The 2021 Chablis Fourchaume 1er Cru, matured 50% in oak and the rest in stainless steel, has a pretty nose with pressed white flower and dried honey scents, quite precise and lifted. The palate is well balanced with a tangy entry, fine acidity and yet the finish just feels a little one-dimensional compared to the aromatics. Par for the course. Tasted blind at the BIVB tasting in Chablis.
