Pale, green-tinged yellow. High-pitched aromas of green apple, lemon, lime and mint. Juicy and fresh but with modest flesh and intensity. The minty element carries through in the mouth. Finishes slightly dry-edged, with a suggestion of dusty minerality. Fontaine bottled all of his 2007s before the 2008 harvest.

Subtle oaky spice. Even a little exotic. Creamy, mealy texture though it is still tight and holding itself back. Long, long mildly smoky finish. Very good. (JH)

(from 50-year-old vines on redder clay-and-limestone soil) Pale lemon-yellow. Lemon, pepper and herbs on the discreet nose. A step up in flavor intensity from the preceding samples, showing juicy lemon and lime flavors and a vibrant, persistent finish. Along with Caillerets and Criots-Batard-Montrachet, this was the first site harvested in 2007, said Fontaine.
