, Carmenere) and others of
French origin such as Pinot Blanc, Pinot Gris, Chardonnay and Sauvignon. "The arrival of these 'imported' wines did not cancel out the presence of local varietals such as Ribolla Gialla, Refosco, Schioppettino, Pignolo and Tocai Friulano. The Austrians also did their part leaving some Traminer and Riesling so that the picture is composed as it is today.  "Until the ‘60s, Friuli was a poor region and the vineyards were in the hands of small growers selling locally and with no real commercial plan and having the ability to offer a wide range of wines gave more options to sell to occasional customers. For this reason, the Friulians never gave up any of these varietals and when the DOC was finally in place they were all included.  "In terms of soils there is a significant difference between the flat appellations (Grave del Friuli, Isonzo, Aquileia) and the hillside appellations (Collio, Friuli Colli Orientali, Carso). The flat area is basically made of gravelly soils, the hillside is basically marl (locally called PONCA and geologically called FLYSH), obtained by the sea pushing in the direction of the mountains and creating slates of chalk, limestone and clay, all of which are agglomerated in various percentages and sometimes within the same vineyard, providing an incredibly complex subsoil.  "This complexity is augmented by the fragility of the structure which is very prone to erosion and obliges the growers to cultivate on terraces in order to minimize the impact of the water. This way of growing the plants generates very high costs and consequently low yields given the limited density of plantation (i.e. the average density on a modern planting in hillside Friuli can reach about 6.500 plants/ha which is much less than what can be achieved in Burgundy with an average of 10.000 plants/ha), and makes virtually impossible machine harvesting and other mechanical intervention.  "To complicate this picture, Friuli has the highest amount of rain in Italy which means that growing grapes can be a real challenge, but the ponca soil has a high degree of draining, so to avoid issues and diseases caused by excessive water close to the roots. All this being said, the real peculiarity comes from the soil itself which can be a magical balance of minerally driven characters, with enough structure to provide full-bodied wines and that’s the
reason why white and red varietals are grown in the same place." What varieties do you think perform the best in Friuli and why?  "You may have different answers if you ask different growers but personally I think that among white wines I would go for Friulano (Tocai) because it expresses very well the different sites and shows better than any other varietal the balance of richness and saltiness.  "Apart from Friulano I would pick Sauvignon Blanc because I see it as a possible third way
between Loire and New Zealand. More aromatic than in France with richer body
and more minerally driven than in New Zealand.  "And finally, if you are lucky enough to have well-aged vines Chardonnay can also do surprisingly well in cold sites. Among reds I would pick Merlot and Cabernet Franc given their tendency to ripen on the late side (same timing as Pomerol and Saint Emilion) and to
provide low yields and concentration without losing freshness and spice. Also, Refosco can do very well bringing a Syrah-like spiciness and a full body but it needs to be grown in very well-suited spots. Can you describe the last few vintages and qualify them?  
"2018 was a very sunny and dry vintage, driving to early ripening of some of the whites such as Sauvignon (starting date of harvest 23rd of August) but quite interesting for reds given that the month of September was quite fresh and dry so to give a larger window to pick the reds at the right level of ripening. 2019 was much cooler (starting date of harvest 1st of September) but quite ideal for whites with lively acidities and good concentration. Reds were also fine but some later rain in September affected a bit the possibility of fully ripe tannins so I would consider it as quite average." 
10 DOCs, 4 DOCGs, 30 different varieties, it can be difficult to know where to start exploring the wines of the region. Can you advise?  "Diversity can be fascinating but it can also turn into a nightmare given that you have to add also the wide difference of styles available (stainless steel crisp white wines, barrel fermented Burgundy oriented, orange wines with maceration on the skins…). I cannot really advise on this as I find all this diversity as a real limit to communicate the character of the region, but on the other hand I have to admit that there are very few wine regions in the world (maybe none) where you can find so many reasons of interest. That’s why more and more wine enthusiasts are travelling this way and fall in love with the complexity of these terroirs and
wines." 
Are all the fine wines of the region concentrated in one area or are they dotted all around?  
"90% of what we can call fine wines are made on the hillsides of Collio, Friuli Colli Orientali and Carso and very few are made in flat appellations such as Isonzo." 
Friuli-Venezia Giulia comes across as quite independent from the rest of Italy, why is this?  "I think a whole history of invasions (Romans, Longobardians, Venetians, Austrians, French) has created a sense of self protection. More than this after the Second World War Friuli has turned from a poor region into one of the very wealthy and productive areas of Italy, due to
the silent and consistent attitude for hard work of the Friulians. They have been able to turn it into a well-kept secret and make a pride of it." How long have you worked at Miani?  "I started in 1991 helping him in decision-making at the time of the final blending and taking on my shoulders all the commercial aspects that he did not want to manage." What makes the wines from these top wineries stand out?  "I don’t know if they stand out but what I can surely say that we both apply a tireless dedication and passion to what we do. We both consider single sites and soils more important than varietals and we have the ambition to 'bottle a place' more than a wine." Who has been your biggest inspiration in life and as a vigneron and why?  "My father, a real bon vivant, who put me in contact with great wines since I was still very young and created in my mind the quest for quality in every aspect of my life. My fascination for great wines came from him, just watching his excitement when receiving his annual allocation of Champagne Salon or Monte Vertine (to name a few) and the pleasure he used to take in sharing with friends.  "Then my wife who despite challenges, family issues, economical limitations never gave up looking for the best possible wine here at Gnemiz, loving this place and respecting it as a living treasure and not just as an instrument. Finally Enzo Pontoni at Miani who showed me how you can achieve your goals only with hard work and passion and how you can be the happiest man on earth just for the fact that you are doing exactly the work you want to do in the way you want to do it." How did you first get involved in L’Età Più Bella (With Age Comes Beauty), the old vine project?  "That was Marco Simonit's idea to involve me as we had experimented in the past and in some ways we started the project in the mid ‘90s, but at that time we were all too busy to follow up and we did not have a well-formed concept of what we could do… we were just youngsters…" What is so unique about the wines that have been produced under the L’Età Più Bella label?  "The goal was to explore the identity of various plots of very old vines, all of which were well placed with very good exposition and with an excellent quality of soil. The character which comes out from an old vineyard has a different kind of balance and texture, as we use to say, it is more a “wine of roots” than a “wine of sun”. That’s quite evident by the fact that old vines tend to ripen later than neighbouring young vines and suffer much less from potential water stress, producing more consistent wines of complexity and finesse. We were not looking for fruit bombs to impress but for refined and subtle characters and ageing potential."
