Full, heavy bottle 1,790 g. Cabernet Sauvignon, aged for 19 months in 79% new French oak. Bottled unfined and unfiltered. 542 cases produced. Inky, opaque garnet. Aromas of black cherry, sage and cola. Rich flavours of black cherry and black plum are juicy and plush without being heavy, thanks in part to excellent acidity. Fine-grained, athletic tannins wrap around the core of dark fruit which has a floral quality. Wonderfully seamless and incredibly well integrated, with the wood nicely subsumed into the fruit leaving only hints of pencil lead to linger in the finish. Delicious. (AY)

The 2021 Cabernet Sauvignon Oliver's Blend is entirely composed of Cabernet Sauvignon and was raised for 19 months in 79% new French oak. In the glass, it takes a little coaxing to reveal its layered notes of tobacco, cassis, gravelly earth, and polished leather. Fleshy and full-bodied, its more serious structure slowly emerges. It’s going to need time in the bottle to soften and harmonize, but it’s very well-made and has a long and very appealing finish. Give it another few years and drink 2027-2040.
