The 2014 Chablis 1Er Cru Vaillons, which comes from purchased grapes from Domaine Duplessis, is raised half in concrete eggs and half in wooden barrel for 12 months. It has a very refined bouquet with scents of lemon sherbet, lemon thyme and a touch of orange blossom. There is fine precision here. The palate is quite saline on the entry, harmonious and saline in the mouth, a twist of sour lemon right on the aftertaste. This is a very well-crafted Chablis Vaillons that will probably benefit from 2-3 years in barrel.
