Les Chouacheux is among the smaller of Beaune’s Premier Crus, situated near the southern end of the commune on the slope just below Vignes Franches. The red wines from the central and southern parts of the vineyards are powerful, tannic and deeply coloured. Those from the northern area are generally less intensely coloured and softer. Fermentation of the Beaune Premiers Crus berries is made as naturally as possible in open tanks without stems. It usually has a long fermentation of 25 to 33 days, in order to extract colour, tannins and aroma. Bright crimson though quite pale. Very fresh and energetic. Pretty good balance and life. A very particular sort of burgundy – brisk and scrubbing – not for neophytes. (JR)
