The 2005 Haut-Bergeron has an attractive bouquet of melted candle wax, saffron, dried honey and quince that blossoms in the glass. The palate is quite petrolly and Germanic on the entry. Fine depth here, spicy with lemongrass and ginger, edgy with a saline finish. Fully mature, though I can see this giving pleasure for the next 12 to 15 years. Tasted at a vertical at the château.

Tasted blind at the 10-Year On Tasting in Sauternes. The 2005 Château Haut-Bergeron has a slightly resinous bouquet, dried honey and quince notes developing in the glass, a touch of smoked walnut with time. The palate is fresh and viscous on the entry; harmonious and balanced with a satisfying viscous, honeyed finish that is an absolute joy. This is worth hunting down as I bet you can find it for a snip - one of the hidden gems of the vintage.
