The NV Mirabelle Brut features baked yellow apples, toasted brioche, beeswax and floral aromas on the nose. Medium-bodied and dry, it has vigorous mousse and a gentle roundness to its texture. It balances savory and toasty flavors with youthful fruit and has a long, crisp finish.

The NV Mirabelle Brut is made up of 56% Chardonnay and 44% Pinot Noir and was made using 84% fruit from the 2016 vintage, with the remainder coming from aged reserve lots. It has a bright, open nose of poached pears, red apples, toast, crushed stone and lemon juice. The medium-bodied palate is dry, bright and racy with finely beaded mousse, a saline current and lifted finish. The Mirabelle is generally aged on tirage about 18-28 months, and the entire case production is disgorged in several separate lots over about 10 months. 6,250 cases produced.
