The 2007 Sauvignon Blanc Zieregg (served from double magnum) opens with a very clear, pure, fresh and deep bouquet of white fruits (seed and stone fruits) along with minty flavors. Fermented in 1,150- to 2,500-liter vats, this is a highly elegant, very mineral and complex Sauvignon Blanc with immense power and a great finish. The wine has a very firm and grippy structure that gives freshness and the minty flavor, but most of all, it gives a great deal of potential for further aging and development. Whereas many 2007s are pretty broad, this wine benefits from 18 hours of maceration and a part of IZ (intracellular) fermentation.