 You are a philosopher and a jazz musician as well as a winemaker. Can you tell us more about these passions?  "That’s all too generous, in fact, I have none of these titles. I did not complete my studies in philosophy due to the sudden death of my father so I cannot call myself a philosopher. My passion for philosophy is due to my classics studies and when it was time to chose the University, my father suggested to go for philosophy because, he said, 'when you will
finish your study you will not find a job and can come to help me to sell some
wine!'  "That’s exactly what happened, just with the wrong circumstances. About jazz, I always wanted to become a piano player and I’ve studied a lot for this but in the end, I was not good enough to make a career and I quickly understood there was no point in dreaming of being the new Keith Jarrett, so I became a well trained amateur and I gave up playing in public.  "As for winemaking, I don’t have a formal education given that I had to work and did not have time to study at University, so I started a process of self-education in a kind of backwards process, from my instinctive ability to be a good taster, moving gradually to all the
knowledge which drives the production of wine, from the vineyards to the cellar.  "It took me years and the support of many friends who allowed me to verify my skills in their cellars. The results of my 'experiments' were very promising and convinced me to go deeper in my studies until the point of being able to take full responsibility for wine production as I’ve been doing for the last 20 years." I first sat down with winemaker Chris Phelps almost two years ago, diving into his remarkable journey. Having worked at the likes of Dominus, Caymus and Inglenook, it was chance – or maybe fate – that led him to establish his own wine label, Ad Vivum, in 2007.  He was sitting above a tank of just-fermenting fruit when he was struck by a “coup de foudre” – falling instantly for Sleeping Lady Vineyard, a site farmed by his good friend Larry Bettinelli. He bought the half-fermented must, and has continued to do so every vintage since.  The specific blocks that filled that tank sat up against the Mayacamas at the very top of the vineyard, which is the southernmost site in Yountville. Here, the vines are shielded from the blaze of the afternoon sun, preserving acidity and aromatics in the fruit, while a flow of underground water allows the site to thrive in even the driest of years. Each year, from just 1.5 acres of Cabernet Sauvignon, Phelps crafts another expression of the site.  The exact parcels have shifted very slightly over time. In 2007, the vines were all Clone 191 – the clone he felt was best on the site, but the block needed replanting so they started using fruit from an adjacent plot, planted with Clone 7. After a “carefully thought-out dance” balancing the two plots, the 2024 vintage marks a return to using fruit only from the original plot, now replanted with Clone 191 (and known as Clone 34, which is genetically identical to 191).  Phelps left his day job (working for other wineries) at the end of 2023, finally able to focus exclusively on Ad Vivum, as well as a newer project with his son Josh (Coil Wines). Although we’d tasted the current releases before, earlier this month we were able to taste a trio of back-vintages for the first time. They reinforced how special this site is, as well as Phelps’s talent when it comes to capturing it in bottle.  The three vintages we tasted were 2016, 2017 and 2018 – three very different years in Napa. All three, however, manage to combine great freshness with Napa polish – creating wines that are surprisingly approachable already.  2016 Ad Vivum  In Phelps’s words, 2016 was “a classic Napa vintage”; the weather was warm at the end of June, allowing the vines to focus on fruit ripening, while autumn brought cooler weather. Phelps harvested from 7th October, fermenting in 21% new French oak (the rest in stainless steel), with a total of 19 days on skins prior to maturation for 18 months in 65% new French oak. It has always had “a seamlessness”, Phelps noted, and that’s certainly true tasting the wine.  The nose offers sweet, dark fruit, graphite purity and hints of lifted florals as well as an herbaceous edge. The palate is linear and pure, with mouthwatering acidity and a savoury core of ripe fruit, sweet cassis and ripe tannins that provide a drying grip on the finish. Although the oldest of this mini-vertical, it almost feels the youngest and will certainly benefit from additional time in bottle. A blend of 56% Clone 7 and 44% Clone 191 Cabernet Sauvignon.   2017 Ad Vivum  The 2017 vintage is one that will forever be remembered for its wildfires in Napa, although fortunately Ad Vivum wasn’t impacted by them. After an early budbreak, the growing season was marked by three heatwaves – in mid-June, at the end of August and in mid-September. Having a cooler site, shaded from afternoon sun and with sufficient water reserves was key for Phelps. He harvested from 5th October, bringing in 55% Clone 191 and 45% Clone 7 Cabernet. It was fermented in 25% new French oak, spending 20 days on skins in total (Phelps noted how easily colour and tannin came in this hot vintage), before being aged 17 months in 70% new French oak.  The nose here is bright and perfumed, combining sweet dark fruit – black cherries and blackcurrant – with floral lift and pencil lead. There’s a glorious purity to the fruit here, which follows through onto the dense yet fresh palate, displaying a juicy elegance. There’s a satisfying chew to the tannins, firm yet velvet-like, framing the waves of fruit that flow towards to the long, saline finish. Mouthwatering and moreish, this is hard to resist now.  2018 Ad Vivum  Although the 2018 vintage in Napa started with relatively late budbreak, cooler, even temperatures made for a long growing season, and producing relatively plentiful yields – yet without any dilution, thanks to the extended season. Phelps harvested from 17th October, with the blend moving back towards around two thirds Clone 191 Cabernet from the original block and a third Clone 7. Fermented in 25% new French oak, Phelps left the 2018 on skins for 23 days – slightly longer than other vintages, feeling structured fruit needed more time to reach its potential, echoed with its maturation in 75% new oak for 20 months. Phelps notes how generous this wine has been from the beginning, but has developed further opulence and depth in bottle.  This is a beautiful wine: the nose is intense, exuberant with dark fruit and a satisfying herbaceous edge. Although the blackcurrant and black plum fruit is beautifully ripe and smooth, there’s bright acidity that brings gorgeous freshness – making for a lithe and vibrant palate. Ch. Ausone: the Vauthier Vision Our 2023 events line-up started with a bang at one of London’s most exciting and newest culinary establishments, Alex Dilling at Hotel Café Royal.  On a typically British February evening, our guests gathered at Hotel Café Royal for a Champagne reception and exceptional five-course meal celebrating one of Bordeaux’s most respected estates, Ch. Ausone. Each course was expertly designed to complement the nine remarkable Saint-Emilion vintages we tasted throughout the night.  The magical evening began with an exploration of the Vauthier family’s other wines in Saint-Emilion: Chx Haut-Simard, de Fonbel, Moulin Saint-Georges, La Clotte and Chapelle d’Ausone. These wines were the perfect introduction to the Vauthiers’ style of Bordeaux – wines of extraordinary precision and finesse. We then moved on to the main event – a vertical of Ch. Ausone stretching from 2003 to 2018, exploring the beauty of this property and how its style has developed under the Vauthiers. Edouard Vauthier – son of proprietor Alain Vauthier and brother to winemaker Pauline Vauthier – joined us to share the property’s fascinating history, guiding us through its distinct terroir and how they work in the vineyard and winery. This wonderful evening and comprehensive tasting provided the ultimate insight into this very special property – and was the perfect introduction to 12 months’ worth of wonderful gatherings with excellent food, wine and conversation. Le Pin from the beginning, with Jacques Thienpont The second event of the year, held at Claridge’s L’Epicerie, was a magnificent celebration of one of the most famous names in wine, Le Pin. With a mere 600 to 700 cases produced annually – a truly minuscule quantity that is dwarfed in comparison to fellow top estates of Pomerol and Saint-Emilion – few people ever get to taste these wines. Those fortunate enough to do so almost certainly wouldn’t have tasted the vintages on show back-to-back in February. Over the course of the evening, guests were treated to 15 incredible wines –  three from acclaimed vigneron Jacques Thienpont’s special Saint-Emilion operation L'If and 12 spellbinding wines from the iconic Pomerol es­tate, concluding with the 1990, 1983 and first-ever Le Pin vintage, 1979. Thienpont and Diana Berrouet Garcia (MD of Domaines Jacques Thienpont) joined us for the evening, sharing remarkable stories about one of the world’s most renowned and mythical producers. During this truly immersive experience, we were able to gain unprecedented insight into the style, philosophy and history of the incredible estate that produces one of the world’s rarest and most in-de­mand wines for collectors. Such was the quality of the wines on show that the world-class food served by the expert L’Epicerie team was almost reduced to a footnote. Seven exquisite dishes were prepared in Claridges’ iconic kitchens – each one designed to complement the remarkable wines that filled our guests’ glasses. Truly exceptional. Schrader Exploration with Jason Smith MS One of Napa’s cult names, Schrader Cellars, was the focus of our third event of the year. During an intimate dinner at Michelin-starred Muse by Tom Aikens in Belgravia, London, guests were treated to a vertical of the greatest-ever vintages (2005-2019) of Schrader’s top cuvée, Old Sparky, which all received perfect scores. These 100-point wines – all from magnum – were expertly paired by one of the UK’s most talented chefs.  