I have been up the Uhlen, one of the steepest vineyards in the world, and can therefore appreciate the influence of the slippery slate on the Blaufüsser. This is less about exuberance of fruit, but more about the almost menthol coolness of minerality. Salt and green pepper are not just imaginary friends, but make a sizable contribution to a ‘rocky’ taste. Early austerity may relinquish its grip eventually, but this is never going to be for the squeamish. (MS)
