The 2021 Pecorino is decidedly spicey. Mint and sweet sage complement sour melon and green apple aromas. Potent yet juicy in character, it floods the palate with masses of citrus-tinged orchard fruits catapulted forward by a core of brilliant acidity and minerality. This tapers off with a tropical flourish, leaving hints of nectarine and young mango while finishing long yet wickedly fresh. It's difficult not to drink this instead of just taste.