Esteemed Master Sommelier Jason Smith expertly guided us through Schrader’s best vineyards and terroirs before enthralling us with tales of six vintages that have become some of the estate’s most coveted and rarest wines. While tasting these exceptional vintages at the gorgeous two-storey Belgravia townhouse, Aikens hand-served and enthralled guests with the seven courses he had prepared for the evening. This was an exploration of one of the world’s most decorated and mythical wines which showcased Napa Cabernet at its very best. During a remarkable five-course meal, prepared by Hélène Darroze’s three-Michelin-star team to complement the 23 wines on show, guests enjoyed a mini vertical tasting of La Rue aux Vaches, followed by a selection of Premiers and Grands Crus from Alvina’s grandfather’s estate Domaine Paul Pernot and her own eponymous fledgling property. Following a tasting flight (2021-2018) of Alvina Pernot’s Rue aux Vaches vineyard – bottled exclusively in magnum – guests were then served five mini verticals of Domaine Paul Pernot’s Folatières, and Grand Crus Bienvenues-Bâtard and Bâtard-Montrachet from the family’s cool cellars in Puligny. The supremely talented husband-and-wife winemaking duo joined us on the night to offer insight into these special vineyards and wines, and the contrasting styles of the two properties. It was a true exploration of Pernot, a key and treasured partner for FINE+RARE, across many of their greatest wines. Lafite Rothschild through the ages A landmark event of the year, Ch. Lafite Rothschild through the ages was the first experience we held in UK held outside London. Waddesdon Manor in Aylesbury was the natural choice for the occasion because of its iconic grandeur – and connection with the Rothschild family. Following a Champagne reception in Waddesdon Manor’s private gardens on a balmy summer evening, guests sat down to an enviable six-course dinner accompanied by an incredible flight of ex-château back vintages of Ch. Lafite Rothschild, from 1960 to 2010, and two beautifully mature magnums from Lafite’s sibling estate, Ch. Duhart-Milon. Domaines Barons de Rothschild International Director Jean-Sébastien Philippe joined us for this remarkable journey exploring one of Bordeaux’s most renowned First Growth châteaux before we retreated to the charming, characterful Five Arrows Hotel located a stone’s throw from Waddesdon Manor. Cheval Blanc In June, we held our first event that included a magnificent overnight stay outside the UK in the historic wine-producing region of Bordeaux. Over the course of two wonderful days, guests walked among the vines and cellars of two iconic estates – Ch. d'Yquem and Cheval Blanc. Two of the region’s most respected winemakers, Pierre Lurton and Pierre-Olivier de Clouet, joined us as we explored these highly coveted estates through private vineyard and cellar tours, incredible culinary experiences at both properties and superlative flights of ex-château vintages.  Following a lunch and tasting at Ch. d’Yquem – including magical vintages dating back to 1939 – and a 14-flight Cheval Blanc dinner, guests settled into the breathtakingly beautiful five-star Château Hôtel Grand Barrail for the night, located a short distance from the neighbouring medieval town of Saint-Emilion and some of the world’s most coveted fine wine producers. The wines, company and setting were truly magnificent and we all walked away from the experience with a greater appreciation for the two wine estates. Belle-Brise: discovering the walled garden of Pomerol Our penultimate event of 2023 was a first for our experiences programme – a dinner in the United States hosted by our US arm, Vinfolio.  In November, an intimate group of guests gathered at three-Michelin-star SingleThread in Healdsburg (Sonoma County, California), to celebrate FINE+RARE favourite Ch. Belle-Brise.  Over the course of the evening, the small group were fortunate enough to taste a 23-vintage flight of Belle-Brise dating all the way back to the first commercial release in 1993. All those in attendance were gifted the rare opportunity to unravel the golden thread that connects each vintage from this special Pomerol estate. As Scott Turnbull MS – Vinfolio Director of Private Clients – explains in his Editorial piece about the night, elegance and finesse were the common themes at one of the largest Ch. Belle-Brise retrospective tastings ever held.  Host for the evening, Turnbull, shared stories from the estate’s short but mighty history, including the château’s ability to overcome adversity in its first few commercially released vintages to produce what is, for many, a desert-island wine. Special thanks to the supremely talented SingleThread team for preparing an exquisite kaiseki-influenced Japanese menu that gave the little-known, yet much-loved Pomerol property an incredible stage to demonstrate its silken and opulent wine’s almost weightless power. Two decades of Roumier’s Bonnes-Mares with William Kelley Our 2023 events calendar drew to a close in spectacular fashion with a superlative showcase of 20 vintages of one of the most legendary bottlings on the fine wine landscape, Domaine Georges Roumier’s Bonnes-Mares. An international group of collectors and wine enthusiasts from the Czech Republic, Mallorca, Geneva, San Francisco, London and Burgundy (in the form of the evening’s compère, acclaimed Burgundy authority Wine Advocate’s William Kelley) gathered on an autumnal night at London’s prestigious Connaught Hotel for an exploration like no other.  Following a Champagne reception, five incredible courses prepared by Hélène Darroze’s expert culinary team were served. Each one was designed to complement the stunning wines from two remarkable decades (2000)-2020) in the estate’s history. Throughout the evening, Kelley provided fascinating insight on each flight and vintage, bringing the wines to life for all those present. It was a truly memorable occasion, gathering to taste a flight of wines we are unlikely to have the opportunity to encounter again any time soon. 2018 Ch. Mauvesin Barton (in jeroboam) + Champagne Elise Bougy, Le Mesnil – chosen by Damien Barton-Sartorius  “To me, a meal is always about a moment. Sometimes very important ones such as announcing a baby, sometimes it’s more casual as would be a meetup with friends. I like to think that the bottle should never be more important than the moment. It should not frustrate the generous person who wanted to share a special bottle that becomes overlooked – or even worse steals the show... Unless it is the show! The special bottle then becomes a moment of its own. It is an interesting thing (and sometimes fun!) to taste great labels blind, judge them on their value/pleasure. But it tears away what wine should be: excitement. If I am going to drink a Mouton Rothschild 1945, I honestly don’t really care if it’s good or not. It’s a piece of history in a bottle that I will be sharing with friends and I would really like to know this ahead of time so I can be excited about it for as long as possible. Just like planning holidays ahead!  “Christmas is an important moment but the moment is family, not the wine that will be put on the table. I want a wine that will trigger some chat. Briefly – before enjoying the wine as a lovely drink, fuel of diverse conversations. There should be enough of it to spend some time with it. Aim for large format. We all know that even a magnum can be short…  “To be very personal here, I just got married and I will spend my first Christmas Eve with my wife’s family. A bit of home, some volume to enjoy and share: Ch. Mauvesin Barton 2018 in jeroboam is my choice for dinner. Oh but what would Christmas be without Champagne… a sneaky bottle to share only with my wife before the dinner: Elise Bougy Le Mesnil. Now I am excited for Christmas!”  