“Time is necessary,” Paul-Etienne Defaix tells me. He should know – he is the 16th generation of his family to make wine in Chablis – and, at Domaine Daniel-Etienne Defaix, time is everything.  Wine has been made at the Domaine du Vieux Château (the property’s historic name, which still features on the labels today) for eight centuries, and under the Defaix family since 1610. Much has changed in Chablis over the past 400 years, however – and today the estate is a last bastion of the Chablis of yore.   Demand for Chablis was booming by the 1970s, and producers reduced the élevage (the time wine spends in barrel or tank), bottling, releasing and selling the wines earlier. These modern wines, often bottled within six to 12 months, were lean and crisp, but for Paul’s father Daniel-Etienne, they were disappointing – lacking the complexity and ageability of wines that spent longer on their lees (the dead yeast cells). Daniel-Etienne decided to do things differently – to return to making wine the way they had in generations past – and the family hasn’t looked back.  Generally, their approach is to let the wine be – waiting, watching and waiting some more. Fermentation is all with indigenous yeast and notably slow, taking up to six months, with malolactic fermentation left to rumble along on its own timescale, only finishing after up to two years. Their Premier Cru wines then spend up to nine years on their fine lees, while for the Grands Crus it can be up to 15 years, kept at a cool 10-12°C.  During the wines’ extended élevage, autolysis takes place – the enzymatic breakdown of the dead yeast cells, or lees. It’s the same process that takes place in Champagne and other traditional-method sparkling wines aged on their lees, and is the key to the Defaix – and once traditional – style of Chablis, giving the wine a rounder mouth-feel, and lending bready, toasty complexity. It is also, for Paul, “key to revealing terroir”. Although the tiny volumes of Defaix’s Grands Crus and Pinot Noir go into oak, most of the wines are aged exclusively in stainless steel, meaning it is only the site and time that you taste in the bottle. Once deemed ready, the wines are bottled and released into the world.  Ageing its wines in stainless steel tank for not months but years, Defaix creates textural, complex wines that are only released as they reach their drinking window. It is a rebellion, Paul tells me, against “a society of rapid consumption”.  Paul is now in charge of the property’s vineyards and winemaking, although his father is still involved in the business. Paul studied in Beaune, getting experience at a handful of estates – largely focused on Pinot Noir – before returning to the family domaine, working his way from the vines to the cellar. As Daniel-Etienne told him, “You need to learn your soil, your vines, then you can make the wine – and then you try to sell it.”  And, although it’s often the style of winemaking that steals headlines at Defaix, the domaine has some remarkable vineyards. The family farms 28 hectares in total. It has two Grand Cru parcels (0.15 hectares in Blanchot and 0.3 hectares in Grenouilles), but it’s the property’s Premiers Crus that have built its reputation – with four hectares each in Côte de Léchet and Vaillons. From these, they produce three wines: their Côte de Léchet, Les Lys and Vaillon. Importantly, the latter is Vaillon, not plural Les Vaillons – their parcel lying in the historic heart of this Premier Cru, prior to its expansion in 1976. Les Lys is a cooler climat within the larger Vaillons, and is often our favourite of the range, while the Côte de Léchet is drastically steep – with a 45% gradient.  The remaining hectares are largely dedicated to the estate’s village Chablis – their Vieilles Vignes. These vines are all over 45 years old, but some are very old – own-rooted, having survived phylloxera and now 145 years in age. When I ask Paul how this half-hectare has managed to survive ungrafted, he pauses, before saying: “I think God prays for these vines.”. They crop a mere 15hl/ha, but produce beautiful fruit (“For my bank, it’s bad; for my wine, it’s perfect!” Paul jokes) – and are now used for massal selection across the estate.  The final piece of the property is a tiny section of Vaillons planted to Pinot Noir, which is bottled as Bourgogne Rouge (as the land is only classified for Chardonnay production). Comprising less than a hectare, these vines too are ancient, planted in 1900, and still on their own roots.  Their spacious cellars are stocked with back-vintages, carefully maturing – a bank of wine that eases the vagaries of each specific growing season, protecting them from dramatic drops in yield – something that is a constant threat in Chablis. Take 2024, a year that was challenging across much of northern Europe with its wet conditions and high disease pressure, but in Chablis also brought hail that devastated huge swathes of vineyard – including Vaillons.  Global warming might have made it easier to ripen grapes in this marginal region, but it’s also made for more extreme conditions – highs and lows that keep producers on their toes. It’s also, arguably, made Chablis a little less Chablis. With riper fruit, the wines are less steely, taut and lean. Harvest dates are inevitably earlier, Paul notes, to preserve acidity and retain Chablisien backbone, but he also emphasises that the fruit requires not just sugar ripeness, but phenolic ripeness – to give dry extract and allow the wines to age. For him, working with old vines and low yields is key – both to phenolic ripeness and to preserving Chablis’s style.  The 2014 vintage – the first that Paul made – has finally just emerged from the cellar, over a decade after it was produced. Worth the wait: the wines of Domaine Daniel-Etienne Defaix   

