Baked lemon, citrus peel, apple and high but not sharp acid. A sense of minerality here, perhaps a volcanic or granitic bite? Long apple and lemon persistence on the finish, and a warming hug from the alcohol. (RH)

Fruit from several villages on the island, fermented in tank at 17–18 °C for nearly three weeks. Four months on lees with occasional stirring. TA 6.2 g/l, pH 3.1. Cool, stony freshness of citrus, mostly lime. Stone dust over pure fruit. Bone dry, salty, stony and with a light grip. Tense and tight, and utterly pure and very long. (JH)
