The NV Extra-Brut Cuvée No. 740 (base 2012) continues to develop beautifully. Now softened a bit by the passage of time, the No. 740 graces the palate with dried orchard fruit, crushed flowers, tangerine oil, mint, baked apple and a kiss of passion fruit. What a total delight.

Based on 2012. Disgorged May 2017. Dosage 1.5 g/l. Rather gloriously rich and dense. A charmer. Hint of almond paste, with good tension. But some creaminess of texture. (JR)

57% Chardonnay, 22% Meunier, 21% Pinot Noir. Base (80%) 2012 and 20% reserves of all prior 700-series blends. From Aÿ, Dizy, Hautvillers, Avize and Oiry. Made in oak foudres. Malo done. Bottled July 2013. Dosage 1.5 g/l. Released 2017. Quite beery, yeasty nose with much more obvious acidity and chewiness than the 741. I’d drink 741 first! (JR)

The NV Cuvée No. 740 Extra-Brut is based on the 2012 vintage and contains about 20% of reserve wines. All of the wines are fermented and aged for about 12 months in 225- to 4,000-liter oak vats. Malolactic is never blocked, but the Chiquet brothers do some bâtonnage. The white-golden colored Cuvée No. 740 offers a ripe, deep and elegant bouquet and reflects the more oxidative house style. On the palate, this is a pure, highly finessed and elegant cuvée that blends Chardonnay, Pinot Noir and Pinot Meunier. It is pure and salty, with an elegant texture and a long, well-structured finish. A great Champagne. My sample was disgorged in May 2017. Tasted April 2018.