“Two generations ago everyone made Chablis like this. Now I am the only one left,” says Daniel-Etienne Defaix proudly. It is amazing to think that production methods could completely reverse in such a short time, no doubt fuelled by the “Chardonnay boom” of the mid-70s onwards. This insatiable global demand for crisp, clean, saline-tinged Chardonnay has shown no sign of abating ever since.  The commercial success of Chablis (one of the few white wines found in practically every supermarket, off-licence and fine wine store around the world) is staggering, particularly as the region in itself is remarkably small. While both premium growers and commercial production have, in many ways, sat comfortably alongside each other (even among the top traditional premium growers such as Raveneau, Dauvissat, Billaud-Simon and Droin, the length of élevage has reduced considerably in this time. Despite being the oldest domaine in Chablis, established in 1610, his father (like most other producers in Chablis when exports boomed) started to produce Chablis in the modern way. The time spent ageing the wine on its lees dropped down to six to nine months, in order to release the wines as soon as possible, and meet market demand. Unimpressed by his father’s results and the wines’ ageing capacity, it was Daniel-Etienne’s decision to change tact and to retrace his grandfather’s footsteps, performing a longer élevage – which for Defaix brings out the complexity and terroir characteristics Chablis is truly capable of.   So why has Etienne persisted? What is it that makes this technique so valuable to him? He admits he is fortunate to own the largest cellars in Chablis, claiming to have seven to 10 times more cellar space than anyone else in the village. ”This gives me a lot more freedom,” he explains – both in terms of ageing his wines (of which he has up to 15 vintages of each Premier and Grand Cru in the cellars at any one time), but also financial freedom. “My wines are my own bank: I don’t need to take out loans when there is a poor harvest,” he says. This no doubt puts Defaix in a minority in Chablis, where yields have been pretty catastrophic over the last decade, plagued by spring frosts. Financial autonomy has allowed him to continue making his Chablis in a traditional long-ageing method, while at the same time keeping pricing incredibly fair.  According to Defaix the key to long-ageing Chablis is protecting the glycerol content in the grapes, since it is the glycerol that takes around two years on the lees to break down and starts to act as an anti-oxidant. He does this by carrying out slow, three-hour press cycles of the grapes and keeping only the first press for bottling. He ferments at a cool 18°C, again to preserve the glycerol in the must. “Glycerol provides the balance in aged Chablis between sugar and alcohol. Glycerol gives fat and seduction to the wine,” says Defaix. “It brings a brioche taste to the wine, without being sweet.” But this takes time to produce: Defaix typically ages his Premiers Crus a staggering seven to nine years on the fine lees in tank; for his Grands Crus it can be eight to 15 years!    It might come as a surprise that – despite making this almost forgotten, ultra-traditional style of Chablis – Defaix machine-picks all his grapes. But this decision was not made easily, nor without extensive testing. He explains that they were, in fact, one of the last domaines to buy a machine harvester. Back in the ’80s his father, sceptical of others’ results, started his own research – picking half the grapes by hand and half by machine. After 10 years in bottle each year, they invited wine professionals, chefs and sommeliers to blind taste both. Every single time, the wines by machine were unanimously thought to be better. Defaix came to the conclusion that the exact timing of the harvest is more important than the hand selection. He also states that the technology makes today’s picking machines extraordinarily accurate: ripe fruit falls in the basket, rotten fruit is too light and is easily filtered out, while any green grapes stay on the vine. Turbines attached to the machine suck in the leaves and insects and are removed prior to the grapes reaching the winery. During his experiments, his machine harvested-fruit was a full 1.5% higher in alcohol than the hand-selected fruit in poor vintages.  Daniel-Etienne is the 15th generation of his family to produce wine in Chablis over the last 400 years. Inside Burgundy – Jasper Morris MW  Published just in time for Christmas, Jasper Morris MW’s first instalment highlights how 2023 is “not like anything [he has] seen before” – with the largest crop on record, and the hottest year but the wines are not those of a hot vintage. He notes that “the white wines in 2023 are delicious”, accessible early and largely will be best drunk before the 2022s, with some notable exceptions with “the tension and tenacity to become really interesting”. It is, for him, “a very good white wine vintage, but probably not a great one”.  He deems the Pinot Noir more mixed, with “some absolutely lovely wines and some which just miss” – but most are “absolutely charming in an agreeably juicy style”. He has found a mysterious fault in some of the reds of the Côte de Beaune, lending an earthy taste and texture on the finish of the wines – and he has not rated these wines at this stage, choosing to revisit them in bottle. But, he emphasises, “don’t let that […] spoil your appreciation of all the other wines from this vintage” – with “delicious, fruit forward wines for medium term ageing”.   As for his early look at Chablis, he acknowledges that the region has changed – with the modern climate producing softer-styled wines that are “more fruit forward at least in their youth”, although “the best examples will absolutely still have the core character beneath”. While the generous yields of 2023 might be reminiscent of 2018, the wines show none of the dilution sometimes found in that vintage. The vintage is “more about pleasure than long term classicism”, he says, with the wines “charming, open and mostly well-balanced”, but the best will keep.  Read all Jasper Morris MW’s coverage and explore his notes and scores on his site (subscribers only)   Burghound – Allen Meadows  Allen Meadows started with his report on Chablis, the Mâconnais and the Chalonnaise. He highlights how the 2023 growing season was drastically different to that of 2022, and yet produced wines that are not a million miles away in style. He feels 2022 is better than 2023, “but not drastically so” – and states that when it comes to terroir transparency, “2023 might well have the edge”. The vintage is “a mixed bag”, he argues, with the reds more consistent than the whites, but with some excellent wines of both colours. For Chablis, he highlights “on the one hand, 2022 is a better vintage from a quality standpoint but 2023 is more interesting from a terroir standpoint”. He notes that the wines will be approachable young, and their natural balance will allow them to age well over the short and medium term. And, as Meadows says, “while there are certainly indifferent wines in both colours but when they’re good, they’re more than deserving of a spot in your cellars”.  