It’s not often words fail me. But finding the right words to describe Dr Bill Lumsden to those who haven’t had the great fortune of meeting him has rendered me a little dumbstruck. Many have dubbed him the “Willy Wonka of the whisky world” for his creativity, jaunty style and flair. His latest project, a purpose-built home for innovation named the Lighthouse, where Lumsden can innovate to his heart’s content and create all manner of whacky and category-bending whiskies, somewhat perpetuates this narrative of the eccentric whisky-maker. But, I’d argue, the good doctor is far more than this. He is, first and foremost, an incredibly accomplished scientist. His work at Glenmorangie and Ardbeg over the past 26 years – maintaining the iconic distillery characters and launching innumerable products for each – is nothing short of sensational. He is a workhorse, as well as, it would seem, a bit of a clothes horse. “I’m a bit of a shopaholic,” he tells me with glee. “I love buying clothes.” This isn’t the sort of confession I expected when sitting down with the Director of Distilling, Whisky Creation & Whisky Stocks in November last year. “If something’s in fashion, I wouldn’t be caught dead in it because other people are wearing it,” Lumsden continues. “So I tend to wear things which have been out of fashion for many years or are yet to be in fashion – and it’s just a little facet of my personality, unfortunately.” This, while slightly unexpected, actually makes a great deal of sense when you cast an eye over his professional life. Lumsden has always been the trendsetter rather than the disciple. And he’s quick to assert that his avant-garde attitude extends beyond apparel. “I have absolutely no interest whatsoever in what’s in fashion and what’s not in fashion [in the whisky industry]”, he says. “When I’m doing something it really is all to do with will I like the taste at the end of the day? Will it complement that character of the Glenmorangie or the Ardbeg spirit?”. Since joining Glenmorangie in 1995, Lumsden has been charged with “maintaining and hopefully slightly improving the spirit character” and innovating. While once his role was divided equally between these two tasks, new product development and innovation now take up the majority of his time. “It’s got to the stage now where the demand for new products is almost impossible to keep up with,” he says matter-of-factly. While this might be fatigue-inducing for some, this constant pressure to innovate exhilarates the inquisitive doctor. “I’m a scientist by training,” he explains. “It’s in my blood to experiment, and I’ve always been a curious individual who gets bored very easily and likes to try new experiences, in every aspect of my life. So the move to Glenmorangie was heaven-sent for me from that perspective,” he says with unfettered glee. The decision to build Lumsden’s Wonka-esque Lighthouse was driven to a certain extent by necessity, he tells me. “The Ardbeg and particularly Glenmorangie distilleries have been running absolutely flat-out for the last 12-15 years,” he says. “For me to interrupt the production cycle to get access to the distillery for three to four weeks of a year, where I wanted to try some radically different things was proving increasingly difficult. And also some of the things I wanted to do, I just simply hadn’t been able to do that with the existing distillery plant. “So the Lighthouse has been established to allow me to experiment but while maintaining the volumes that are required for future bottlings and also to try things that I simply can’t do in the main distillery.” These things range from the smallest alteration in primary production to radical innovations, and everything in between. “Some of the time it can be a very, very simple change,” Lumsden tells me. “It can be something as simple as offering one of your expressions in a natural, cask-strength form, for example, and other times it can be something dramatically different, where you’re actually using completely new materials. I am continuing to experiment with just about anything you can think of.” For the past 10 years, this experimentation has largely focused on different aspects of production. “We’re about to see some products coming out for both the Glenmorangie and the Ardbeg brand where I’ve been playing around more with primary production – it’s been great fun,” he teases. The challenge with this approach, he says, is two-fold. “You’ve got a very long lead time until your product comes to market,” he explains. “Sometimes you’re talking 10 years’ maturation.” At the very least. If you’re experimenting with barley varieties, or looking at fermentation profiles, you have an