Damien Barton-Sartorius is the 10th generation of his family to run the Bartons’ Saint-Julien Classed Growth estates (Ch. Langoa Barton and Ch. Léoville Barton), while his sister Mélanie is at the helm of Ch. Mauvesin Barton, together continuing their grandfather Anthony’s and mother Lilian’s legacy. 2010 Ch. Latour, Pauillac – chosen by Jonathan Maltus  “We’re drinking Ch. Latour 2010. There are 10 of us – all family – two grandparents, four parents and the rest kids. As a family we don’t enjoy turkey so we have beef Wellington – which I’m hoping this will go well with.” Jonathan Maltus is the man behind the Saint-Emilion property Le Dôme, one of Bordeaux’s original garagistes. 2001 Richebourg, Grand Cru. Domaine Hudelot-Noëllat – chosen by Charles van Canneyt “For dinner, a Richebourg 2001. Perfect to drink now and taking full advantage of the complexity and power of a Richebourg – with a good capon! We had Suchots 2017 – all about the fruit – when we put up the tree, a vintage that’s approachable young and very enjoyable!”  Charles van Canneyt is one of Burgundy’s most talented winemakers. The young vigneron is at the helm of Domaine Hudelot-Noëllat, based in Chambolle-Musigny, and also has a négociant label under his own name.  2015 Ch. Haut-Bailly + 2019 Meursault, Les Vireuils, Domaine Roulot – chosen by Véronique Sanders “It’s so very difficult to choose just one bottle… while many people start their celebration with Champagne I always love to start (and finish) with a glass of Sauternes or Barsac. Right now I am loving Ch. Haut-Bailly 2015 which is so charming and is pure pleasure! Of course I also love wines outside of Bordeaux – white Burgundy being my weakness… I have my eye on a bottle of Domaine Roulot Meursault Les Vireuils to share with the family this year.”  Véronique Sanders is the powerhouse at the helm of Ch. Haut-Bailly, the leading Pessac-Léognan estate.  2018 Paul Cluver Estate Chardonnay, Elgin, South Africa – chosen by Spencer Fondaumiere  “I grew up in Nairobi at a time when the wine scene was not nearly as advanced as it is now. My mother enjoyed her wine. My dad was a beer man through and through. What was regularly available was wine sold in five-litre boxes labelled as ‘late harvest’, with just enough sweetness to interest you to get to the bottom of the bottle – or more accurately the last dredges of the cask. I have now lived in Cape Town for the last 11 years and my wine appreciation has grown a little bit beyond the voluminous late harvest on tap.  “Christmas is a time for family and my mom and dad will be spending the holidays with me and my family. Since I last saw her, Mom has developed an appreciation for cool-climate Chardonnay and I am quite keen to crack open this bottle that has a bit of age on it. I am hoping it will be like nothing she has ever tasted before and I am hoping even more that she will like it. Dad, on the other hand, remains partial to beer, but every Christmas I optimistically open a bottle and hope that this will be the wine that converts him into a wine lover. That being said, there is not too much 2018 Chardonnay hanging about so it may not be the worst thing if this doesn't turn out to be the one.”  Spencer Fondaumiere is one of the most exciting names on Africa’s wine scene. The Kenyan chef-turned-sommelier and serial entrepreneur is now Chairman of the South African Sommelier Association and has two businesses – using his expertise to advise wine-drinkers, restaurants and producers via Slowgold and Wineyard East Africa. A trio of Bouchard’s best – chosen by Frédéric Weber  “For Christmas with my family, I have planned a 2016 Meursault Genevrières to accompany the foie gras that my sister makes herself every year. I like the combination because our Genevrières has just the right freshness and delicacy, especially in 2016, to awaken the tastes and accompany the sweetness of foie gras seasoned with a touch of Sichuan pepper and a hint of fleur de sel, a great match! With the duck, of course a Beaune Grèves Vigne de l’Enfant Jésus 2003. Two-thousand-and-three was my first vintage in the house [at Bouchard], 20 years ago already, great memory of this harvest and Baby Jesus is a nice wink for Christmas Eve! And then a Corton 2013, my mum loves Le Corton and we don't refuse her anything.”  Frédéric Weber is the detail-oriented Head Winemaker at Bouchard, one of Burgundy’s leading, quality-focused producers and négociants. He has been at the company since 2002, taking over fully from his predecessor Philippe Prost from the 2014 vintage.  Champagne Corbon, Brut d'Autrefois, Avize (and a couple of back-up bottles) – chosen by Chris Gaither MS  “Christmas is always a special time of the year for my family. My wife, Rebecca (also a Master Sommelier), who is Jewish, always looks forward to the combo of Hanukkah and Christmas celebrations back-to-back, especially with our young daughters. We tend to favour multiple evenings of delicious food and drink that we can enjoy, albeit with moderation. And she and I rarely finish a bottle when drinking together at dinner, if it's only the two of us sipping. Surprised? It’s partially because we have two kids and run two businesses (Ungrafted and GluGlu), so work doesn’t stop even after dinner! So, on Christmas evening we'll be having a low-key 'Jewish' Christmas dinner, with a few other Jewish families. We are going to order Chinese food from one of our favourite restaurants in Millbrae (Wonderful is the name if you'd like to know), and chow down on some tasty dishes with a few of our favourite bottlings from producers we admire.  “Rebecca and I are huge fans of Champagne, and most times if you ever see us sipping on something together, it's usually just that. Champagne Corbon is a tiny grower based in the Vallée de la Marne (run by Agnès Corbon – ladies rule!), but they sell a good portion of their fruit from their vineyards there. They own two hectares of vineyards in Avize, of which they use to produce most of their wines. The Brut d'Autrefois is based on a 35-plus-year-old perpetual reserve (or solera) that is roughly based on 90% Chardonnay and 10% Pinot Noir. The solera consists of a single neutral oak vat that is 50% drained each year for bottlings of D'Autrefois, and then refreshed with a new year's vintage. Delicious, exuding a bit of richness, with nice texture, and loads of complexity. We were fortunate enough to get a few bottles of these, and I think we'll be drinking the last one we have... for now... The other bottles are ‘just in case’ bottles that we love.  “2018 Domaine Weinbach, Riesling Schlossberg, Grand Cru, Alsace: Who doesn't like Riesling? Any sommelier with street cred will tell you to drink more Riesling – it's routinely underappreciated in the world of wine, and you can get fantastic examples that are made with the same care as Grand Cru wines in other regions, but at less than half the price. Weinbach is one of our favourite domaines within Alsace, and it is currently run by Catherine Faller (again, shoutout to all the ladies making the magic happen in wine!) and her sons, Eddy and Theo. This Riesling is coming from their holdings in Schlossberg, the first Grand Cru to be ratified in Alsace in 1975. The wine almost always has a deftly balanced touch of botrytis, with lovely bruised apple and peach, with a very noticeable meyer lemon twang on the finish.   “2011 Fixin, Premier Cru, Clos de la Perrière, Domaine Joliet Père & Fils: This particular vineyard is a monopole within the village of Fixin, and this bottling is 100% Pinot Noir. It is run by Bénigne Joliet, who purchased the vineyard from his other family members in 2004, with the goal of making the Clos de la Perrière one of the more famous vineyards in the Côte de Nuits in Burgundy. Rebecca had the opportunity to visit the estate and meet Bénigne back in 2014 on a visit. She purchased the bottle of 2011 Clos de la Perrière on this trip. I’m super excited to drink it with her! She’s great at putting bottles away and not touching them!”  Chris Gaither MS was born in Atlanta and started working in hospitality to help pay the bills while at college. He gradually fell into the wine side, becoming hooked and – after a stage at The French Laundry in 2008 – launched into San Francisco’s wine scene, working at top restaurants and earning various awards. He became the fourth black person to pass the Master Sommelier exam when he passed in 2022. Married to a fellow Master Sommelier, Rebecca Fineman, together they own and run two restaurant/wine bars, Ungrafted and Glu Glu, in San Francisco. 