For the Côte de Nuits, he acknowledges that the quality is “really variable”, with yield management the main driver in quality. There are, however, “many aromatically elegant, charming, and seductive wines” in 2023. The style, with “pliant tannins, good terroir transparency, and genuine depth of character”, is one that appeals to Meadows. Although the year is not consistent – and there are “plenty of disappointments” – there are also “good quantities of really lovely wines that should provide for delicious drinking early on yet be capable of amply rewarding mid-term cellaring”. The wines are not as concentrated as the likes of 2005, 2010 or 2020, he notes, but that doesn’t mean they’re dilute. He is one of many to emphasise 2023’s “charming” character – but without drifting into “banality”. The wines “belong in any serious Burgundy collector’s cellar” and the best are “genuinely wonderful for their sheer exuberance”.  Explore Allen Meadows’ reports, notes and scores on the Burghound site (subscribers only)    Decanter – Charles Curtis MW  For Charles Curtis MW, the 2023 vintage in Chablis is clearly good – just a touch behind 2022, earning a four-star rating (out of a possible five, versus 4.5 for 2022). He emphasises how important the harvest date was this year with the heatwave, key to preserving acidity, and this alongside yield control defined success. He emphasises that the Grands Crus delivered excellent quality, while Montée de Tonnerre and Vaulourent were stand-outs among the Premiers Crus on the Right Bank, while Montmains (especially Butteaux) and Vaillons delivered on the Left. The best wines, he says, sit alongside 2018, 2020 and 2022, “with ripe orchard and stone fruit, a lush texture, balanced acidity and plenty of extract”. They may not be as racy as the Chablis of yesteryear, but Curtis suggests that the best will age similarly to the 1999, and it is “a vintage that’s eminently worth stocking up on”.  Following on from his pre-Christmas Chablis focus, Curtis has published his full report on Burgundy 2023 – rating it four (out of five) stars for both red and white. With the challenges the year posed, he feels it’s less consistent than 2022, but still “a very good vintage”, with rare occasions where it’s “truly superb”. The wines are generally “very ripe” and approachable, with a “lush, drinkable style”, although he doesn’t feel they have the structure for long ageing, sitting just behind the 2022s qualitatively. More detailed coverage of individual villages is set to follow.  Explore Charles Curtis MW’s full report, notes and scores on the Decanter site (subscribers only)   Jancis Robinson – Matthew Hayes  For Matthew Hayes, 2023 offers a “near-repetition of the fine, balanced wines of 2022” – with wines that “will offer sustenance and satisfaction for lovers of (modern) classic, Burgundian Pinot Noir”. The fruit is “remarkably fresh and red-fruited”, with the wines fuller-bodied than the 2021s – although they are, he notes, not homogenous. The wines are those “vignerons wanted to make, rather than what nature made them make”, Hayes notes. He describes the whites as “generally lively, with a racy style matching ripe, mature fruit”. For him, the 2023 is a good vintage – one that sits alongside 2022 in terms of quality, with “deceptively open” wines that can be drunk while waiting for the 2019 and 2020s.  Explore Matthew Hayes’ report, as well as the entire team’s notes and scores on jancisrobinson.com (subscribers only)  Vinous – Neal Martin  “I adore the 2023 vintage,” declares Neal Martin. “I am hard pushed to think of another vintage so pleasurable from barrel,” he says. He emphasises how important it was to manage yields to avoid excess, with the year undoubtedly a “vignerons’ vintage” defined by actions in the vineyard. He finds the whites rounder in style, although not as richly fruity as those from 2018 or 2020. They are, he says, more traditionally styled, with good acidity levels that balance the richness of the year’s late summer heat. He notes that wines from limestone terroirs benefited from additional freshness, while Chassagne-Montrachet “continues to impress thanks to the cluster of talent that has emerged there in recent years”.  As for the reds, he considers them a combination of 2020 and 2017, feeling the wines are better than those of the latter year. It’s not a year to choose by appellation, but by producer – although he highlights Gevrey-Chambertin in particular as “a wellspring of great Pinot Noirs”, as well as the rising quality and value found in Marsannay. Some wines, he warns, lack concentration and can be a little lean, and it is less consistent than 2022. But, in general, “the reds convey a sense of transparency, more weightless than weighty,” he says, with wines that are fresh and crunchy, even if the acidity levels aren’t that high. While clearly set to be approachable early, he says, “they also have the balance and energy to reward the dwindling numbers who uphold the lost art of cellaring”. Among the best producers, 2023 offers “a veritable trove of white and reds that will drink earlier than their 2022 counterparts” – wines that are defined by their charm.  Explore Neal Martin’s full report, notes and scores on the Vinous site (subscribers only)  Wine Advocate – William Kelley Last out of the gate, William Kelley has finally proffered his judgement on the 2023 vintage – a year that is defined by its “abundance”. He finds the best to offer “demonstrative charm and immediacy”, but is clear that it “is not a vintage to buy blind”. Some reds show “dilution, elevated levels of volatile acidity and earthy, vegetal flavors”, and although the whites are more consistent, they can be “deficient in structure and cut”. The style of the wines varies significantly, he notes, and “whether growers picked before, during or after the September heat wave could deliver very different wines, ranging from light and vegetal to brooding and muscular”. He is clearly charmed by the best, however: “velvety, fleshy wines that are suave and sensual”, sweeter and often more structured than the 2017s, and not as ripe as the 2018s. As for the whites, he finds them generally “rich and flamboyant, with unctuous textures and sweet fruit” – and, “when they are united with good freshness and enlivening structuring dry extract, the results can be compelling”. He compares them to “a broader, more open-knit version of 2015”. Burgundy 2023: the critics’ verdict 