even lengthier wait. Secondly, by the very nature of these experiments, the difference between spirits is most emphasised in the new-make. “For example, using the barley varieties, it’s not giving you black and white differences,” Lumsden explains. “It’s more shades of grey, and you really pick that up in the new spirit. “But after many years of maturation, you risk losing these differences. So you have to choose your cask type accordingly to try and make sure that you still have the point of difference coming through.” Lumsden says Glenmorangie is launching a product in 2022 that is an experiment he’s always wanted to carry out. “I did this many, many years ago. I can’t say any more about it at this stage, but I will probably bottle this [whisky] slightly younger than my original target, which was 12 years, because I don’t want to continue to minimise the difference in character, if that makes sense?”  In addition to maintaining the two distillery’s very distinct characteristics, and inventing all manner of whiskies, Lumsden sits on a number of prestigious judging panels. In this capacity, he tastes hundreds upon hundreds of whiskies and sees first-hand the changes in the industry and trends that are being adopted – good and bad. He says there has been a “real divergence” in recent years. “Some of the whiskies I taste have become much more characterful and I’m delighted to see whiskies that are non-chill filtered,” he says hopefully. On the controversial subject of chill filtration, the process whereby distillers remove esters and fatty acids to prevent the liquid clouding at low temperatures, Lumsden ardently believes less is more. He does, however, acknowledge its place in markets where drinkers might not understand that cloudiness is caused by oils coming out of suspension rather than a fault. But, he believes, producers are taking its use to the extreme. If Ardbeg and Glenmorangie whiskies are chill-filtered, it is only ever done so “very gently”, because Lumsden feels that lipids – fatty acids from the base barley that would otherwise be removed by full chill filtration – add texture and character to the spirit. Sadly, he rues, this is not true for others who are “very brutally” applying this technique to hasten up processes, and character is lost as a consequence. Corner-cutting exercises like this, speeding up distillation methods and reusing barrels too many times are becoming all too common, he says. When it comes to producing or judging a perfect whisky, Lumsden says he’s after complex harmony. “I’m looking for the flavours to be nicely integrated together and not having any one aspect dominate,” he says. “That’s what I think good quality whisky, particularly Scotch whisky, should be". “The final thing I’ll look for is the length and character of the aftertaste of the whisky,” he explains. “Because I really don’t like to see a whisky just completely fade – it shouldn’t do that. It’s a richly flavoured product and it should linger on the palate for a while.” Whether he’s sitting on a judging panel or looking out from his monstrously tall Roald Dahl-esque Lighthouse, Lumsden’s vantage point, you sense, will always be forward-facing and progressive. The remote Hebridean isle of Islay has an almost otherworldly quality about it. For centuries, this eerily beautiful and beguiling postage stamp of Scotland produced whiskies that elevated some of the world’s most well-known blended malts. In recent years, however, Islay has stepped out from the shadows and become one of the most lauded single malt regions in the world – a position cemented this month when a cask of Ardbeg sold for a record-breaking £16 million.   So just how did this small whisky-producing region become the most collectable name in the world?  Adam Hannett started working as Head Distiller at Bruichladdich, on the southwestern tip of the island, in 2006. He says the difference between Islay, and Islay whisky, then and now is “pretty transformative”. When he joined Bruichladdich, the Victorian distillery was six years into what would become one of the greatest distillery revivals the whisky industry has ever seen.   “Inside the distillery gates, we were at the beginning of our journey,” the Head Distiller tells me. This journey included distilling an organic spirit, running barley experiments and bringing barley-growing back to Islay. The latter, Hannett says, has “changed the landscape of the island completely”. He adds: “Gordon, our Assistant Distillery Manager, talks about how we’ve turned fields golden, which sounds a bit cheesy, but it’s true.”  