Nose: my work of the day has stopped. I will not nose a better whisky today, this week, this month, this year... the playfulness, the disarmingly relaxed state of the smoke, even in the face of some pretty major tannins, is something you might regret never experiencing. The heather honey offers a slightly Highland Park outlook to this except no HP has ever been so deep, so meaningful, so absolutely perfect to nose. Taste: the sugars dissolve on impact, some seemingly extracted from manuka honey, others from molasses. the smoke swirls around the palate, and tunnels down into the taste buds now and again, creating a light but busy spice back drop. Finish: now ulmo honey stretches the sweetness as te drier elements of the oak begin to bite a tad, mixing with the peat to up the spices further. Balance: if you gently peat a blend of ulmo, manuka and heather honey you might end up with something as breathtakingly stunning as this. But you probably won't...