The growing season in 2019, as is becoming the norm these days, started with a warm February and March, leading to an early budbreak at the beginning of April. An early budbreak leads to a nail-biting spring for the vignerons, where the window for frost damage is only extended. Fortunately, there were only a couple of occasions where temperatures dropped to dangerous levels, with most Chablis producers today well equipped either with smudge pots, electrical heating wires or water sprays to offset the frost damage.  At Long-Depaquit they lost just 5%, which was not a concern. Samuel Billaud notes that the frost was much more dangerous on the lower slopes of Chablis where damage was higher than the 1er Cru and Grand Cru sites which were largely undamaged. For Olivier Bailly, winemaker at Domaine Billaud Simon, it was not simply the direct damage of the frosts (particularly on the night of 14th April) but the resultant stress on the vine following the outbreak that saw yields further affected. However, the real issue in regard to yields, came down to flowering rather than frost, with a windy, rainy, wet period during May which meant yields were notably affected. This period led to a lot of heterogeneity in the bunches and also noticeable millerandage (which results in very small berries): this does not affect quality but markedly lowers yield. Unlike 2018, therefore, 2019 is a low-crop vintage with producers’ yields ranging from 20 to 40% below normal. Despite the poor flowering, the rest of the growing season was straightforward, with very little rain and plenty of sunshine, which meant excellent sanitary conditions in the vineyard with no rot at all and very little sorting required at picking. There were two short heatwaves, one at the end of June and another at the end of July, which did cause sunburn damage to exposed grapes but other than that, no sorting was required. Regarding temperatures and rainfall, it was similar to 2018 with average rainfalls down 50% on average. Temperatures were also a full 2.2 degrees above average during the growing season, which is quite extraordinary. When comparing the similar effects of drought and sunshine in the 2018 vintage, vignerons talked about how the high yields helped dilute the intensity of the sun. With half the crop, how did the grapes survive in 2019? Was this to be a low-acid vintage with abnormal tropical fruit tones like 2015 or 2003? Matthieu Mangenot, winemaker at Domaine Long-Depaquit, describes how something quite unusual happened. In the later part of the growing season, the grapes concentrated – with water in the berries evaporating from the skins. This increased sugar levels and therefore alcohol (typically to 13.4 to 13.8%, which is high for Chablis, but it concentrated the acid levels too. Despite the drought and heat, the acid levels sit close to great vintages such as 2008, 2014 and 2018, with a pH of 3.25 to 3.3 after malolactic fermentation. Olivier Bailly at Domaine Billaud Simon had even higher acidity levels (between 3.10 - 3.25 pH), stating, “It is the magic of Chablis to find Chardonnay retaining such acidity, despite the warm weather”.  The result is, as Mangenot told us, “undoubtedly a ripe, concentrated, powerful vintage, but with a freshness too, at the same time retaining real Chablis mineral typicity. It is a hot, warm vintage but it does not really behave like that in the glass.” The fruit ripeness is similar to ’15 – but there are no excess aromatics of over-ripeness or yellowness in the wine that is typical of the low-acid vintages like ’05 and ’06. The acid profile is much more like ’17, and very much still retaining a sense of place, avoiding the tropical fruit aromas of 2015. Samuel Billaud describes 2019 as “highly concentrated Chablis with sun-kissed aromatics – it is concentrated, with balanced structure and excellent minerality. It is a ‘gourmand’ [moreish] vintage, yet with tense, structural minerality.”  Our own impressions is there is no doubt a concentration and aromatic pungency to the wines, yet the nose retains the Chablis-esque chalky minerality and savoury dried-straw tone, as well as lifted floral aromatics. There is noticeable power, weight and warmth to the palate even on the Premiers Crus, with the top examples retaining mouth-watering acidity despite this opulence and concentration. They really have a wonderful combination of intensity and power, while retaining mineral typicity. Producers such as Samuel Billaud still has a majority of his 2019s undergoing élevage, with the Grands Crus left another six months in tank before being bottled. Despite them being babies the wines are already showing a lot of promise. Billaud compares his 2019s to the 2016s in terms of riper aromatics, but with much more concentration and minerality. It also has similarities to the 2017 vintage when it comes to structure and minerality, he says.  For Mangenot, the power and concentration allied with vibrant acidity and minerality makes this vintage hard to compare, “It doesn’t really taste like any other,” he says, “but for Chablis-lovers, it makes it a fascinating vintage to discover.” Read more Editorial