Journey due east and you’ll find Bowmore – Islay’s oldest and one of its most coveted single malt producers located in the island’s capital. David Turner, who was born and raised on the island, has worked at the distillery for 30 years – for the past 10 as Distillery Manager.   “Thirty years ago we were producing a lot of our spirit for bulk, for blending purposes, and we had a few thousand tourists a year,” he tells me. “We probably had one full-time visitor centre manager and a couple of seasonal tour guides that would come on for the summer.  “I think we’ve now got nine full-time staff in our visitor centre who do tours all year round and we’ve moved away from bulk blended whisky to just being a single malt specialist now.”  During Turner’s career at Bowmore, the distillery has transformed from a lesser-known producer to one of the most collectable names in Scotch whisky. Black Bowmore, Turner says, “put us on the map for being collectable”.  “When we took these samples out the casks, the whisky colour was black,” he says, “the quality was phenomenal.”  This discovery was made in the 1990s, around the same time as the wider whisky world started to take notice of Islay after whisky writer Michael Jackson shone a spotlight on the island’s quality in his pivotal work, Complete Guide to Single Malt Scotch.   As a region, Islay has faced hardship and several distilleries have been temporary or permanent casualties. Port Ellen, one of Scotland’s so-called “Holy Trinity” of lost distilleries, is arguably the most well-known victim, closing its doors after the downturn in 1983. Ardbeg was also shuttered in 1991 and was saved by the grace of God (Glenmorangie) in 1997. Today, the region is booming and the number of producers has reached a healthy nine. This number will increase when Port Ellen is resurrected by owners Diageo imminently – an announcement met with unfettered excitement last year. These closures and shifting paradigms have created a thrilling market for collectors, as whisky enthusiasts search for bottlings from bygone eras. The 1950s through to 1970s is of keen interest as whisky was being produced on a much smaller scale via traditional methods.  Traditionally, Islay was associated with peated whisky. For a time, distillers like Laphroaig, Lagavulin and Ardbeg competed against one another to see who could produce the biggest peat bombs on the market, which divided opinion. Bruichladdich blew all the others out the water when it released Octomore 6.3 in 2015, which registered 258 phenol parts per million (the scale used to determine the peat levels of whisky). For context, prior to that release, the highest peat levels were circa 167 PPM, also from Bruichladdich.   “I think there’s a hugely diverse range of flavour in the whiskies being produced across Islay at the moment,” Bruichladdich’s Hannett tells me. “It makes defining an ‘Islay’ whisky quite challenging as there’s so much variety from one distillery to the next.   “The general public almost expects a heavy smoke, almost medicinal flavour from an Islay whisky but even within our heavily peated Port Charlotte range, we have quite a soft, heathery, barbecue smoke.”    “Islay is famous for its peated whiskies but Bowmore is not all about peated,” Turner adds. “Bowmore sits in the middle of Islay. The north of Islay is very, very lightly peated. The south is very heavily peated. We’re in between the north and the south in peating levels. We see ourselves, and call ourselves, mid-peated, or a perfectly balanced Islay whisky.”  The people of Islay – Ileachs to give them their proper name – are integral to the whisky industry on the Hebridean island. Many of the Master Distillers and Blenders are locals and the vast majority of the production team hails from the island with an average population of 3,000 people. One of the most famous Ileachs is Jim McEwan who started his career at Bowmore, where he later worked as Distillery Manager before he left to lead Bruichladdich’s resurrection in 2000. McEwan came out of retirement to spearhead independent bottler Hunter Laing & Co’s new £12 million Islay distillery, Ardnahoe, saying it was an offer he could not refuse and beyond his wildest dreams.    The distillery, located on a four-acre plot on Islay’s northern coast, between Caol Ila and Bunnahabhain, overlooking the Isle of Jura, became the ninth working distillery on the island when it opened in 2019. McEwan designed the pot stills, mash tun and mucked in with every aspect of production to create a new-make whisky that he says is everything he looks for from a classic Islay: fruit, flower, sweet notes from the mash tun, baked cereal notes, smoky flavour from the peat, and bracken, heather and wild plants from the bog land. McEwan says the spirit he’s produced at Ardnahoe is as good as anything he’s tasted in 56 years.    