Henri Boillot’s Bourgogne Blanc is made with mainly declassified fruit from the villages of Meursault, Puligny-Montrachet, Saint-Romain and Auxey-Duresses. Combine that with this domaine’s skill and you get a superlative wine (especially for the price). In 2021, unfortunately, their yields were decimated by frost, with 80% less than normal. The quality, however, is exceptional here. There’s a sunny intensity to the wine, yet the fruit is not exotic or over-ripe – with fleshy white peach and citrus. It builds to a tight core of concentrated, pithy lemon, bright acidity and a long, mouth-watering, saline finish. Superb.