With the recent fruitful set of vintages from practically all the classic French regions, you would be forgiven for thinking one is spoilt for choice for quality and even quantity. The utter devastation across France’s vineyards this spring, however, due to persistent and heavy frosts, was a real wake-up call. There will be very little wine made in 2021 throughout France and the scarcity in the next 12 months will be a reminder of just how volatile and vulnerable wine production can be. Chablis took a particularly big hit, with production set to be down by as much as 80%. Expect to see global shortages of the more basic appellations (Petit Chablis, Chablis and Bourgogne Blanc) imminently, with 2020 stocks of these wines already largely sold. With this in mind, we look at the Premier Cru and Grand Cru 2020 releases with added interest and gratitude. Fortunately, it turned out to be another hugely successful vintage for the region (and Burgundy more generally), yet quite different in character to 2018 and 2019. Like much of Western Europe, Chablis experienced the warmest 12 months of temperatures on record, warmer even than 2003. This meant a very early start to the 2020 growing season and, while there were outbreaks of frost, the damage remained minor, particularly when compared to 2021. It was, according to Domaine Long-Depaquit’s Matthieu Mangenot, “a very easy vintage to manage, in terms of viticulture”. With a 40% reduction in rainfall and over 300 hours more sunshine than average, there were next to no disease issues in the vineyard. The dry weather even retarded weed outbreaks and this meant little to no spraying was required in the vineyards. But this shortage of water was bound to also stress the vines. “The drought caused the vines to slow down the maturation process of the grapes,” explained Mangenot. “This was quite an unusual phenomenon.” Since the growing season had started early, vignerons were looking to pick early, but the sugar in the grapes remained low throughout the summer and was only rising very slowly, pushing picking dates later and later. While this raised concerns over when to pick, it also provided many benefits to the final wine – benefits that would only become apparent after fermentation. For Mangenot, the very slow maturation process allowed more acidity to be retained. The berries also remained very small, helping to increase concentration. Despite this, the potential alcohol remained very reasonable – producing much more “classic” levels in the finished wines, around 12.2-12.5%. The other advantage of this slow ripening was that, unlike in the last few hot vintages, there was a lot more time at harvest to pick. Vignerons could take their time and pick certain plots only at optimum ripeness. In fact, after a couple of days spent harvesting the more mature vineyards, Long-Depaquit took a two-day break and slowed down the picking, just to enable the grapes to reach that extra level of maturity. While Domaine William Fèvre’s Didier Séguier was concerned about the effect of the sun’s intensity in July, he was happy to find “a very fresh profile to the vintage” – driven by what he describes as the “double face of the grapes”. One side of each row and therefore bunch was more exposed to the sun, providing a riper, warmer fruit profile, while the other side of the row, where the fruit was more shaded, produced fresher and greener flavours. Combined, the results proved complementary. Importantly Séguier noted that, while 2020 was a warm year, August was not as hot as in 2019; as such, the grapes were not as extremely ripe as in 2019, but did ripen less uniformly. WiIliam Fèvre started harvesting on 25th August – the earliest harvest date in the domaine’s history, alongside 2003. For Séguier, the main challenge was the difference in ripeness – “not just even between parcels, but also on the same row and even the same grape!”. In this respect, selection was key. For most, harvesting took place from 22nd to 23rd August and continued over a two-week period. Yields overall were about 20-30% down, due to a number of factors. A very cold snap in the spring damaged some vines, while the small berries also meant there was a lot less juice in the berries, and the bunches themselves were also much smaller. The biggest threat to yield, however, was the number of shriveled berries due to the drought. While these could easily be removed at sorting and therefore not affect quality, it was the main cause for the drop in yields. In many ways, 2020’s warm, sunny conditions seem similar to those of 2018 and 2019, yet the profile of the wines is completely different. The alcohol levels are much lower and the acidity levels much higher – the pHs sit around 3.3 to 3.35 (compared to 2019 which was closer to 3.45). Another point of contrast with 2019 was the relatively high levels of malic acid in the grapes found at some properties/in some vineyards – something that typically decreases in very sunny vintages This worked in the vintage’s favour for producers like Mangenot, since after malolactic fermentation there was more lactic acid. This added richer notes to off-set the citric acid backbone of the wines, bringing greater balance. All these factors are in direct contrast to 2019 – a very successful vintage, but almost the opposite in terms of flavour profile. “In 2019 there was lots of evaporation of water from the berries creating an intensely concentrated and stone fruit aromatic profile,” says Mangenot. “The grapes were ripening extremely quickly in 2019 and it was a rush to pick everything before the danger of over-ripeness crept in. If anything, the 2020 was the opposite, with some wines having a green, lighter, herbal edge – on the positive side of that spectrum.” For him, the 2020 vintage has become difficult to compare. “While it shares the very warm conditions of 2003, 2009, 2015, 2018, it doesn’t behave in the glass like any of them.” For Vincent Dauvissat, it reminds him of 2002 with a touch of 1997 – two dry vintages that managed to preserve their acidities and mature beautifully. “It is a vintage with a lot of charm and a very nice freshness,” he says. Dauvissat, unlike Long-Depaquit, had very little malic acid in his grapes and seemingly fewer issues with drought. “The vines at the estate do not seem to me to have had any water stress,” he says. “A few plots on the plateaus would have shown a little more, but the maturities followed their normal rhythm.” The 2020 vintage, according to Mangenot, is “one for the laboratory”. He thinks it is fascinating how the Chardonnay is adapting to climate change. How the Chardonnay can react on the vine to warmer and drier vintages without losing its sense of place. “Despite the heat and dryness, the alcohol levels are normal, the acidity levels are exceptional and the overall balance on the palate means the wines are representative of an excellent vintage for the region.” Mangenot was so impressed by the fleshiness in his Premiers Crus and Grands Crus, he was confident enough to extend the wines’ élevage on their lees – adding further tension and flavour complexity to the wine. “It is a vintage with great ageing potential in terms of balance and acidic backbone,” he says, comparing it to 2017 