Islay is at an interesting point in its history. New distilleries are opening, lost names are coming back to life, and many of the old guard are reaching retirement and are being replaced by younger distilling talent. There, arguably, has never been a more interesting time in its whisky-producing history.    Hannett, who is on the younger side, says: “I’m excited to see how distilleries can continue to adapt to support the local community. We’ve got a special thing here, with a booming industry and nine working distilleries.”  Turner picks up the point: “It’s good to see the old distilleries are still thriving. The new ones have got a good future as well but they’ve got a good number of years before they get a good standard core range." He adds: “A good Islay whisky I would say is between 12, 15 to 18 years. So they’ve got a good few years to get to that, never mind becoming collectable.”  Turner has quietly been amassing a collection of his own since the early 1990s. “I was in since the very beginning,” he says. “I was lucky to be in at the right time and I’ve got a big collection. It’s not just quantity or some of the new releases. It’s old and rare and quality I’ve based mine on.”  Initially, Turner collected Bowmore and slowly started adding other Islay and Scotch limited releases to his collection. As interest in whisky grew, the Distillery Manager rejigged his collection to focus on Islay malts – at one point exclusively Bowmore, Laphroaig and Lagavulin. After a period of selling certain bottlings to buy other, more expensive ones, Turner now has an exclusively Bowmore collection. He doesn’t elaborate on this but he does add: “Aye, it’s got smaller but it’s got more quality and rarity attached to it.” One suspects it is quite something to behold.  As for his distillery, Turner says Bowmore has got “good quality stuff maturing” and “some good aged stocks”. “We were family-owned up until 1994 and the family and the directors at the time had good insight. They kept good aged stocks, so we’ve got good 30s, 40s, 50s – 51, 52-year-old whisky – maturing. This good aged stock will keep the collectability going.”  With impressive aged stocks slumbering at Bowmore and its neighbours, there’ll undoubtedly be more records broken in the coming years from this enchanting Scottish isle.    Explore all our Islay whiskies or read more Editorial

If you journey to the northernmost prefecture of Japan you will find Hokkaidō. Venture deeper into the Japanese island’s stunning national parks and forests and you’ll find its native quercus crispula – the mystical mizunara. Measuring up to 30 metres in height, with long, curved branches and broad leaves, the Japanese oak tree is undeniably majestic. In recent years, this humble tree, favoured by luxury furniture makers, has become an incredibly highly sought-after commodity in the whisky world for the slightly unusual characteristics of sandalwood, coconut and incense it imparts. It is so desirable, in fact, that a single barrel can easily cost 10 times the amount you’d pay for a standard Sherry cask. If you can get your hands on one at all, that is. Mizunara hasn’t always been as desirable as it is today. In fact, track back 10 to 15 years and very few people had heard of it, let alone deigned to put their beautifully crafted whisky in it. Its popularity neatly coincides with the sudden rise of Japanese whisky and Suntory’s decision to release a whisky that had been aged, albeit fleetingly, in this Japanese oak. What many didn’t realise at the time, and arguably still don’t to this day, is how problematic the mystical mizunara is to cooper, source and use as a maturation vessel. It takes approximately 200 years before a mizunara tree reaches the desired diameter for a cask (70-80cm). It doesn’t grow in a straight line, which makes creating staves a bit of a logistical headache for coopers. It has an extremely high moisture content (mizunara literally translates as water oak), and contains more knots than other woods, which is an issue when trying to make a cask watertight. It is also porous and prone to leakage. It's fair to say that it’s not a natural choice, and historically it wasn’t used in this way. Japanese distillers traditionally used European or American oak to mature their whisky because they were heavily influenced by Scotch traditions. But a shortage of casks during and after World War II forced them to look closer to home, to their native oak tree. Fast forward to today and the number of mizunara-finished whiskies is at an all-time high. As a consequence, mizunara barrels have only become more difficult (and