Beringer is now producing 50,000 cases of Knight's Valley Cabernet Sauvignon. All of it is aged in small oak casks, of which 35% are new. The excellent, nearly outstanding 1994 Cabernet Sauvignon Knight's Valley exhibits a dark ruby/purple color, and a sweet black currant-scented nose with smoky oak, and earthy, chocolatey notes. I thought this medium-bodied, richly fruity, delicious wine was outstanding last year, but slightly less prodigious this year. It should drink well for a decade, and possibly earn an even higher score. Look for more aromatic complexity and character to develop in these wines after 2-3 years in the bottle. Tel.