or 2012 – very popular vintages for vignerons in Chablis, where the acidity is classic but there is flesh too. It is what he calls “a truer expression of Chablis”. Séguier is also extremely pleased with the vintage. “The 2020 has the freshness of 2017, and the concentration and the expression of 2019,” he says. “A vintage that expresses a superb minerality and freshness with a nice intensity of fruit and especially citrus fruit characters.” While many wines are still maturing in tank (due to the extended élevage), there is a great sense of relief from those we spoke to. Firstly, no vigneron in Chablis is comfortable picking their grapes in August. The weather tends to still be very warm, bringing concerns about the grapes’ health once picked in such hot conditions. For Mangenot, however, this was managed well in 2020 and did not negatively affect the wines. Secondly, the year proved that a warm dry vintage can still produce a very classic Chablis style – defined by a citric fruit profile, floral aromatics and distinct mineral salinity. From what we have tasted this summer, the wines are excellent. The vintage offers great terroir focus, with each of the Premiers Crus and Grands Crus being unique in terms of flavour profile and structure. It looks set to be a classic vintage for the region, with lots of freshness and minerality – and a fascinating year in which to explore Chablis’s diversity. In recent years, Chablis has faced hot, dry summers that have challenged the classic, cool, steely, linear-styled Chardonnay for which it’s renowned. But 2021 bucked the trend, with moderate temperatures and plenty of wet weather. The crop was small, but the best wines have laser-like acidity, refreshing mineral salinity and delicate floral tones.  Following an extremely warm start to the growing season (with almost summer-like 25˚C temperatures in March), budburst was two weeks earlier than normal. A warm early spring, as is more and more commonplace in Chablis’s warming climate, put viticulturalists on high alert. With early budding shoots, frost was a major concern, and it wasn’t long before their worst fears were realised.  For 10 days straight in early April, temperatures at night dropped well below freezing. Thanks to a mass of cold air coming down from Northern Europe, temperatures were consistently dropping as low as -8˚C. The real devastation happened on the nights of 6th and 7th April – where rainfall just prior to dusk increased humidity levels, allowing moisture to get inside the buds. The water droplets froze, expanding and effectively exploding the buds, totally destroying them. At such low temperatures, smudge pots and wind turbines can do little to protect the vines. Between 80 and 90% of Chablis’s first buds were destroyed. Vignerons therefore had to rely on secondary and tertiary buds if they were to produce any wine this year. But producers already knew production would be decimated, since these secondary shoots produce far fewer bunches – typically just a bunch per vine. Barely had the season started and the vignerons were looking at losses of up to 80%. While the rest of April and May were a quiet time in the vineyards, it was the calm before the storm. Lots of rain and a significant increase in temperature in June saw the canopy expand rapidly. These storms meant vignerons had to be quick to fight the onset of mildew – not so easily managed with so much rain, particularly for organic growers who have to spray the vines after every episode if they were to sufficiently protect them. The stormy wet weather continued into July and it was viticulturally challenging to keep the vines in a good state. With the wet weather, it was difficult to get tractors into the vineyards to spray; organic producers were further limited by restrictions on copper applications. August was drier, but – like June and July – remained cold and the grapes only started to go through véraison (changing colour, representing the shift of the vine’s energy to ripening fruit rather than growing leaves and shoots) at the beginning of September. Even then, the ripening of the grapes was very heterogeneous and under-ripeness was starting to be a concern. As a potential harvest date grew near, another storm arrived, with substantial rainfall on the 17th, 18th and 19th September. Vignerons were forced to gamble, holding off picking until after the storm, despite the substantial threat of botrytis; or to pick before and risk under-ripeness. Most opted for the former, having to wait a few days for the dilution of the grapes that followed the rainstorms to pass before harvesting. It was then a race to get the grapes in before the onset of botrytis. Most started to pick from 20th September onwards. Vignerons had to identify which vineyards were most at risk and quickly get that fruit in before tackling other sites. Typically, the Grands Crus and Premiers Crus – with their elevation and aeration – were less affected, but no site was without risk. With such heterogeneous ripening, and the risk of both botrytis and under-ripeness, sorting was essential to produce quality wine in 2021. Any botrytis would make the must prone to oxidation and darken the colour, but most notably diminish the purity and minerality that defines Chablis. Hand-picking, protecting the fruit in small baskets and whole-bunch pressing the grapes were all key to preserving quality. The style of the vintage is defined by its relative coolness. The wines are taut, with powerful, energising acidity, putting the wines alongside 2011, 2012 and 2014. They aren’t as full as those of 2014 and 2012, yet have similarly vibrant acidity levels. Unlike the recent warm vintages of 2018, 2019 and 2020; 2021 is not a fruit-driven vintage, but more floral (white flower), herbal (a charming herbaceousness) matched by powerful energy from the acidity. With the cool conditions, warmer Premier and Grand Cru vineyards tended to fare better, with producers suggesting that Les Clos performed particularly well. The sunny site has naturally lower acidity, a rounder texture and huge natural density, playing to the leaner, acid-driven style of the vintage. Vignerons’ work in the cellar will also play more of a role in the finished wines. Domaine Long-Depaquit, for example, extended the lees contact and carried out more bâtonnage to create more body in the wine, helping better integrate