expensive) to source. Andrew Rankin has worked in the whisky industry for 47 years – what he doesn’t know about casks isn’t worth knowing and his connections are enviable. None more so than his relationship with one of the oldest independent cooperages in Japan, from whom he sources a steady supply of mizunara for his new Scottish Highlands distillery Ardross. He describes the Japanese oak as a “fairly recent phenomenon” that was kickstarted by Suntory – a company he knows exceptionally well from his 20-plus years at Morrison Bowmore – where they filled an “absolutely tiny percentage” of Yamazaki into mizunara a decade ago. In the years that have followed, Rankin has been watching the mizunara market closely and is sceptical as to whether there is enough supply to meet demand. “It took me years to persuade Suntory to give us some mizunara casks,” he says. “At that time, I think it was 2010, we got three used mizunara casks and we got three new mizunara casks – and that was it. And it was a one-off. We weren’t getting a regular supply of it.” Even with his connections, Rankin says he doesn’t get a committed volume of mizunara each year because it is dependent on the level of deforestation and the quality of the wood. “We were due to get 20 [barrels] in at the beginning of this year,” he says, “but we still haven’t got them because of selection problems with the wood and shipping problems.” He’s hopeful they’ll arrive before the year is out, but there’s no guarantee. From the people I have spoken to, this lengthy wait is par for the course. East Asia Whisky Company’s Christian Leusder says it takes “approximately three years before you receive a good-quality mizunara barrel”. When you’ve parted with a staggering £8,000 per cask – five times the cost of a standard European or American oak barrel – it can be galling when other producers punt for a mediocre cask, which is only partly made from mizunara or is made from multiple trees, and sell their whisky for a similar price. These, arguably, poorer imitations can be with the buyer within a month or two because they take far less time to cooper and ship. Leusder believes the “massive” difference in cask pricing and considerable delay is worth it to produce something that isn’t just “bandwagon [and] off-the-rack”. Another bone of contention regarding mizunara is the length of time the whisky has spent in barrel, and whether the cask is fully or only partly made from the Japanese oak. Suntory UK Brand Ambassador James Bowker says the Japanese whisky behemoth is “lucky” to have a “relatively consistent, quality supply chain” that has been established over many years. These relationships enable them to fully age whiskies in single casks rather than cask transferring or finishing. “You’ll see this practice across our portfolio where we use mizunara,” he says. “It gives a more rounded, complex, tertiary profile rather than a simple hit of the primary cask notes.” However, Bowker is quick to acknowledge this expensive process which requires a “significant” time investment is not always possible – financially or otherwise – for some producers. Rankin says he really doesn’t know where all these producers are sourcing mizunara casks from because they are, naturally, far more scarce today than they were a decade ago. He is also sceptical about how long some of these whiskies have spent in mizunara and believes it takes at least five years to get any influence from the wood. “At the moment, you could put your whisky in a mizunara cask, roll it about on the floor, and say it is mizunara-cask-finished,” the Master Blender says. “And you probably know, and I probably know, that it is going on.” The people who don’t know, Rankin says, are the end consumers because producers are not currently required to be transparent about this on the label. East Asia Whisky Company’s Leusder picks up the point. “If you look at what Chivas Regal are doing, they are producing a lot of mizunara single malt whiskies which are just finishes and they don’t actually have an age statement so you don’t know how long they’ve been in there,” he says. “And I personally can’t really taste the mizunara out of it.” He continues: “Finishes can be gimmicky. They can go wrong. And they do not always yield the best product.” This is one of the reasons East Asia Whisky Company dips their toe in the mizunara pool but has no intention of fully submerging its feet. Its current Macallan mizunara series stops after the third release. A mizunara-finished Springbank and Bowmore release will follow, and then Leusder says the team might try and get their hands on a younger vintage and decide to age it in mizunara until the 40-to 50-year