Opaque ruby. Smoke-accented cherry, cassis, pipe tobacco and cedary oak on the nose, along with a hint of mocha in the background. Chewy and focused on the palate, showing impressive lift to its bitter cherry, dark berry, vanilla and spicecake flavors. Turns sweeter on the youthfully tannic finish, which hangs on with strong, mineral-tinged persistence.

Slightly herbal and leafy on the nose, the deep, currant-scented 2016 Bin 407 Cabernet Sauvignon blends fruit from five different regions of South Australia. It's medium to full-bodied, with soft, measured tannins and true Cabernet identity. Aged in French and American oak, there are some cedar and mocha notes apparent on the nose and finish, but the cassis fruit carries the day.
Fruit from Coonawarra, McLaren Vale, Barossa Valley, Wrattonbully, Padthaway. Coonawarra less than 50% but it’s the dominant component. Lower than average autumn and winter rainfall, hot spring and early summer, but cooled down from mid February. 12 months in French oak (25% new) and American oak hogsheads (9% new). TA 6.6 g/l, pH 3.63. Very dark crimson. Very fresh and really quite refined. Rich blackberry compote with a little mineral top note. Very pleasing. Just a little more richness on the mid palate wouldn’t go amiss. (JR)
