There are two limited production cuvées that are each a cellar selection of the best of the variety. The 2018 Cabernet Sauvignon Ones showed beautifully, and I’d be happy to put it in a blind lineup with the best of Napa Valley. Starting out slightly reserved, it opens up with time in the glass and has a complex, nuanced style in its blackcurrant and cassis fruits as well as notes unsmoked tobacco, sappy herbs, cedar pencil, and chocolate. These all carry over to the palate, where the wine is full-bodied and has a layered, elegant texture, sweet tannins, and a great finish. This is certainly a big, rich wine, yet it stays balanced and has a wonderful sense of freshness. It also has an incredible varietal character and is classic Cabernet. Drink it any time over the coming 20 years or more.

A barrel sample of 100% Cabernet Sauvignon aging in 100% new French oak, the deep ruby-black colored 2018 Ones Cabernet Sauvignon has youthfully bombastic scents of crème de cassis, kirsch, bitter chocolate, mint leaves, coffee bean, dried thyme and lavender with a classy frame of sweet spices. The silky, full-bodied palate is very intense and layered, with firm, grainy tannins and fantastic freshness, finishing long and layered. About 50 cases will be made.