mark, when it will no longer be a finish. Dr Bill Lumsden, the genius behind Glenmorangie and Ardbeg for the past 26 years, has pioneered experimentation on every aspect of whisky production. It is telling that he has never released a product with mizunara oak in it. He says it is the taste profile, rather than sourcing and porosity, that puts him off the Japanese oak. “If I was to take Glenmorangie new-make spirit – and I’m neither confirming nor denying that I have done this – and mature it in a new heavily-toasted mizunara oak cask for 12 years, at the end of the day, I would have something that would probably taste a little bit bizarre,” he says. Lumsden says he always recalls doing a tasting in conjunction with The Glenlivet Master Distiller Alan Winchester and Suntory Chief Blender Shinji Fukuyo in London when Fukuyo presented a fully mizunara-matured whisky. Lumsden struggles to remember if it was Yamazaki but remembers the taste profile with crystal-clear clarity. He describes it in just two words: “bewilderingly strange”. Coming from a man who invented the Russian-oak matured Ardbeg Kelpie, which he says has elements of “the smell of burning rubber when a car has screeched away”, this is quite the review. Casting an eye to the future, there is little doubt producers will continue to release mizunara-finished whiskies – certainly in the short to mid term. Leusder says he thinks it will always be popular simply because it’s so rare, but predicts there will be a larger and widening gap between high and low quality. “There will be less and less of the high and more and more of the low,” he says, “and the market will be more and more confused as to which is which.” When pushed, Suntory’s Bowker says he absolutely thinks the trend will continue and other categories will start using mizunara. But, he adds with trepidation, that he hopes producers will “respect this special wood and ensure that consumers get to experience it at its best rather than being tempted by more affordable shortcuts as you so often see in this industry”. For the time being, at least, it seems like the mystical mizunara is going to continue to enchant producers and drinkers alike. And, unless things drastically change, the onus will be on the whisky drinker to watch out for the sorcery and find the magical liquid that undoubtedly exists. Peat in whisky is divisive – both in terms of its intense flavour profile, but also its sustainability. It has long been used in Scotch whisky, adding complexity to the region’s spirits, but has – over the last two decades – been thrust into the limelight.  Essentially, peat is baby coal – decomposed organic matter, in particular sphagnum moss, that takes thousands of years to form. Historically, these peatlands – wetlands such as bogs and fens – were used for fuel, especially where other energy sources weren’t readily available. Slabs of peat, cut out of the ground and left to dry, were burnt, valued for their ability to (like coal) smoulder steadily. Peat would have originally been used to heat pot stills, giving off intensely scented smoke that distillers eventually looked to capture.  Today, energy sources are largely more sustainable, and peat is used in significantly smaller volumes in the kilning process. After the barley has been malted, it is kilned (essentially dried). For peated whiskies, this is done (at least in part) over a peat-fed fire, so that the barley picks up the flavours from the smoke. This barley is then milled, mashed, fermented and distilled to produce the whisky, with the peat smoke lending flavours that range from soot, smoke and asphalt to seaweed and iodine.   Peatlands have been put in the spotlight with climate change, given their incredible capacity to hold carbon – and release it. As a NatureScot report (2023) states, “Although peatlands cover less than 3% of the world’s surface, it is estimated that they store double the amount of carbon held in global forest biomass and more than 30% of the total global soil carbon store (Bonn et al., 2016). Peatlands make up some 9.5% of the UK’s land area with an estimated carbon store of over 3,200 million tonnes, of which 1,600 million tonnes are estimated to be in Scotland (Bonn et al., 2016).” But while they have an impressive ability to lock away carbon, once peatlands are damaged they release some of that carbon – and the same report estimates that degraded peatlands account for circa 13% of Scotland’s carbon emissions. (It’s worth noting that the same institution – then known as Scottish National Heritage – came under fire in 2020 for its agreement with Diageo, allowing for unlimited peat extraction on Islay.)  