2003 Chinon, Les Roches, Domaine Alain & Jérôme Lenoir – chosen by Ivan Massonat  “Of the (many) bottles I intend to open, one is high on my expectation scale: a 2003 Chinon from Domaine Lenoir. It’s a bare bottle, without any label nor cap, that I bought from Jérôme [Lenoir] a couple of years ago, after a few hours of tasting down in his ‘cellar of wonders’. After tasting several decades, 2003 had struck me as super fresh and elegant, like magically untouched by the famous 2003 summer heatwave in France. I would like to open it for New Year’s Eve, with one my best friends from high school who’s also a wine lover – and not a label drinker!” Ivan Massonat is the ex-financier that created Domaine Belargus, the Anjou estate that has fast become one of the Loire’s most famous, shining a light on its varied terroir through a single grape – Chenin Blanc. Stellar Spanish and South American bottles – chosen by Carlos de Carlos  “This year we have some cousins from the USA that will come home for Christmas evening and dinner. As they come to try some good South American wines, I will drive them around some of my all-time favourites for dinner. So the selection will be: Baettig Los Primos Chardonnay 2021 for the aperitivo. A wine that shows the very best of the south of Chile with a finesse and minerality that I love. Then Viña Cobos Chanares Malbec 2018 – one of my favourite wines in Argentina coming from Los Arboles in Tunuyán, Valle de Uco. Really special vintage from a really unique vineyard! And the grand finale will be Vega Sicilia Unico Reserva Especial 2008-2009-2010 [the 2020 release] – not only because the wine itself, but also because it was a very special present for my birthday that a very close friend gave me… and will be tasted alongside my favourite dish, Spanish paella.” The charming Carlos de Carlos is one of the founders of Baettig, along with winemaker Francisco Baettig, a Chilean producer that is one of our favourites. A flight of Champagne, Burgundy and Bordeaux – chosen by Blandine de Brier Manoncourt  “This Christmas my family will begin with a fabulous Champagne, Laurent Perrier’s Grand Siècle Itération No. 26, which we will enjoy as an apéritif around the tree. At the table, our dinner will begin with Corton-Charlemagne from our dear friend Stéphane Follin-Arbelet, the 2008 vintage, which will pair perfectly with a lobster dish. Next is, of course, Figeac! First the 2010 vintage of Ch. Figeac – it is magnificent right now, and goes very well with truffled capon. Finally we will enjoy our favourite vintage of Ch. Figeac, the 1990. We wish everyone a very happy Christmas and a wonderful New Year!”  Blandine de Brier Manoncourt is daughter of the iconic Thierry Manoncourt who established Figeac’s modern reputation. Having studied at Sciences Po Bordeaux, she is Co-owner and General Secretary, especially involved in managing the property’s heritage.  2001 Ch. Figeac – chosen by Frédéric Faye  “My family is very excited this year to serve one of my favourite vintages of Ch. Figeac at our Christmas dinner, the 2001. This is a vintage in its full maturity, a vintage which sadly is often overlooked by wine-lovers but is in fact one of the great references of the property. Fresh, elegant, with a beautiful concentration… it will pair perfectly with ris de veau in a sauce à la morille. Wishing a happy Christmas and New Year to you and your families!”  Frédéric Faye is Managing Director of Ch. Figeac, where he has been working for over two decades, having arrived as an intern in 2002. Blanquette de Limoux, Antech, Brut Nature – chosen by Christina Stanley  “I share a holiday tradition of sipping bubbles with my mum while cooking, before any guests or family arrive. My dad suffered a stroke back in 2014, and she is his caretaker. Last year, when she tasted Varnier-Fannière Blanc de Blancs, she said, “This tastes like every good time I have ever had,” but Champagne is not what we drink while cooking. You know what’s great with a splash of orange juice? Antech Blanquette de Limoux Brut Nature. It has delightfully bright, lemony acidity, an abundance of chalky minerality, and it’s inexpensive. The main grape is Mauzac, locally known as ‘Blanquette’. Wonderful as a versatile aperitif and perfect as a Mimosa base, Blanquette de Limoux plays a starring role in any holiday gathering.”  Christina Stanley is an Advanced Sommelier and the Wine Director at The Slanted Door Napa – an outpost of Charles Phan’s group of legendary restaurants that are a reference point for fine dining and modern Vietnamese food. 2008 Merlot, Miani, Colli Orientali del Friuli – chosen by Michele Dal Forno  “I think I would pick a Merlot from Miani. Enzo, the owner, is truly the ‘last of Mohicans’ of vignerons in Italy, as he is seriously devoted to his vines and the wines he makes are a pure expression of each varietal he grows. I was lucky enough to taste many of his wines last summer with himself and some other friends and I was shocked by the genuineness of them all. In particular the Merlot 2008 was so fresh and rich that I was literally blown away when I tasted it. If you want to understand how an authentic Merlot should taste, Miani is the one.”  Michele Dal Forno is one of Romano Dal Forno’s sons, founder of the legendary eponymous Valpolicella estate  1988 Ch. Montelena, Napa – chosen by Maya Dalla Valle   “After a fantastic 2023 harvest, we are relaxing and celebrating this holiday season. At our most recent team holiday dinner we decided to open a magnum of 1988 Ch. Montelena to commemorate the successes of the 2023 growing season and vintage. With the recent passing of Mike Grgich, it was also an homage to one of the great winemakers of Napa. The wine was stunning, and well appreciated by all of us as red wine producers.”  Having travelled and made wine around the world, Maya Dalla Valle returned to Napa in 2017 to make wine with her mother Naoko at Dalla Valle, as well as embarking on a new project in collaboration with Ornellaia, DVO. 2016 Champagne Henriot, L’Inattendue – chosen by Stefan Neumann MS  “Expect the ‘unexpected’! Henriot’s single expression of Avize called L’Inattendue (translating literally as ‘the unexpected’) from the 2016 vintage is something I look forward to sharing with my family on Christmas Day. Full of energy, this pure Chardonnay gives me on the one hand the comforting softness of spiced pear and golden apple, but on the other hand the razor-sharp freshness of lemon and orange peel. This, in front of the family’s Kachelofen (tiled ceramic stove), paired with a freshly cured trout, might sound simple yet is heaven to me. If life has taught me one thing – you can’t beat an old-time classic.”  Austrian-born Master Sommelier Stefan Neumann cut his teeth at restaurants in Vienna and Salzburg before moving to the UK. He’s worked at many of Britain’s most illustrious establishments, most recently on the floor at The Fat Duck. Some of Nicolas Champagneux’s earliest memories are of life in the vines – of the hubbub of harvest with his grandparents. It’s not the hard work that he recalls, it’s “des bons moments de famille” he tells me – the convivial spirit that infused the air. He grew up in the heart of Côte-Rôtie, spending weekends and holidays in his family’s vineyard – a swathe of Les Grandes Places, a prized site in the commune of Verenay, where his great-grandfather planted vines at the start of the 20th century.  Les Grandes Places is an extraordinary site – with the most famous producer arguably Jean-Michel Gérin. In the north of the Côte Brune, in a southwest-facing amphitheatre, this steep site has crumbly mica schist soils, which allow the vines’ roots to drive deep into the bedrock. It’s home to some very old vines – such as the centenarian plantings that Champagneux farms – and produces wines that are beautifully elegant yet with dark, fleshy power. Champagneux has almost two hectares here, having the largest holdings. Nicolas’s uncle André took over running the vineyard after his grandparents, while his father Gérard went to work in a factory. There wasn’t enough money for both brothers to join the family business back then, with Côte-Rôtie not nearly as sought-after as it is today. Other than a couple of barrels for personal consumption, the family didn’t make wine, farming the site and selling almost all the fruit to Guigal, one of the Northern Rhône’s most famous names.  Indeed, beyond the family vineyard, Nicolas spent a lot of time at Guigal – after his father Gérard left life on the factory floor to head up their viticulture team. From 16, Nicolas would work there in his holidays to earn some money. When Champagneux turned 18, he needed to find a job: he was determined not to work in an office and loved being outside, so he ended up becoming a high-wire electrician – working with huge currents of 20,000 volts. “You were never in the same place, each day was different, each task was different – so there was no monotony,” he says. He often finished his day early, and – a farmer born and bred, unaccustomed to the concept of relaxing – would go help in the family vineyard.  When his uncle passed away, there was no one else to take over the domaine – so he stepped up to the plate, keen to ensure his family’s heritage was preserved. He decided to start keeping the fruit and making wine under the family name, wanting to see the year’s efforts captured. He knew how to work the vines but had never dreamt of being a winemaker – but, never one to be put off by a challenge, he learnt on the job. That was 2014, and the wines have rapidly earned him a reputation in the region. The family cellar had the essentials, but the first few vintages were made with the bare minimum – with a new cellar built in 2016 (Yves Cuilleron advised on the project).  