Guiborat’s 2014 Blanc de Blancs Prisme Echo represents a late release, aged for a total of 92 months on the lees. Sourced entirely from the 2014 vintage and disgorged in January 2024 with a dosage of 2.5 grams per liter, it is produced from Les Caurés and Montaigu in Chouilly and Les Bergeries in Cramant, all planted with old vines. Guiborat has a strong record, and this wine is no exception. Exhibiting aromas of Asian pear, toasted hazelnut, lime zest and beeswax, it is medium-bodied, supported by a bright spine of acidity and saturated with chalky minerality. Layered and harmonious, complemented by a pinpoint mousse, it concludes with a long, persistent finish. Only 1,000 bottles were kept for this late release, but readers should know that Echo is only released from vintages Richard Fouquet deems suitable for long aging.