Peat accumulates at a mere 1mm a year, so it’s easy to see why peat extraction is a hot topic. Protecting and restoring Scotland’s peatlands are firmly on the national agenda, and in 2020, the Scottish government announced £20 million earmarked for restoration, with a commitment to invest more than £250 million by 2030. Unsurprisingly, it’s put Scotch whisky’s use of peat under the magnifying glass. In reality, a fraction (just 1%) of Scotland’s peat goes to the spirits industry – with horticulture the main culprit.  As Bruichladdich’s Head Distiller Adam Hannett says, however, it has provided “a great lens to look at what we’re doing with peatlands”. For him, “It’s about responsible extraction.” Bruichladdich’s production director is also looking at restoration projects with local farmers. In 2021, two giants of the industry announced significant projects – one from Diageo’s Johnnie Walker, partnering with the RSPB to repair wetlands, and a more ambitious pledge from Beam Suntory, with its Peatland Water Sanctuary Initiative. The project aims to restore twice the volume that the company harvests for use in whisky production, with $4 million invested by 2040. Some producers – such as Nc’nean – have sworn off peat totally, while others are moderating usage, or looking for alternatives.   In Sweden – where peatlands represent up to 20% of the entire land area, Mackmyra’s Blender Lii Johnson explains how there is strict regulation around their usage. They are one of a growing number of producers looking to use peat as another way to explore their terroir. As few producers malt and kiln their own barley today, often this is shipped from Scotland (in turn adding to distilleries’ carbon footprints). At Mackmyra, they instead use Karinmossen – local peat, harvested around 40km south of the distillery – seasoned with juniper twigs. She estimates they use a mere 0.1% of the peat bog, bringing in around 30 cubic metres per year.  Johnson feels that it is the juniper in the Karinmossen, along with the small twigs they add (picked from the woods around the distillery), which give a light citrus, almost medicinal note to their peated malts. In Seattle, Westland has pioneered using local peat, and a process with a backhoe to keep the bog intact and limit their carbon footprint. Co-Founder and Managing Director Matthew Hofmann feels the local peat brings Mezcal-like aromas to their peated whisky, Solum.   This quest for sustainability, combined with emphasis on the concept of terroir in whisky, has had interesting results at distilleries around the world. In Minnesota, Brother Justus sources peat from the Boreal Forest and has trademarked a cold-peating process to produce more delicate aromas. Tasmanian distillery Lark looks to Browns Marsh for its peat (around one cubic metre a year) and has had the International Mire Conservation Group confirm that it is having zero impact on the marsh. Others are looking to use alternatives – New Zealand’s Thomson Whisky uses manuka, while Archie Rose has looked to Australian hardwoods and, perhaps most distinctively, Iceland’s Eimverk sources sheep dung from local farms in lieu of peat.  As we’ve touched on, however, it’s not just what is used to peat malt – but how it’s used, that impacts the flavour of the final whisky. “Duration, in my opinion, is the key,” says Mackmyra’s Johnson, emphasising that it is how long the barley spends in contact with the peat smoke that influences the level of peatiness, while it is only the type of peat (or peat alternative) that will effect the nature of the peat flavour. She explains how whether the barley is peated pre- or post-break is also important: it’s most common to do pre-break, as if it is done post-break, when the barley is largely dry on the surface, it doesn’t pick up phenols – the compounds that produce peat’s smoky flavours. For Mackmyra’s peated barley, it is kilned for one day with peat and then for a second day just with hot air.  There are other factors too however – with fermentation times and cuts often a focus. While longer ferments are generally thought to engender complexity, shorter ferments preserve phenols. There are three factions to a still run – the foreshots, heart and feints. The foreshots and feints, the liquid that runs off first and last, are generally discarded, and the cuts between these determine the character of the heart. Phenols generally come late in the distillation process, so later cuts can be preferential when looking for peat character. For Mackmyra’s Extra Rok 2.0 – an extra-peated malt, they do shorter ferments and a later cut, to preserve the phenols.   