Almost a decade after he left the world of pylons, transformers and conductors behind, life might follow an annual cycle, but it’s as un-monotonous as it was before. Nicolas works as a one-man band and values the independence that brings – managing his own time and being his own boss. “There is still a lot to do and each year is different,” he tells me. He hopes his son will join him at some point – he was born in 2009, and his uncle put away a stash of wine from the vintage, some of which is set to be released for its 20th anniversary in 2029.   Climate change is at the forefront of his mind, with harvests now early September and even August versus October under his uncle. Where they used to struggle to get 13% potential alcohol, his wines often sit at 14-14.5%. He’s now working with grass cover, deleafing less and using a little whole bunch in warmer years to preserve freshness in the wines. Otherwise, little has changed in the decade since he started – he continues to work as simply as possible, looking to translate the vines he grew up amongst into wine. And that’s just what he does: the wines are elegant expressions of Les Grandes Places, perfumed and suave, with a fine grip of tannins and an underlying savoury salinity, ageing beautifully – as a mini-vertical of the 2015, 2016 and 2017 vintages showed recently.   The Nicolas Champagneux wines  From his four hectares of vines, Nicolas Champagneux makes three wines: an IGP Vin de Pays des Collines Rhodaniennes La Rémise and two Côte-Rôties, Les Grandes Places and La Dédicace, all made with 100% Syrah.   La Dédicace comes from the younger vines in Les Grandes Places, with a “mere” 40-60 years behind them on average. Around 6,000-7,000 bottles are produced of this “baby” Grandes Places.   Les Grandes Places comes from his oldest vines, averaging a little over 100 years in age, with some planted in 1910. Just 1,500 bottles or so are made of this wine each vintage.  Both the Côte-Rôtie wines are made in exactly the same way, mostly de-stemmed with  little whole-bunch added in warmer vintages and fermented with indigenous yeast, reaching a maximum 28-30°C, and spending around three weeks on skins. The wine then spends 20-24 months in old oak before bottling.  Nicolas Champagneux Côte-Rôtie Les Grandes Places: a vertical tasting  2022 Côte-Rôtie Les Grandes Places: This is packed with spicy intensity – clove and cardamom along with a hit of Szechuan pepper. The palate offers a juicy lushness, layered with deep, concentrated dark cherry fruit and a twist of black tapenade, with mouth-coating tannins and all refreshed by a line of vibrant acidity. A baby now, best approached from 2030.  2021 Côte-Rôtie Les Grandes Places: A really impressive 2021, poised and powerful, Champagneux’s Les Grandes Places needs air but gradually reveals pepper spice and more delicate, lifted, violet florals. There is, however, power and weight to the palate – more than you might expect from the pretty nose, with a savoury firmness, supple but structured tannins and juicy acidity. It’s dark and brooding, gothic with its haunting florals, with a long, mouth-watering, saline finish. Approach from 2027.  2017 Côte-Rôtie Les Grandes Places: The 2017 Les Grandes Places combines delicate florals with a bloody, iron note on the nose, leading on to a palate layered with bramble fruit. The tannins are round, supple and soft-textured, with tangy acidity that cuts through the concentrated fruit, while the long finish is scented with white pepper and parma violets.  2016 Côte-Rôtie Les Grandes Places: This 2016 is in a gorgeous place. Heady incense combines with sweet cherry fruit and a touch of smoke on the nose, leading onto a palate that you sink into – the wine soft and supple, with waves of sweet fruit, yet all cut by an intensely saline, savoury edge. Fresh and flawlessly balanced, decant and enjoy now and over a good decade to come.   2015 Côte-Rôtie Les Grandes Places: The sternest of the trio of 2015, 2016 and 2017, this is a powerful and impressive vintage of Les Grandes Places – with all the best characteristics of the year. The wine is dark and broody, compact and amazingly primary still, with black cherry fruit and blackberry filling the nose. On the palate, however, it has amazing purity and intensity, with a crystalline quality to the fruit, plenty of acidity to complement its concentration and the firm tannins. Smoky, saline notes linger in the mouth, with a dusting of petal florals on the finish. We have unearthed an absolute gem in the guise of Rosso della Centa, a 100% Merlot wine grown on just one hectare of a distinct marl clay hillside in Friuli, Italy. The wine is the creation of one of Italy’s top winemakers Nicola Manferrari who first produced the wine in 1985 and has gone on to release it only in top vintages, producing just 1200 bottles per vintage. 

As we have managed to source a small parcel of Rosso della Centa 2010, we explore the history of this incredible and rare wine.  Friuli ranks highly among Italy’s finest regions for white wine production, producing some of the most vibrant, mineral, saline whites on the planet. The global reputation of the top wines of Friuli continues to grow, gaining fans throughout the world and firmly positioning it on the global fine wine map.   Whilst more famous for their white wines, top grower Nicola Manferrari has a very special one-hectare plot dedicated to red wine. On taking over the family vineyards in 1982, Nicola was not happy with the quality of wine coming from this Merlot site. So much so he took to studying French and French winemaking to learn the secrets of Bordeaux and then apply these techniques to his own wine, to get the best out of this unique site. He states that François Champagnol’s Elements de physiologie de la vigne was one of the most intellectually stimulating reads of his life. Nicola Manferrari is one of Friuli’s original trailblazers. Along with Mario Schiopetto, Josko Gravner and Silvio Jermann, Manferrari was just one of a handful of producers in the 1980s who had the vision and courage to follow his convictions.

He experimented with the 1982,’83 and '84 vintages before he was happy with the techniques he had adopted and, matched with the perfect weather, managed to produce something exceptional, releasing the inaugural Rosso della Centa in the 1985 vintage. Nicola was confident that he could create the first world-class red wine from the region and was not swayed by his neighbouring premium sites opting to plant Cabernet Sauvignon rather than Merlot. But for Nicola he believed the Merlot was perfect for the clay and collio marl soils in which Cabernet Sauvignon struggled.   The ’85 was a critical success, described by the critics as the "First Great Friuli Red". Other greats of the region include Enzo Pontoni of Miani fame and Christian Patat from Ronco del Gnemiz have followed in his footsteps making incredible Merlots from the Friuli region.
Nicola Manferrari continued to improve the wine buoyed by its critical acclaim, further reducing the yield, increasing the vine density (more than 7000 hectares per hectare), introducing shorter pruning techniques, using no fertiliser and complete grassing in the vineyards to improve the soil health. The wine is fermented in small 12 hl wooden vats and are matured in small oak barriques for four years. Only the finest vintages are released as Rosso della Centa. 
In the summer of last year Monica Larner (Wine Advocate) had the opportunity to taste some more recent vintages of Rosso della Centa. “Looking over my scores, I can't help but notice how consistent they are across vintages and varieties. Results like these are hard to achieve, but not at Borgo del Tiglio. She goes on to describe the ’06 as “musical and operatic in character… there is complete harmony and silkiness here in another gem from Borgo del Tiglio’s cellar”.

Larner did not have the opportunity to taste the mythical 2010 but we pulled a cork on it this week to find out how the wine has developed and we were blown away by the quality. This is a superb rendition retaining everything that is great about Italian wine – the acidity, freshness, dried floral notes and herbal spice along with all the greatest assets of fine Merlot – the rich expansive multi-layered tannins that provide tremendous depth on the palate and the rich mid-palate juiciness full of black fruits and now with age a beguiling leather and earthy savoury notes. The wine has tremendous energy whilst showing handsome tertiary development and to retain so much acidity in a grape that often lacks it underscores just how fantastic this wine is. 

Nicola believes this steep southwest slope of marl and sandstone is perfectly adapted for his old vine Merlot providing a marked elegance and complexity in his Rosso della Centa. The 2010 certainly reflects this and with only 1200 bottles produced virtually impossible to find. This is a unique parcel unlikely to be seen again and is entering into a beautiful drinking window. This wine is a piece of Italian winemaking history and one for any afficionado not to miss. 

