Appealing aromas of pot-au-feu (a French dish reminiscent of pot roast) are found in the aromatics of the medium to dark ruby-colored 2000 Cabernet Sauvignon. Medium-bodied, it reveals admirable depth of fruit, a dense, chewy texture, and loads of blackberry flavors. (contains 10% merlot; aged in 50% new oak) Bright red-ruby color. Tight, nicely defined aromas of raspberry, minerals, lead pencil, bitter chocolate, black licorice, mocha and mint. Sweet, minty and penetrating, with concentrated, urgent red berry, tobacco and spice flavors and vibrant acidity. Manages to be both supple and firm. Finishes with noble, harmonious tannins and excellent length.
