The 2020 Chablis Bourgos Grand Cru has a nuanced and complex bouquet with fine delineation and beautifully integrated oak. Dried honey, crushed stone and petrichor appear on the nose. The palate is nicely balanced with a fine bead of acidity. It's taut, fresh and tensile with a vivid, energetic, poised finish that delivers the salinity to tempt you back for another sip. Tasted blind at the annual Burgfest tasting.

The 2020 Chablis Grand Cru Bougros is performing well, offering up aromas of orange oil, crisp stone fruit, nutmeg and green apple, followed by a medium to full-bodied, satiny, incisive palate that's deep and intense but also unusually dynamic and precise for this cuvée; indeed, it's the best young Bougros I can recall tasting chez Servin.

The 2020 Chablis Bougros Grand Cru is aged in barrel and goes through 100% malo (this sample was taken from a three-year-old barrel). It has a very seductive nose of yellow plum, stone fruit and honeysuckle. The generous palate is probably the most intense of Servin’s Grand Crus, and very harmonious, leading to a vibrant, ripe blood orange and white peach finish. This will be difficult to resist in its youth. So flattering.
