The 2021 Chablis Les Clos Grand Cru, which sees seven months in oak and another seven months in stainless steel, has a pretty, peppermint-tinged bouquet that opens nicely in the glass. The palate is well balanced with a fine thread of acidity, taut and linear, quite precise on the finish with a hint of chamomile lingering on the aftertaste. This is a commendable showing, and it should drink well over the next decade. Tasted blind at the BIVB tasting in Chablis.