It is always difficult to put fine wine into words but Nicola Manferrari’s philosophy outlined on his website gives possibly the greatest insight into this pioneering spirit of Friuli:
“I believe that in effect, the path I have followed has left its mark on the character of my wines which have, according to many, their own maker’s trademark. Over the last twenty years, I have transformed, studied and debunked certain common beliefs and have also overcome - while allowing plenty of room for the sacrilegious power of empirical observation – some of my own personal taboos. I have observed, researched and innovated in the face of hypocrisy and prejudice. 

"Often, however, while doing this I have unwittingly renewed ties with ways of the past which were interrupted by a modernity which had lost all sense and memory. It was probably my unorthodox approach to the world of wine that has guided my choices, meaning this also includes my checkered educational history; I was at the same time a child of scientific teachings and an orphan of technology. This has taught me to take absolutely nothing for granted, and the words of Galileo, which accompany me wherever I go, have taught me to be humble when facing all situations, and to be dignified when dealing with people.”

Rosso della Centa: The first great Friuli red

It’s easy to sneer at Sauvignon Blanc. Its success has been its downfall. It’s one of the most popular varieties planted around the world – coming in just behind Airén (grown widely for distillation, rather than wine) and Chardonnay. In New Zealand alone – a nation that has fully tied its cart to Sauvignon Blanc – 26,559 of its 41,603 hectares of vines are dedicated to the grape (for context, the entirety of Burgundy represents a little over 28,000 hectares). It accounts for over 86% of the nation’s wine exports (the next most exported variety is Pinot Noir, at less than 4%). And yet, wine cognoscenti are inclined to dismiss it.  The variety’s historic heartland is the Loire, where it was first recorded in the 16th century, but has since spread rampantly around the globe, finding its way into almost every corner. Indeed, there’s even a remote stretch of Burgundy dedicated to the grape (Saint-Bris). It also gave us Cabernet Sauvignon, of which it is a parent, along with Cabernet Franc – which is some legacy.  In her benchmark Vines, Grapes & Wines, Jancis Robinson MW describes Sauvignon Blanc as “aggressively recognisable”. With descriptors such as cat’s pee, gooseberry, passionfruit, capsicum, grapefruit and cut-grass stereotypical, it’s hard to disagree – but there’s much more to the grape. Today, the distinctive variety is responsible for the flinty styles of Sancerre and Pouilly-Fumé, more waxy, textured Bordeaux Blanc (where it is most often – but not always – blended with Semillon and aged in oak), the exuberantly pungent styles of Marlborough, richer, weightier northern Italian examples (not to mention many with extended skin contact) – and everything in between.  Ch. Margaux’s Pavillon Blanc is one of the most famous examples of Sauvignon Blanc – and rare in Bordeaux (at the top end of the category, at least) for not including any Semillon, which has never been planted on the site. Their archive has records back to the 18th century of a “vin de sauvignon” from the property. Tasting the wine, it’s always hard to believe it hasn’t been rounded out by its local partner – and this, Aurélien Valance, says is all to do with achieving the perfect level of ripeness.  “When [people] think Sauvignon Blanc, they think about unripe Sauvignon Blanc. When it is ripe, it can have very complex and floral perfume – but the problem is that it is very difficult to get it ripe and keep enough acidity,” the Deputy Managing Director explains. Working with old vines (around 50 years old), low yields and strict selection allows Ch. Margaux, however, to produce an exceptional, age-worthy white – one that “smells of Sauvignon Blanc – but not the Sauvignon Blanc that people are used to”. For Christian Patat – the winemaker behind L’Età Più Bella and Ronco del Gnemiz, who also worked at Miani – the perfect harvest date is key to giving Sauvignon “verticality”, especially in Friuli where the wines are naturally bigger and richer than those from the Loire. If you pick too late, it becomes all about the variety – rather than the site. For him, Sauvignon Blanc is an “amplifier of different soils”, which is why he has ended up making six different single-site expressions with his wife at Ronco del Gnemiz, all made the same way so that the terroir shines through in each. Omri Ram – of Société Civile du Ch. Lafleur – echoes this idea, feeling there’s a particularly narrow window for picking Sauvignon Blanc, before the variety becomes a caricature of itself. He argues there is a “valley between two aromatic peaks” in which Sauvignon Blanc must be harvested, a window that lasts maximum three days, but as little as 20 hours in a hot vintage – so it’s essential to watch your fruit carefully, and make sure it’s on the right soils (with clay to help retain freshness and avoid hydric stress).   Patat – like the team at Ch. Margaux – is fortunate to farm old Sauvignon vines, between 40 and 50 years in age. This is ancient for the variety, which is naturally vigorous and very susceptible to Eutypa and Esca (grapevine trunk diseases which slowly kill the vine), meaning finding vines above the age of 30 is increasingly rare. Marco Simonit – the man behind the Simonit & Sirch method and master pruner to the world’s leading producers – feels that vine age, however, is key to making a “vin de lieu” (a wine of place) – and therefore combatting the onset of disease is essential for crafting great Sauvignon Blanc. He notes how it’s not just that Sauvignon (referenced affectionately as “this guy” during our conversation) seems to be more inclined to develop Eutypa/Esca, but it suffers more when diseased – showing its symptoms much more than other vines, as is most clearly seen in Bordeaux where it is farmed side-by-side with Semillon.  “I think we need to reconsider the spacing and architecture of the vines,” Simonit says. He feels that these older vineyards have survived thanks to their wider spacing, allowing each vine more room to sprawl naturally. Robert Mondavi’s I Block is a prime example – the plot of Sauvignon Blanc in To Kalon planted in the mid-1940s. These untrellised, freestanding tree-like plants stand proud and sparse, producing wine that – in Mark de Vere MW’s words – offer “a different type of complexity, elegance”, yielding just half a ton an acre. Simonit is convinced that the increased vine density of the last 30 years has contributed to the higher incidence of grapevine trunk diseases, and this type of “dynamic” architecture, exemplified by the unfashionable California sprawl, may be the solution to Sauvignon Blanc’s short life-span, helping minimise pruning cuts and giving it the space it needs – but does need to be adapted to the individual site and climate.   Andy Erickson – winemaker at Favia and star consultant – now makes wine in To Kalon (under the To Kalon Vineyard Company label) – but has fond memories of I Block, as he would trespass to taste the Sauvignon Blanc at harvest time – loving the flavour of the grape just on the cusp of harvest. He was the one who suggested planting Sauvignon Blanc at Screaming Eagle – which produces a tiny amount (30-50 cases only) of incredibly sought-after Sauvignon. There was a tiny corner of the vineyard with more alluvial, clay soils – a site that wouldn’t produce a Screaming-Eagle-grade red, so he suggested it be used for Sauvignon Blanc and Musqué (an aromatic clone of the variety, also planted at Eisele Vineyard – where it represents 80% of the vineyard). “The challenge with Sauvignon Blanc is you really need to plant it on Cabernet Sauvignon ground to make the best wines, and so it takes someone who’s really passionate – or maybe a little crazy to do that,” Erickson says.  While the Loire’s top wines have always been accepted as fine wine, as with top white Bordeaux, Sauvignon Blanc under its own name didn’t make it big until the late 20th century. Robert Mondavi shifted perceptions in California – but only by rebranding the variety. In the late 1960s, at a time when most Sauvignon Blanc in America was low quality and sweet, he created Fumé Blanc – legally registering the term as a synonym for Sauvignon Blanc with the TTB (Alcohol and Tobacco Tax and Trade Bureau). With its European feel (inspired of course by Pouilly-Fumé), he made dry, serious Sauvignon Blanc – and, at the top end, fermented the wine in oak. At the time, it was radical – and soon the wines earned international acclaim.  