The dancing and vibrant nose of Pavelot’s 2021 Premier Cru Aux Gravains is elegant and full of finesse. The round fruit and fine tannins bring a savoury edge, almost reminiscent of raspberry pastry. This delicious wine is well-built, with firm acidity which indicates great cellaring potential. The clean and well balanced finish offers persistence and pleasing texture. Another top wine – bravo. Drink 2024-2035+.

The 2021 Savigny-lès-Beaune Les Lavières 1er Cru offers brambly red berries, raspberry, forest floor and light cedar aromas on what is quite a complex yet relatively backward bouquet compared to Pavelot's fellow crus. The palate is medium-bodied with supple black cherry and boysenberry fruit, fine grip with quite a saline, white pepper tinged finish. Good potential.