the high acidities. With yields decimated by as much as 80%, only tiny volumes will be available, and the wines will prove particularly difficult to find after their initial release. Although the vintage was by no means easy, the best wines are classically styled with a backbone of vibrant acidity – offering a distinct change to the solar 2018s, 2019s and 2020s. Inside Burgundy – Jasper Morris MW  “Bountiful and beautiful” reads the headline of Jasper Morris MW’s overview of the 2022 vintage in Burgundy. He finds it to be an overwhelmingly consistent vintage – one with “occasional touches of greatness”. He compares the whites to those of 2020, with a touch less energy but more precision, and the reds to 1985, 1999 or 2002 – “just short of top flight but a really lovely flavour profile of medium density and longevity”. Although he feels that it is not largely a year set to be legendary, these are wines that will drink well early, are unlikely to shut down and also have the capacity to age. It is a “fine and classic” vintage, but some areas have particularly impressed him: the whites of Puligny-Montrachet (where he feels there is a return of the appellation’s typical floral aromatics, and it's the finest vintage since 2017 or maybe 2014) and the reds of the Côte de Beaune, which he feels offer “just that little bit extra” in comparison to those of the Côte de Nuits, highlighting in particular the performance of Pommard and Volnay. In Meursault, he feels quality is generally excellent, but notes the sunny conditions led to the odd heavy wine, particularly so in Charmes.  He notes that in Nuits-Saint-Georges there was a storm a week after the much discussed event of 22nd June in Gevrey – impacting volumes largely, however he notes that there were a few wines with “furry tannins and less precision”. By contrast, Vosne-Romanée escaped the excesses of late June and is “looking very good”, with “some spectacular individual performances”, including Georges Noëllat and Mugneret-Gibourg. Although Chablis was at risk of frost, Morris explains how it escaped a repeat of the damages of 2021 and recovered yields with secondary buds. He argues that 2022 is “a very good vintage of clean, pure, well-constructed wines which are recognisably from Chablis – not the mouth-puckering style of previous decades, but Chablis in its modern image, which I would argue is every bit as valid”. Although accessible in youth, he feels the wines will age and some have “the potential to thrill”, not yet revealing everything they have to offer. For him it sits above most recent vintages, bar 2014, rivalling the wines of 2020.  Explore Jasper Morris MW’s full report, notes and scores on Inside Burgundy (subscribers only)  Burghound – Allen Meadows  In Allen Meadows’ report on Chablis, the Mâconnais and the Chalonnaise, he writes that the “relatively tranquil if incredibly warm” growing season resulted in “ripe, delicious, plump and round whites and very ripe yet still fresh reds, both of which should repay short to mid-term cellaring”. Like Morris, he emphasises the consistency of the year – and a rare vintage where both colours excelled. Despite the exceptionally hot and dry conditions, the 2022s are “fresh, bright and utterly delicious, if not classically styled, reds and whites”.  He feels that the best 2022 whites are defined by their freshness, while for the reds it is their generous textures – “a seductive blend of velvet and punch”. Although it is a consistent year, he warns that a handful of wines are a little heavy with acidities not always as high as he’d like.  For the whites, he compares them to 2020 or 2017, but with a little more flesh than the latter, and the reds are again closest to the best 2017s but a little riper. The best 2022s, Meadows says, are “lovely ‘do everything’ wines. This is to say that even if they’re not destined to be great wines, they do everything well.”  As for the Côte de Nuits, Meadows declares 2022 a “modern classic”. Despite the hot, dry growing season, “the wines, while ripe, are wonderfully refreshing and transparent”, “vibrant and inviting”, impeccably well-balanced”.  Interestingly, he suggests that the vintage’s lower alcohol levels are attributed to inefficient yeast converting 18.5g/l sugar to 1% alcohol, rather than the standard 17-17.5, something that producers can’t explain.  The reds are, he says, “fun” – “ a pleasure to drink”, yet also offer “substance, complexity and intellectual titillation”. They combine transparency with concentration, he feels, and that is a seductive combination. The tannins are “ripe, pliant, and, for lack of a better term, don’t stick out”, while the acid levels maintain balance, even if they aren’t analytically that high. He emphasises the wines’ approachability, yet also their ageability.  Although he doesn’t pretend that it is entirely uniform, with some wines that don’t meet his standards, it is “less variable than probably any vintage since 2015”. Comparisons are various and tricky, but he feels that 2022 is a combination of two-thirds a ripe vintage, with one-third of a fresher one – such as 1990 and 19991, 1996 and 1997, 1999 and 2000 and so on. Whichever you compare it to, Meadows is clear that the 2022s “belong in any serious Burgundy collector’s cellar”.  Explore Allen Meadows’ full report, notes and scores on the Burghound site (subscribers only)   jancisrobinson.com – Matthew Hayes  Jancis’s “man on the ground” in Burgundy is Matthew Hayes, and he provides the bulk of her coverage, although she will offer thoughts following tastings in London in mid-January.  “Beyond any doubt, 2022 has produced excellent, both red and white, up and down the Côte d’Or and beyond,” writes Hayes, although pinning down where it sits on the spectrum of great to good proves tricky. While there are outliers, he feels that the wines generally show “impeccable balance of tidy, ripe fruit, discreet acidity and equally (and mostly) refined tannins”. Many of the Grands Crus, he says, are concentrated and intense, yet “disarmingly understated” – not as rich and savoury as 2019 or 2020, but there are nevertheless “some absolute crackers”. He finds that the classification of wines is generally reflected in the wines, with each tier offering a significant step up in quality. Most importantly, although exceptions exist, it is “across the board and in both colours” a year that has produced fresh and balanced wines for the medium to long term – with value and quality.  