It's become fashionable to talk about “ppm” in peated whisky – parts per million (perhaps familiar to wine lovers as the same term that is used for sulphur levels), to measure the level of total phenolic compounds. It’s perhaps unsurprising that the compounds are the same as those for smoke taint, including guaiacol and 4-methylguaiacol, for example, but while in the world of wine these are avoided, distillers of peated whiskies have competed to produce the spirit with the highest. This race to make the peatiest whisky possible was arguably inspired by Compass Box’s Peat Monster (first produced in 2003), building to and culminating with Bruichladdich’s Octomore 8.3 (released in 2017) – a whisky with a remarkable 309ppm, the highest level measured to date (compare this to the first Octomore release which had 131ppm). In this frenzied period, Ardbeg’s Dr Bill Lumsden even buried a barrel of peated whisky in a peat bog (which was released as an NFT in 2022, Ardbeg Fon Fhòid). But while one number is an easy way for whisky drinkers to grasp how peaty a spirit is, not everyone believes it’s helpful.  “We don’t like to talk about those numbers,” says Johnson. She explains how ppms are somewhat farcical, in her view. When the reading is taken varies from distillery to distillery, and therefore provides something that is almost impossible to compare. While most are taken at the mashbill stage, if you are later blending, it’s an estimate at best. Not only that, but the make-up of the phenolic compounds will influence how peaty one 100ppm whisky is versus another 100ppm whisky. For Mackmyra, their pure peated malt sits at around 300ppm, but the mashbill for their peated and extra peated whiskies are respectively around 70 and 140ppm, Johnson reluctantly tells me. The level of phenols can also vary significantly between batches of barley – and at Mackmyra they aim to combat this by doing one kilning a year, distilling all their peated whisky at once and blending the batches to create a consistent product.  It's almost for this exact reason that Bruichladdich created Octomore, Head Distiller Adam Hannett explains. The project’s numbered releases have significantly different levels of peatiness, and were a project inspired by their curiosity to see how far they could push the peat level, as well as their partnership with Bairds maltings, who had batches of barley with irregular phenol numbers.   Although peat is intrinsically associated with Islay’s malts, things aren’t as clear-cut today – and as Hannett says, “You can’t categorise flavour by region”. Islay-based Bruichladdich produces both peated and unpeated whiskies. Originally the distillery made heavily peated malts, switching to unpeated styles in the 1960s, and today makes both. Its Port Charlotte brand was first conceived to capture what Bruichladdich would have been like in the old days, as a heavily peated malt. Intriguingly, Bruichladdich briefly tried using Islay peat, however found that they couldn’t get the phenol levels as high. Hannett highlights that another element in phenol levels is the depth the peat is cut from – with lower levels having more vegetation and therefore more phenols.  For Bruichladdich, when they’re looking for an overtly peated spirit, the quality of the underlying spirit is key – working with the right barley and fermentation times, for example. While peated malts might be thought of as heavy, oily and medicinal, they try to avoid this character. He deliberately won’t delay making a cut in the name of phenols, with that decision based on quality – and the result, he feels, is that, “The essence of the peat smoke is light – it’s barbecued.” For him, it’s about the balance between the peat character and everything else.  For blending specialists, House of Hazelwood, peated whisky “is a tool in our arsenal we can use to build a complex blend”, says Eilidh Muir from their Whisky Blending Team. She emphasises that using peat doesn’t necessarily equate to a smoky whisky, but can contribute something to a blend that is much harder to pin down – but something you’d notice if it wasn’t there. “A whisky dominated by a single flavour is often too one-dimensional,” she says – they too are looking for that fine balance.  Peat is just one element that can be used to shape a spirit – and there remains a certain amount of mystery to its influence. The sustainability question isn’t going away, but – as Bruichladdich’s Hannett says, “I don’t know what the solution is at the moment… but we’re looking for one.” As producers look for an answer, they’re pushing boundaries – experimenting with local sources and alternatives – something that will only benefit whisky-lovers, and the environment.  Browse a range of peated whisky or read more about spirits
