The super traditional Vin Jaune from one of the most prestigious appellations for the style in Jura, the 2011 Château Chalon from Pierre-Marie Chevassu-Fassenet is from the family farm Granges Bernard. It has the textbook notes of nuts, curry and celery and a pungent and tasty palate with a salty twist in the finish. It's not a shy wine at 14.5% alcohol, and it has energy but is extremely fresh, mineral and young. Most impressive.