Read Matthew Hayes’ full vintage report, notes and scores on the Jancis site  Decanter – Charles Curtis MW and Andy Howard MW Decanter’s Chablis coverage comes courtesy of Andy Howard MW. For Howard, 2022 is “a very good year – and potentially an excellent one” in Chablis, earning a 4.5 rating (out of a possible five). He finds the wines offer good balance and taut acidity, combining typical minerality with riper fruit thanks to the warm, dry conditions. He suggests the wines blend the freshness of 2017 or 2021 with the ripeness of 2019 and 2020, but picking date was key to retaining acidity – and some who missed the mark produced higher-alcohol, tropical wines. The best, however, will “age beautifully for many years”, thanks to their “winning combination of fruit ripeness combined with fresh acidity and classic Chablis notes of salinity and minerality”, making it “a year to stock up on”.  As for the rest of Burgundy, Charles Curtis MW writes that the reds offer “lush fruit expression, full body, well-developed but velvety tannins and abundant extract”, while he argues that the whites are mostly best for early drinking, with similarly “lush fruit” and “relatively soft acidity”. It is the acidity that limits the wines, in his view, mostly for the whites – meaning they earn a four out of five, while the reds reach 4.5 in Decanter’s vintage rating system. The reds “will age gracefully in the cellar”, and he feels are largely homogenous. Although he found the whites more varied, he notes that those of the Côte de Beaune’s most famous villages – Meursault, Puligny-Montrachet and Chassagne-Montrachet – were generally consistent.  Explore Andy Howard MW’s Chablis report, notes and scores or dive into Charles Curtis MW’s report on the rest of Burgundy in 2022 on the Decanter site (subscribers only)  Vinous – Neal Martin  Once the satirical introduction, with a commentary on pricing, is out the way, Neal Martin dives into his detailed report on 2022 – a year that he feels is “a treasure trove of bright ‘n bushy-tailed whites and reds in a season that implied such wines would be impossible, wines predestined to give immense drinking pleasure”.  He highlights how June’s dramatic thunderstorms were key and have defined the vintage, balancing the hot, dry conditions. “I posit that vines were stressed, but stress that they have learned to cope with,” he says. Pairing this with a shift towards a gentler touch in the winery has sculpted the 2022s – wines which he is clearly impressed by.  As we found, he emphasises that producers are split on whether the wines should go through another winter’s élevage or should be bottled early, emphasising that the high volumes of 2023 and limits on cellar capacity are a consideration at some addresses.  All in all, “I cannot remember a Burgundy vintage that elicited so much joy from barrel,” he says. He highlights the whites’ “freshness, particularly their textures, and the deft use of extract that lends weight and presence and heightens umami”, while the reds “fit more into the mold of cooler and classically styled vintages. Lighter colors, delineated aromatics, often tensile, surprisingly vibrant wines with ample weight and length, despite comparatively higher pH levels that vary between 3.25 to 3.50 pH”. The lower alcohol levels (12.8-13.5% for the most part from his conversations) are key, “lifting terroir expression and enhancing that elusive, intangible notion of Pinoté. Prosaically, it imbues the 2022s with drinkability.” The wines’ approachability is perhaps their weakness, he suggests, as the wines are “blessed with the balance and substance to mature exquisitely in bottle”, yet the reality is that most will be consumed within the next five years.  While quality is very consistently high, he doesn’t feel that the year is “a bevy of potential legendary wines” – not perhaps quite reaching true greatness in his book. That said, he advises readers to “fill their boots” where prices seem fair, for it’s a year he “will enjoy returning [to] time and again”.   Explore Neal Martin’s full report, notes and scores on Vinous (subscribers only)  Wine Advocate – William Kelley  Last out of the gate with his report is William Kelley, declaring 2022 “another very strong Burgundy vintage, offering excellence in both colors and in a wide variety of styles, foregrounding the fascinating nuances of site that render this region so interesting”, with wines that are “succulent, suave and charming”.  He notes how the dry, hot conditions somehow slowed the fruit’s development, as well as being another to emphasise the importance of June’s rainfall, as well as the sprinkling that fell in late August which “unleased ripening”. He warns that picking dates were key and at the extreme fringes, “early-picked 2022s present a delicate, pretty style that can lack a little substance” while later-harvested wines “span a spectrum from deep and muscular to overtly fat and jammy”. Fortunately, however, he finds that most wines sit between the two – “harmonious and charming with alcohol between 12.5% and 13.7%, reminiscent, in reds, of a hypothetical marriage of 2017’s easy charm with some of 2015’s depth and in whites, evoking a somewhat more giving, open version of the 2020 vintage”. These are, he says, “pleasure-bent Burgundies that will delight in their youth and at maturity”.  The success of the year is not merely due to the growing season, he writes, however, but the adaptation of producers to warming conditions – both in the vineyard and winery. Pricing remains a challenge, and he discusses the various factors at play, but celebrates the fact that few producers looked set to increase prices. Beyond this, he also highlights the ongoing threat posed by the troublesome rootstock 161-49C – highlighting that this is another reason to take advantage of “a comparatively abundant crop of high-quality wines”, something which “isn’t to be taken for granted”. Local delivery is free for orders over HK$1,800 (to a single location). For orders below this value, delivery is HK$150 for up to four cases and HK$50 per case thereafter.

Shipping starts from €25 within Italy and €45 to Switzerland and the rest of Europe for up to 48 bottles (75cl). Costs vary by destination. Larger shipments can be quoted on request.