Meanwhile, something was going on Down Under. David Hohnen – who had just won a Jimmy Watson trophy for his Cabernet Sauvignon at Cape Mentelle, Margaret River – was visited by a handful of travelling Kiwi winemakers. They left him with a bottle of something new, a Sauvignon Blanc (which had only been planted for the first time in New Zealand in 1973). “He hadn’t tasted anything like it before,” Jim White, Cloudy Bay’s Technical Director, tells me. Hohnen happened to have a Kiwi cellar hand at the time, and asked him to bring back more Sauvignon when he went home for Christmas. In 1984, Hohnen went to New Zealand. He persuaded Kevin Judd – then winemaker at Selaks – to come make wine for him. They couldn’t find Sauvignon Blanc at first, so the first vintage in 1984 was a Marlborough Semillon. The following vintage, they bought a truckload of Sauvignon Blanc from Marlborough, and ferried it all the way up to Gisborne to make the wine.  With such a small population, machine harvesting was the only option in New Zealand – and this, combined with the additional skin contact from the fruit’s minimum 12-hour journey to Gisborne, extracted more tannin than they’d wanted, but also thiol precursors – the compounds responsible for Sauvignon’s pungent aromas. Hohnen didn’t put “New Zealand” on the front label, feeling people wouldn’t take it seriously. By 1986, they had built their own winery (having persuaded an angling-loving Scot to stump up a million dollars to fund the project, on the basis that he’d have access to the best trout fishing in the world). The vineyards needed work – and Hohnen’s experience was key, bringing knowledge of canopy management, reducing water and nitrogen and reducing yields. The wines took off, and Cloudy Bay was born.  For White, vineyard location is the foundation of top Sauvignon Blanc – needing stony, free-draining soils to contain the variety’s natural vigour, hence why they prefer the heart of the Wairau Valley. Combine this with enough leaf plucking to allow for sufficient airflow, but avoid over-exposing the fruit, and this allows them to harvest ripe fruit that still has beautiful acidity – echoing Valance’s views at Ch. Margaux. The important thing for them is to avoid the “big green monster” – ensuring they have no methoxypyrazines (green compounds), which happen to be some of the most stable compounds during maturation, and don’t disappear with time in bottle.  In New Zealand, the variety has been a victim of its own success – shoehorned as crisp, fresh and nothing more. And while that style brings undeniable joy, there are an increasing number of wines being made with wild yeast and oak to produce a less exuberant and primary style – such as Dog Point’s Section 94 and Greywacke’s Wild Sauvignon. In the Loire, it seems to be increasingly common to see oak, while in Bordeaux, there’s a shift away from, or toward reducing the use of, wood. As Pierre-Olivier Clouet of Cheval Blanc told me, in the past white Bordeaux was “too green, too excessive, too much, too oaky, too fat… too boring” – he feels that the answer isn’t necessarily to reduce the proportion of new oak, but to increase the size of barrels and age the wine longer, so that the oak adds a silkiness, density and bitterness to the finish – but not to the aromatics.   A common accusation of Sauvignon Blanc is that it doesn’t age – something many feel is a prerequisite for “fine” wine. But that simply isn’t true. If you’ve never tasted old Marlborough Sauvignon, you’re missing out. I had a bottle of 1999 Cloudy Bay a few years ago – and it was extraordinary. White, who has tasted many more mature vintages from the iconic estate than me, describes it as a little like old Semillon or Loire Chenin – developing toasty, honeyed notes, yet it retains the overt freshness and expressiveness of the distinctive style. Ch. Margaux was recently reconditioning their stocks of Pavillon Blanc, and Valance had the opportunity to taste vintages back to 1926 – almost all of which he says were fabulous. He feels it ages at least 20-30 years, and more in top years.  Today, things have come full circle – Sauvignon Blanc is a brand of its own, and Robert Mondavi is even dropping the “Fumé Blanc” phrasing from its more entry-level bottlings of the variety. But, despite this and the undeniable quality of the wines, Sauvignon Blanc never quite seems to steal the limelight. “There’s a glass ceiling for Sauvignon Blanc,” White says. “It’s about 93 points.” The Cloudy Bay team was delighted when their oaked, limited-edition Te Koko cuvée earned 95 points in Decanter last year – but it’s the exception, rather than the rule. And even though they’ve had wines score higher than Pavillon Blanc, they’ll rarely be considered in the same category as either those, or the likes of the Loire’s Dagueneau and Vatan. “It’s too easy for people to understand, it makes it too enjoyable – and therefore it’s no longer the coveted thing that you have to have years of education to appreciate,” White says.  In an age of unicorn-hunting, “popular” can be the ultimate insult. And yet there’s a reason that so many people have fallen for the charms of Sauvignon Blanc. Four days, 28 producers and over 300 wines tasted (with a few additional bottles enjoyed over dinner): it’s been a busy few days, travelling up and down the Côte d’Or tasting the 2019 vintage.   It’s a strange time to be travelling – and sending a team to Burgundy, with the burden of quarantine and potential risks, wasn’t taken lightly. We’d normally taste the vintage over three trips – in September, October and November: this year, we weren’t sure what would be possible. For Bordeaux en primeur, we were able to taste samples in the UK. But for Burgundy, with the tiny volumes involved – especially in a vintage like 2019 where yields are down by up to 50% – such an endeavour simply isn’t possible for the vast majority of domaines. These producers just don’t have enough wine to send a bottle of each cuvée – of which there may only be one barrel – to distributors around the world.  It might seem an indulgence to travel to Burgundy to taste fine wine. But tasting the vintage is about so much more than just the wines: it’s about being able to talk to producers, get into the vineyards and cellars, to really see what made the wines the way they are. It’s about us being informed, to be able to share with our colleagues and customers exactly what we think of the vintage – which wines we loved, which we didn’t, and, most importantly, why. It’s also about supporting our producers – doing what we can for these true artisans, many of whom are much more than business contacts, but have become friends. Some are fledgling wine projects that are already facing the challenges of small yields (as in both 2019 and 2020), as well as today’s economic uncertainty – and we want to, and must, champion these exciting projects, for they are people we believe are doing truly great things.  A small group from FINE+RARE visited the region in July, tasting a handful of the 2019s – but in an even more youthful stage, when the wines can be hard to read. Nevertheless, these early conversations with producers formed the foundation of our visit. It was clear, however, that we needed to taste – and talk – more. So we decided to send a group of six, that would be divided in two to fit into the often small cellars and wineries of the region’s various villages, and to cover as much ground as possible over four days. 
Of course, things were a little bit different this year. Each of our groups had a mini-van so that they could socially distance at all times, wearing masks as we dashed up and down the D974. Wherever possible, we wore masks, as did the vignerons we visited. Bottles of hand sanitiser had appeared in the corners of barrel rooms, or at the doors of wineries. While their smiles might have been covered, each one welcomed us warmly – offering an amazing amount of time and wisdom with us as they shared precious samples of their 2019s, guiding us through their range and the vintage. The region as a whole was quiet. As one producer explained, normally he would have four or five visits a day at this time of year; with Covid, he’s only doing that number a week. As a result, winemakers seemed particularly happy to see us, and were – fortunately for us – able to share even more of their time than normal.  Tasting was, this year, a joy – the ripeness of the vintage, combined with its acidity, makes even these youthful samples effortless to taste. The wines are superb – and we’ll be publishing our full thoughts on the vintage in due course. We hope to go back to taste even more, if we can, although it seems increasingly unlikely. I’m writing this from the Eurostar, returning to London just as it shifts to Tier 2, with socialising outside your household banned as of today. With lockdown looming (not to mention our 14-day quarantine), our dinners in Beaune became a final hurrah – as I’m sure others did in London this week, seizing the opportunity to break bread, open bottles, share them and talk about them.
